h, November. What a glorious month. The year is winding down and people are starting to look forward to the holidays but the festive season has not yet completely bombarded us with its rampant consumerism. A perfect time to relax, November inspired us to explore some of the more unique ways in which to spend our free time. We all enjoy visiting spas, restaurants, reserves and hotels during our downtime, but we don’t always know where to go when seeking a completely unique R&R experience. In this month’s edition we explore a safari spa where guests can enjoy unlimited wellness treatments whilst gazing upon open plains teeming with wildlife. We visit a nature reserve a stone’s throw from the hustle and bustle of Johannesburg city and sleep in a tree house in the

open veld. We spend a weekend on a centuries-old wine farm and gear up in hard hats to explore a makeshift diamond mine. All the usual five star thrills and spills are presented, but with an emphasis on the more unusual hideouts and activities on offer in South Africa. We hope that you enjoy the mag and that you’re ready to visit our beautiful continent by the time you reach the last page. Perhaps you’ll have your own archive of unique stories to tell one day…

“NAC’s VIP Charter service always makes me feel like a rock star! They think of everything I could possibly need and pay special attention to detail, when it comes to my safety, security, privacy and comfort. Wherever I’m headed, NAC’s fleet of long and medium range jets and twin turbine aircraft get me there on time, without the added aggravation of having to deal with check-in queues, waiting for baggage or having to wade through red tape at airport terminals.” So if you’re considering chartering a flight, speak to NAC, and they’ll make you feel like an A-lister on the red carpet!” – Gabby van Staden, frequent charter client.

here’s something enthralling about walking through the bush: the anticipation of seeing wildlife and being a silent witness to nature or the thrill of sleeping in a tree house under the stars, with just the sounds of the bush to remind you of the magic of a world that is so abundantly alive. Two new bush experiences have recently been launched at Limpopo’s Motswari Private Game Reserve that will allow guests to truly get in touch with Africa – a walking safari and an overnight stay at The Giraffe’s Nest tree house. For the guided walking safari, guests leave the main lodge on the evening ahead of the hike to spend a night in a luxury tented camp. Early the next morning, the group sets out on foot for an intimate experience with nature. The Motswari tracker will point out all of the messages and mysteries of the bush en route, and perhaps even stumble upon members of the Big and Little Five in their natural habitat. A hearty breakfast awaits on return to the lodge after the rewarding experience. Three metres above the ground and overlooking the Xanatsi Dam, Motswari’s Giraffe’s Nest tree house offers a great vantage point from which to view Mother Nature in all her glory. Once the sun has set, guests enjoy a delicious picnic complete with starlit skies and a soulful bush serenade. Luxury beds with crisp linen and mohair blankets provide comfort for the night. An open canopy allows guests to enjoy the stars all night long on a clear night, but it also provides protection if the rains come. Nature provides a wake-up call and guests are picked up the next morning by rangers on the early-morning game drive. Motswari Private Game Reserve is part of the prestigious Newmark Hotels, Reserves & Lodges portfolio and is set in the gorgeous Timbavati Nature Reserve in Limpopo, known for its abundant wildlife and wide-open spaces. 2013 Professional Beauty Awards Text: Lara Potgieter Images: © Life Day Spa

This year, Life Day Spa at the five star Crystal Towers Hotel in Cape Town took home the titles of Day Spa of the Year and Therapist of the Year at the prestigious annual Professional Beauty Awards held in Johannesburg at the beginning of September.

T

he national Professional Beauty Awards honour top establishments in the beauty and spa industries, with the final awards based on the experiences of undercover judges visiting shortlisted candidates as paying clients. After its success as Best Day Spa of the Year in 2012, Life Day Spa in Cape Town was nominated for Day Spa of the Year, Therapist of the Year and Spa Manager of the Year. Established in 2010, Life Day Spa Cape Town offers a full spectrum of treatments, including those that make use of the prestigious La Prairie range. Its awards spree began in 2011, when it was awarded Best Hotel Spa in South Africa by Les Nouvellles Estehetiques. Spa facilities include a steam room, sauna, rasul chamber, floatation pool and pool deck with spectacular mountain views. Guests can complement their treatments with a visit

to the pool bar for cocktails or lunch. A separate Nail Bar provides the perfect setting for a social spa experience and caters for events such as birthdays and hen parties. The Spa boasts its own Corporate and Events Manager, who is responsible for the tailoring and execution of large group or corporate wellness experiences. It employs over 25 internationally-accredited therapists who undergo rigorous in-house training in addition to their formal training. “At the end of the day it’s all about what happens in the treatment room – you can have the most beautiful spa with the best facilities, but the magic really happens between the therapist and the client,” comments National Operations Director John Lambrou. “We love and care for our people, and they in turn do the same for their clients,” he concludes. 36

he entire journey of diamonds is followed, from how they were created deep beneath the earth’s surface billions of years ago to how they are cut, polished and fashioned onto fine jewellery today. Exact replicas of the world’s most famous diamonds, including the 3106 carat rough Cullinan Diamond, the 10.73 carat polished yellow Eureka Diamond, the 45.52 carat blue Hope Diamond and the 545.67 carat yellow Golden Jubilee can be admired at the museum. Visitors are also granted the unique opportunity to dress up in mining gear and walk through a replica mineshaft complete with realistic sound and lighting.

