CAULIFLOWER CHEESE, LEEK & CHESTNUT MUSHROOM ROAST LOAF Serves: 6 Ingredients: • 4 tbsp olive oil • 50g unsalted butter • 1 large onion, finely chopped • 2 garlic cloves, crushed • 1 medium cauliflower, cut into small florets and finely chopped • 1 leek, finely chopped • 1 large carrot, finely chopped • 1 celery stick, finely chopped • 300g chestnut mushrooms, finely chopped • 2 tsp freshly picked thyme leaves • 2 tbsp tomato puree • 1 tsp truffle oil (optional) • 1 large egg, beaten • 250g vegetarian cheddar cheese • 1 tsp English mustard • 120g dried wholemeal breadcrumbs • Salt, pepper to season

METHOD: 1.

Heat the oil and butter in a large frying pan; add the onion, garlic, pepper, leek, celery, carrot and cauliflower. Cook over a low heat for 8-10 minutes or until the vegetables are soft.

Raise the heat then add the mushrooms and thyme; cook for a further five minutes until all the juices from the mushrooms have evaporated.

3. Preheat oven to 190ºC. 4. Stir in the tomato puree and cook for a further 2-3 minutes, then transfer to a bowl. 5. Add in the egg, 175g of the cheese along with the mustard and 100g of the breadcrumbs. 6. Mix well and season to taste – adding the truffle oil if you are using. 7. Lightly oil a 28cm x 12cm deep loaf tin, then sprinkle the remaining breadcrumbs and cheese inside the tin. 8. Spoon the roast mix into the loaf tin – level off the surface. 9. Bake for one hour until set and the loaf is golden; cover with buttered foil halfway through the cooking to assist in a perfect finish. 10. Cool in the tin for five minutes before turning it out. 11. Cut into neat, thick slices and serve with your choice of festive trimmings!

HALLOUMI & CARROT FRITTERS WITH PEAR, FENNEL & STAR ANISE JAM Serves: 4 Ingredients: • 250g grated halloumi cheese • 1 small red onion • 1 small green chili, finely chopped • 2 garlic cloves, crushed • 3 tbsp freshly chopped mint • Zest of ½ lemon • 2 medium carrots, coarsely grated • 3 eggs, beaten • 160g fresh white breadcrumbs • Little sunflower oil for cooking • Little flour, for coating For the jam: • 2 tbsp olive oil • 2 shallots, thinly sliced • 300g fennel, peeled and thinly sliced • 4 ripe pears, peeled, cored & cut into 2.5cm cubes • 3 garlic cloves, thinly sliced • 2 star anise • 200ml cider vinegar • 150g soft brown sugar • 2.5cm root ginger, peeled & grated • 2 tsp fennel seeds • 2 tsp coriander seeds • Baby watercress to garnish

METHOD: 1. Place the halloumi in a bowl; add the onion, grated carrot, garlic, chilli, mint and lemon zest – mix well. 2. Add the eggs and breadcrumbs and gently bind together. 3. Cover and place in the fridge for one hour to firm up. 4.

Meanwhile make the jam; heat the olive oil in a heavy based pan, add the shallots, fennel and then cook covered over a low heat, stirring every so often until both are soft – about 15 minutes.

5. Add the garlic and pears then cook uncovered for 25 minutes. The consistency should become thicker and more jam like. 6.

Add the remaining ingredients and mix well, reduce heat then cook gently for 45 minutes, stirring regularly to prevent it sticking on the base of the pan.

Remove and cool to room temperature. To finish; using slightly wet hands shape the halloumi mixture into eight equal sized patties, adding more breadcrumbs if mix is too sticky.

8. Pass the patties through a little flour to lightly coat. 9. Fry the patties in the sunflower oil for 3-4 minutes on each side until golden brown. 10. WILD RICE, PARSNIP & SAGE RISOTTO CROQUETTES WITH CHRISTMAS PICKLE Serves: 4 Ingredients: • 100g wild rice • 25g unsalted butter • 1 onion, finely chopped • 6 sage leaves, chopped • 2 large parsnips, peeled and grated • 150g Arborio rice • 600ml hot vegetable bouillon • 25g vegetarian parmesan, freshly grated • 50g fresh white breadcrumbs • 4 tbsp plain flour • 1 large egg, beaten with 4 tbsp milk • Some sunflower oil for frying • Salt, freshly ground black pepper • 150g Christmas Pickle

METHOD: 1. Cook the wild rice in plenty of boiling water for 40-45 minutes or until tender; drain well in a colander and dry. 2. Melt the butter in a heavy based pan, add the onion with half the sage and cook until softened. 3. Add the parsnips and arborio rice, cook for 2-3 minutes. 4. Add the hot stock a little at a time and simmer, stirring continuously. 5.

When the rice has absorbed the liquid, add more stock. Continue like this until the stock has gone and the rice is creamy in texture whilst retaining a little bite.

6. Remove from the heat; add the wild rice, parmesan, breadcrumbs and remaining sage – season to taste. 7. Turn out onto a tray and allow to cool. 8. When cold, divide the mix into eight balls then roll into croquettes. 9. Pass the croquettes through the flour then through the beaten egg. 10. Heat the oil in a frying pan, cook the croquettes until golden. 11. Drain on kitchen paper; serve with the Christmas pickle and vegetables.

