An all weekend celebration of one of the world’s most luxurious ingredients, fresh black truffles, just minutes from where they are unearthed. In 2016-17, visitors spent $10.1 billion in the State, including $4.5 billion in regional areas. The State Government has a strategy to increase the value of tourism in Western Australia to $12 billion by 2020, including a regional contribution of $4.75 billion. In the heart of Australian Truffle Country As you drive into the Southern Forests, through the dense wooded landscape and winding roads, there is a feeling that you are some place special. What gives Manjimup its magic when it comes to truffles is anyones guess. Manjimup produces nearly 90% of Australiaâ€™s annual truffle harvest. During the season truffle dogs and hunters spend their days unearthing fresh truffles; sending them to over 30 countries around the world within hours of harvest. Bountiful, the rich loam soil, and plentiful rainfall forms one part of this success story; the growers, committed to quality and consistency, the other side of the tale. The Australian truffle season runs from early June to late August.
The allure of black truffle is hard to put your finger on, their aroma beguiles. Rich, earthy, pungent and deeply intoxicating, a little goes a long way. The knowledge that the season is short, that they are rare and prized the world over, adds to the appeal. The fruiting body of a fungus, truffles grow beneath the soil on the roots of oak and hazelnut trees.

His former restaurant Marque was celebrated in the San Pellegrino World’s 50 Best Restaurants and held three Hats in the Good Food Guide for 10 years. LONDON’S BEST: MARIANNE LUMB Marianne Lumb is chef-owner of Marianne, one of London’s most intimate restaurants, named Harden’s Top Gastronomic Experience 2018 and number 19 in The Sunday Times UK Top 100 Restaurants. Marianne loves using Manjimup truffle on her London menu, with it landing in her kitchen within 48 hours of harvest. Now she’s heading to WA to discover the terroir from which they come and share a special masterclass experience by the warmth of the fire. MICHELIN MOMENTS: BRUNO LOUBET Sit fireside with wine in hand and hear memories and techniques from Bruno Loubet’s upbringing in Bordeaux, as well as his Michelin experience. Watch as he prepares three recipes and share in a tasting of the results. Bruno trained under the legendary Pierre Koffmann at La Tante Claire (three Michelin stars) and was Head Chef for Raymond Blanc OBE at Le Manoir aux Quat’Saisons (two Michelin stars). His passion for sustainability drove his time at London’s Bistrot Bruno Loubet and Grain Store. He is now set to open a cooking school in rural Queensland. 3pm Saturday June 23 & Sunday June 24

SUNDAY BRUNCH RECIPE
SUE HUTCHINS SHADOW WINE BAR 15g fresh truffles 1 shallot, sliced 1 garlic glove, sliced 150g fettuccine 20g butter (room temp) 50ml white wine 100ml cream 1 egg yolk 10g parmesan Olive oil Pinch of sea salt Pinch of porcini powder (ground dried porcini mushrooms) 20
Let butter soften at room temperature. Grate truffle into butter, reserving some to shave as garnish. Place pasta and a pinch of salt in a large pot of boiling water. Cook until al dente and drain. Meanwhile, heat a dash of olive oil in a large saucepan, then add shallot and garlic. Stir continuously over medium heat until softened. Add white wine and let it reduce. Add cream and porcini powder and let it reduce. Add drained pasta, then parmesan and toss to combine. Add truffle butter and season to taste. Garnish with an egg yolk and generous shavings of fresh Manjimup truffle.