The diamond cutting and polishing process can be viewed first-hand at the museum, making it the perfect place to visit for diamond aficionados or those simply wanting to further appreciate the beauty of the magnificent gems. The Cape Town Diamond Museum is situated in the famous Clock Tower precinct at the lively V&A Waterfront, conveniently close to the gateway to Robben Island. The Cape Town Diamond Museum is open from 9am to 9pm seven days a week. For further information and bookings call +27 21 421 2488 or visit www.capetowndiamondmuseum.org. 38

Pongrácz Desiderius

Elegant Summer Bubbles Text & Images: © Clarissa du Plessis

Spend this summer in the company of Desiderius Pongrácz 2008, the signature Méthode Cap Classique that is now adorned in a stylish black presentation case emblazoned with the Pongrácz coat of arms, which personify its singularly noble character.

M

ade only in exceptional vintages, this prestigous cuvée is inspired by Hungarian nobleman Desiderius Pongrácz. It is seductive and alluring, with a rich complexity that teems with a delicate mousse of light, lively bubbles and a raciness on the palate. Desiderius Pongrácz is an elegant blend of the classic Champagne varietals, Pinot noir and Chardonnay, and is set apart by its distinctive fluted bottle. Desiderius Pongrácz owes its classic yeasty character, wonderful foaming mousse and persistent bead to a fouryear maturation on the lees. As the Cap Classique matures further it will continue to develop wonderful creamy, nutty characteristics on the nose to complement its full-bodied texture, which lasts for ages on the palate. It is simply divine served with sweet chilli tempura tuna rolls. The 2008 vintage follows in the footsteps of its awardwinning predecessor, Desiderius Pongrácz 2003, which stood up to critical acclaim with Double Gold at both the 2012 Five Nations Wine Challenge in Sydney and the 2012 Veritas Awards, as well as taking home the trophy for best bottle-fermented sparkling wine at the 2012 International Wine and Spirits Challenge (IWSC) in London. Desiderius Pongrácz 2008 is available at all leading boutique wine stores at approximately R350 per bottle. Its new ultra-sophisticated presentation pack makes it an ideal gift for someone special this festive season. For further information and sales visit www.pongracz.co.za.

Winemaker Dawie Botha describes the nose as abounding with blackcurrant, cassis and ripe plum as well as rich fruitcake with a hint of tobacco leaf. He proclaims it to be soft-textured and invitingly seductive, with the same black and red fruit making the transition from nose to palate. The palate also abounds with liquorice and coca, adding a dark and inviting depth and contrast to the ripe sweetness of the fruit. The wine is velvety and soft textured but with backbone and structure. Available directly from the cellar at R125 per bottle, the Anthonij Rupert Optima 2009 is the perfect wine to sip and savour on its own or to enjoy with porcini mushroom risotto, slow braised venison pie or tomato, black olive and seafood stew. A

fter a careful process of identifying the top terroir for each cultivar, sites were identified, assessed and then selected for the Anthonij Rupert Optima, with the grapes tested and tasted for ripeness by the winemakers on a daily basis. Vineyards were selected from different sites in the Western Cape and each varietal was paired to a selected soil, climate and slope. In 2009 the grapes were handpicked in the early morning at 24.9째Balling, placed in lug boxes and transported in refrigerated trucks to the cellar. The grapes were then hand selected and sorted on a double sorting table. After the cold-soak, fermentation started and lasted for approximately 20 days. Malolactic fermentation took place in 225 litre new French oak barrels, and the wines were made and aged separately for 18 months. They were then blended and aged for a further six months in barrel before being bottle matured for 24 months in anticipation of release.

