T

he journey toward achieving peak physical condition requires more than just regular exercise and nutritious food. A successful formula for improvement might also include exciting group workout classes, scientific fitness assessments and sports massage.

A high-intensity, interval training workout studio called Burn 60 recently opened in The Lakes at Thousand Oaks. Fast-paced classes combine both cardiovascular and strength training.

Its first locations in Brentwood and West Hollywood attract busy professionals with limited time to work out and celebrities, including Reese Witherspoon.

The hour-long Signature Burn 60 session flies by. Participants switch quickly between running on treadmills, floor exercises and lifting free

weights. Suspension training straps attached to an overhead pulley provide other challenges.

Energetic music propels clients’ efforts, and trainers encourage everyone to push the limits appropriate to current fitness level.

Burn 60 Operations Coordinator Charlotte Mooney says working out in a group setting builds community and motivation to return on a regular basis. “It’s specific, personalized group fitness, which is really unique about us. All the trainers know our clients and what their goals are,” says Mooney.

rior to last year, I had never heard the word kombucha. Maybe I had seen it used as onomatopoeia in a comic book, but never on the shelf of my local supermarket.

As it turned out, I was a bit behind on the kombucha hype train and, in fact, behind a bit on many other trends in the world of health foods as well, particularly in regard to fermentation. As most of my experience with fermentation revolved around beer and the occasional pickle, I was about to be led down a path that would expand my horizons.

At first taste, kombucha is similar to a tart cider, the kind you might pour from a Martinelli’s bottle on New Year’s Eve only not as sweet. The effervescence, the complex acidic profile and the slightly sweet aftertaste is refreshing — and we’re not even talking about the myriad of flavors with which one can imbue the elixir, including ginger, grapes and any

fruit combo you can imagine.

If the labels on commercial bottles are to be believed, it’s also healthy for you. Packed full of probiotics, kombucha is a treat for your palate and your body. But what exactly are probiotics, and what exactly is kombucha?

Kombucha is the by-product of a symbiotic culture of bacteria and yeast, otherwise known as a SCOBY ($5-$20 online). After my introduction to the drink, I learned how easy it is to make at home. Procure a SCOBY, add about a gallon of sweetened black tea, wait a week and voilà: kombucha.

The SCOBY has antibiotic qualities and prevents nasty mold and bacteria from colonizing, allowing the probiotics to do their thing, that is, to allow beneficial bacteria to flourish, which can aid in digestion (by producing healthy enzymes

“It’s an ancient technique and it’s coming back, as it should, because it had a place in our life for a lot longer than processed food has,” says Lopez. “Probiotics are the result, the transformation of the lacto acid bacteria that help break down nutrients and make it more bio-available for your gut to digest, increasing the value.”

Local aesthetician expert delves into the eco-revolution for skincare

F

oodies have long been hip to putting all-natural food inside their bodies for optimal health. Today’s eco-revolution is all about what goes on the outside. Just as home cooks and restaurant chefs have been utilizing organic ingredients in their recipes, skincare experts are looking to Mother Earth for their lotions, cleansers and other beauty products.

Audrey Soria Gonzalez’s eco-beauty epiphany began close to home.

“I was raised by parents who were into a holistic approach to health,” says the Ventura-based aesthetician and founder of natural skincare outfit The Beauty Garden. “As I got older, I had my own issues with acne, and I developed a knack for curing it.” Licensed through Santa Barbara Cosmetology Academy, Gonzalez worked for a time at an Aveda Concept Salon, where she got a crash course in beauty botanicals. “When I became pregnant with my son [James, now three] I became even more conscious

about what I was putting in and on my body.”

According to Gonzalez, there are lots of reasons to be wary of what goes into your facewash, moisturizer, makeup and other sundries. “If you’re buying from a mainstream supplier, you’re probably getting lots of toxins and carcinogens in it,” she explains. “The skin absorbs it, and it goes into the bloodstream — which distributes it to the entire body.”

Synthetic preservatives called parabens, found in almost all conventional beauty products, are one of the worst offenders. “These mimic the estrogen hormone,” Gonzalez explains, disrupting natural hormone regulation.

Polymers, used as binders and found in exfoliating products and primers, are often derived from petroleum. Formaldehyde and aluminum are two other not-so-good-for-you ingredients that Gonzalez recommends avoiding. “I’ve even found coal tar in commercial products — it’s like Continued on page 20
