Baked Crouton of Bluebell Falls Goats Cheese, Leaf Salad, Roast Pinenuts, Basil Pesto (served as starter on set dinner menu (€35) & early bird menu (€26.50))

This dish  was  made  using  ingredients  provided  by  the  following  local  producers

For many  years  now,  Niall  has  been  using  Paul  Keane’s  Goats  Cheese.  We  are  very  fortunate  in   Co  Clare  to  have  a  number  of  world  class  cheese  producers.  With  it’s  very  distinct  flavour     &  texture  Bluebell  Falls  has  been  a  favourite  of  Niall’s  for  some  time.    

For this  particular  dish  he  has  teamed  it  with  some  of  John  Malane’s  organic  leaves.     Again,  we  are  very  fortunate  here  at  Carrygerry  to  have  such  a  high  quality  organic  grower  on   our  doorstep.    

The dish  is  finished  with  a  Fresh  Basil  Pesto,  the  basil  off  course  grown  by  John  Malane  &   the  pesto  produced  in  Carrygerry,  which  also  forms  part  of  the  extensive  Carrygerry  Range.   (Chutneys,  Dressings,  Jams,  etc)