ormerly the junior sous chef at the One&Only Hotel’s Nobu Restaurant, Palanyandi officially joined the exclusive Plettenberg Park Hotel and Spa in September this year. Situated at 4 Robberg Road in Plettenberg Bay, the hotel prides itself in its positiion in the heart of South Africa’s Garden Route, offering a unique sanctuary away from the concrete of the city – and Palanyandi is looking forward to extending this hospitality with his reputed and respected culinary skills. “I am really thrilled to be offering my services to this respected hotel. It definitely has that home-away-fromhome feeling about it, and I hope to further enhance that with the food I prepare. I am confident that we can take this hotel to its deserved position among the top 10 destinations in South Africa, with the restaurant rated among the top 10 in the Western Cape.” At only 27 years old, Palanyandi has mastered his palette for fine dining offerings and unique combinations of tastes, focussing on a number of cuisine types from Mediterranean to French, American and Japanese. From stock taking at his local Pick ‘n Pay to quickly

mastering his passion for food and carving it into a prized profession, Palanyandi refined his skills whilst job shadowing at Sea Point’s Penninsula All Suite Hotel while still in high school. He then went on to pursue his chef training diploma at the South African Institute for Hospitality Education. From there the kitchen doors were flung wide open and Palanyadi spread his flavoursome touch by starting as a trainee chef at Camps Bay’s Blues Hotel before moving onto the same position at the Newlands-based Vineyard Hotel. “I started my first job and first kitchen at Blues Restaurant with no experience of how a kitchen worked. In the first week that I was there, the management decided to give the other chefs leave, thus leaving me alone on a section with no clue as to what to do! It was a great character-building experience that I wouldn’t change for anything.” Between 2005 and 2006 Palanyandi stepped into the role of Commi Chef at Baia Seafood Restaurant at the Victoria & Alfred Waterfront before taking the position of Chef de Partie at Caveau Wine Bar and Deli in Newlands. By 2007, Palanyandi was inspired to experiment with

True Blue

Pumpkin Stew Text & Image: © Marco-David Soares

D

METHOD:

espite our rich cultural and culinary diversity, South Africans share certain tastes that span across cultures, weaving together the tapestry of diverse preferences. One of these universal loves is the humble pumpkin, which is found in various forms in traditional Zulu, Xhosa, Afrikaner and Indian recipes. This month’s recipe incorporates almost all of these different uses of pumpkin in a fusion that is not only a feast of flavor but also a great visual expression of the rainbow nation.

Heat the oil over medium heat in a Dutch oven or heavy stock pot. Sauté the onion until translucent and just starting to brown. Add the garlic and cook for one minute, stirring frequently to keep the garlic from burning. Stir in the cayenne pepper, cinnamon and coriander, cooking for 30 seconds to release the fragrance from the spices. Add the chickpeas, squash, potatoes, carrots, tomatoes and two cups of vegetable stock, stirring to incorporate the spices. Bring to the boil then reduce heat to simmer. Cover and cook for 30 minutes, stirring a few times. Place the whole pumpkin in a preheated oven on 400˚f (200˚C) and roast for 30 minutes while stew cooks. Remove after 30 minutes and set aside. Add the snow peas, mushrooms and parsley and continue to cook, uncovered, for 10 minutes. Taste, and adjust seasoning with salt and pepper. Place stew into roasted pumpkin and dress with fresh coriander. Serve with yellow polenta cooked according to packet instruction. I have served this stew to some real South African ‘meat and potatoes’ kind of guys, who ate it all up and asked for more despite the fact that it is a completely vegan dish. The pre-conceived idea that a real meal must include some form of animal protein can easily be dispelled with the right recipe.

INGREDIENTS: • 2 tsp olive oil • 1 medium onion, diced • 2 garlic cloves, minced • 1 tbsp cayenne pepper (or more, to taste) • 1 tsp ground cinnamon • 1/2 tsp ground coriander • 1 large butternut squash, peeled, seeded and cut into 1-inch cubes • 1 medium to large pumpkin, cut on top and seeded but not peeled (the peel will function as your serving dish) • 2 medium sweet potatoes cut into 1-inch cubes • 2 medium carrots, chopped • 2 cups white or button mushrooms • 1 cup raisins • 2 cups well ripened tomatoes, chopped • 1 cup dried chickpeas, soaked overnight in water, drained and rinsed • 1 cup snow peas • 1/4 cup chopped flat-leaf parsley • 4 cups vegetable stock • Salt and fresh black pepper, to taste

Tip: Like all stews, this one is even better the day after cooking. If you have a lot left over you can make a hearty pumpkin soup by pealing the pumpkin and mixing all the flesh and left over stew in a blender. Blitz together with equal part milk or soy milk until smooth, heat and serve with crusty bread and a dollop of crème fraîche or natural yoghurt.

ince most of the activities in South Africa happen outdoors, sunburn is a potential health hazard. Cover up and use sun screen lotion whenever you are outside. Malaria risk areas include Northern KZN and Zululand, the Northern Province and Mpumalanga. The risk of contraction in South Africa is minimal when the proper precautions are taken. These include taking malaria tablets, using insect repellent and mosquito coils, and wearing long sleeved clothing. Tap water in most areas is safe to drink, but be sure to double check with your hosts first. One of the biggest health risks in South Africa is HIV and Aids. If you plan to be sexually active during your stay in South Africa, be sure to take necessary precautions. Check out www.redribbon.co.za for more information.