AUTUMN HOTPOT WITH WALNUT & SAGE SCONE CRUST Serves: 4 Ingredients: • 2 tbsp olive oil • 2 garlic cloves, crushed • 12 baby button onions • 1 tsp ground coriander • 1 tsp paprika • 2 tsp brown sugar • 1 tbsp soy sauce • 2 carrots, peeled and thickly sliced • 2 parsnips, peeled and thickly sliced • 100g vacuum packed chestnuts (blitzed into a puree) • 900ml vegetable bouillon • 250g butternut squash, peeled and cut into 2cm cubes • 200g canned butterbeans, drained • 1 tbsp chopped sage • 8 prunes, halved For the scone crust: • 225g self-raising flour • Pinch salt • 1 tsp baking powder • 15g unsalted butter • 25g finely chopped walnuts • 2 tbsp chopped sage • 150ml milk • Some beaten egg to glaze

METHOD: 1. Heat the oil in a large heavy based pan, add the baby onions and garlic then cook for ten minutes or until they start to soften. 2. Sprinkle over the spices and cook for one minute. 3. Add the sugar and cook gently to caramelise the onions. 4. Add the carrots, parsnips and cook for five minutes. 5.

Stir in the chestnut puree and vegetable bouillon, bringing to the boil; add the squash, beans, prunes and sage – simmer for 15 minutes and set aside.

Meanwhile make the scone topping; sift the flour and baking powder into a bowl. Add salt and rub the butter into the flour until it resembles fine breadcrumbs.

7. Stir in the walnuts, sage and then add enough milk to mix into smooth dough. 8. Cover with cling film and chill for 15 minutes. 9. Preheat oven to 220ºC. 10. Roll out the dough to about 1.5cm thickness then cut into 5cm rounds using a cookie cutter. 11. Place the cooked vegetables into an ovenproof dish and put the scone rounds on top. 12. Brush scones with beaten egg and bake for 15-18 minutes until the scones are risen and golden. 13. Serve!

CHESTNUT, CEP MUSHROOM & JERUSALEM ARTICHOKE WELLINGTON Serves: 4 Ingredients: • 450g puff pastry • 150g long grain brown rice • 2 tbsp unsalted butter • 2 shallots, finely chopped • 1 garlic clove, crushed • 1 leek, shredded • 175g cep mushrooms, sliced • 150g Jerusalem artichokes, peeled and coarsely grated • 1 tsp fresh picked thyme leaves • 1 tsp chopped rosemary • 150g fresh white breadcrumbs • 75g vacuum packed chestnuts, chopped • 100g grated cheddar • 2 eggs • Some beaten egg for sealing and glazing

METHOD: 1. Boil the rice for 30-35 minutes or until tender, drain well and dry in a cloth. 2. Heat the butter in a frying pan, add shallots, garlic and cook gently until softened. 3. Add the leeks, ceps, herbs and artichokes; cook over high heat for five minutes until golden. 4. Transfer to a tray and leave to cool. 5. In a bowl, mix the rice, cooled vegetables, chestnuts, breadcrumbs, eggs and cheese. Season well with salt, pepper and nutmeg. 6. Divide the pastry in half; roll out each piece thinly to an rectangle about 30cm x 20cm. 7. On a greaseproof paper lined baking sheet lay one of the rolled pastry sheets. 8.

Spoon the stuffing mixture lengthways down the centre of the pastry, then spread out evenly leaving a border of 5cm down the longer sides.

9. Brush little egg along the sides of the pastry. 10. Top with the second sheet of pastry, sealing it well; trim and knock up the edges. 11. Glaze the pastry with beaten egg, decorate the top if wished with the excess pastry trimmings. 12. Make a few small holes in the top to allow the steam to escape. 13. Place in fridge for thirty minutes to chill. 14. Preheat oven to 200ºC. 15. Bake the wellington for 25-30 minutes until golden. 16. RECIPE IDEAS

DOUBLE COOKED CELERIAC & STILTON SOUFFLÉ Serves: 6 Ingredients: • 225g celeriac, peeled and cut into small pieces • 1 clove garlic, crushed • 750ml vegetable bouillon • 50g unsalted butter • 50g plain flour • 300ml full fat milk, hot • 125g stilton cheese • 4 medium eggs, separated • Salt, pepper, pinch nutmeg To Finish: • 150ml double cream • 75g vegetarian parmesan cheese

“At Christmas, it’s nice to occasionally go oveboard and create a dish like a soufflé. Double cooked soufflés are a little more forgiving in their making; for this recipe you can cook them ahead and chill in the fridge until needed.” Paul Gayler

METHOD: 1. Place the celeriac and garlic in a pan with just enough hot stock to cover, simmer for twenty five minutes or until tender. 2. Drain it well, then mash until smooth. 3. Preheat oven 200ºC. 4. Melt the butter in a heavy based pan, add flour and make a roux, cooking for two minutes. 5. Gradually whisk in the hot milk and bring to the boil; reduce the heat and simmer until sauce is thick and has a nice sheen. 6. Remove pan from the heat, stir in the cheese, the celeriac and season to taste with salt, pepper and a pinch of nutmeg. 7. Beat in the four egg yolks and prepare the egg whites by whisking until firm with a pinch of salt, not too stiff. 8. Beat 1/3rd of the whites into the sauce and then carefully fold in the remaining 2/3rds. 9. Generously butter six 175ml ramekins, dividing the soufflé mix between them. 10. Arrange on a baking tray and then bake in the oven for 15 minutes until risen. 11. Remove and leave to cool; the soufflés will sink back into their dishes slightly so don’t worry! 12. When cold, place in fridge to chill for thirty minutes or overnight, if preparing ahead. To serve: 1. Preheat oven to 200ºC. 2. Run a knife around the edge of each soufflé and then turn out into buttered individual, shallow ovenproof dishes. 3. Heat the cream to the boil, add parmesan and then pour over each soufflé. 4. Cook in the oven for 8-10 minutes until puffed up and heated through. 5. Serve immediately.
