Acadian Food Acadian culture and cuisine have been part of Prince Edward Island for more than three hundred years. Traditional dishes like Chicken Fricot and Râpure are long-time favourites, but the meat pie is the classic Acadian dish. Many Islanders wouldn’t have a proper Christmas Eve without one!

Grilled PEI Beef Kabobs with Garlic and Thyme Vinaigrette If using bamboo skewers, soak them in water for 1 hour. Making sure your skewers are thoroughly soaked will minimize the risk of burning, flare-ups and splintering. Also, do all your cutting and preparing before you begin to assemble the kabobs to make things easier for yourself. First, prepare the vinaigrette. Place all the vinaigrette ingredients in a large bowl, whisk until well combined and then adjust seasoning to taste. To assemble the kabobs, place a cube of beef onto a skewer, then add the other ingredients in succession. Be sure to have a cube of beef at either end of the skewer and in the middle. Place the kabobs in the vinaigrette to marinate for 15 minutes to 2 hours. Preheat the grill on medium-high heat. Grill the kabobs to the desire doneness.

Beef Kabobs Eight 6-inch (15cm) bamboo or metal skewers 3 lb. (1.5kg) sirloin roast (cut in 1-inch/2.5cm cubes) 1 medium red onion (large dice) 16 white button mushrooms (cleaned and left whole) 1 red bell pepper (large dice) 1 green bell pepper (large dice) Vinaigrette 1 ¼ cups (310 mL) extra virgin olive oil ¾ cup (185mL) white wine vinegar 2 Tbsp (30mL) roasted and minced garlic ¼ cup (60mL) chopped fresh thyme 1 Tbsp (15mL) Dijon mustard Salt and pepper

How to Cook Lobster Like an Islander Boiling is the most popular method for cooking lobster on PEI. Fill a large pot with seawater (or 3 tsp of salt per quart/litre of water) and bring to a boil. Using your hands or tongs, grab each lobster by its back and place it head first into the boiling water. Do not crowd the lobster or overfill. Allow the water to return to a boil, and then reduce to a simmer. Cook uncovered, for about 12-15 minutes or up to 20 minutes for larger lobsters.

PEI Potatoes:

A Nutritional Powerhouse!

It may be a surprise for many to discover that one medium PEI potato (5.3 oz.), with the skin contains 45 percent of the daily value for vitamin C; as much or more potassium (620 mg) than either bananas, spinach, or broccoli; 10 % of the daily value of B6; and trace amounts of thiamin, riboflavin, folate, magnesium, phosphorous, iron, and zinc — all for only 110 calories and no fat! The family farm is alive and well on PEI! We have 200 farms growing 89,000 acres of potatoes. That is an average farm size of 445 acres.

We have been growing potatoes since the 1790 – we have the longest history of growing potatoes in Canada!

Charlottetown’s Local Brews When I come downstairs at the Gahan Brewery to talk to Head Brewer Chris Long, there’s a lineup. A tourist in for lunch upstairs has caught his ear. I take a peak at the Gahan’s system, a seven barrel system that Chris says is never coming out of there. The small chrome and copper tanks have worked hard since 1997 bringing beers to the people, the blond Sir John A’s Honey Wheat Ale, the Island Red Amber, and of course, Gahan’s unforgettable Blueberry. Small breweries are breaking the mold from their larger, more mature production brewery sisters. “Craft breweries are closely connected to the people they’re brewing for,” he says, “In PEI, it’s your neighbors who are drinking your beer.” Long has seen both sides of the coin on PEI, working with Gahan and the larger PEI Brewing Company, exporting to New Brunswick, Nova Scotia, Newfoundland and Alberta. It’s strategy hour at Charlottetown’s latest digs, Upstreet Craft Brewing but it’s only Brewer Mike Hogan I want to chat with today.

Hogan, who’s affectionately known around the brewery as “The Beer Engineer”, came to his post through an absolute fervor for the beverage: an insatiable desire to declassify the nuances of craft beer. It all started with a love affair with Pilsner, the Czech style lager, one of the styles that Upstreet now carries. When the brewery opened last year, the Rhuby Social was one of the flagship beers unveiled in production: a twist on the classic witbier with PEI strawberries and rhubarb. What inspires Mike Hogan about the world of craft brewing today? “The coolest thing about craft beer drinkers is that they’re open to anything – there’s a hunger for new flavors there which allows brewers to respond in innovative and experimental ways.” Written By: Mo Duffy Cobb

Tasty Italian Mussels Servings: 5 Cooking Time: 7 Minutes Gluten Free Lactose Free Method Rinse fresh PEI Mussels under tap water. Tap any mussels that are still open and discard any that do not close after being tapped and rinsed. Set aside. Sauté the sausage, onions and garlic in olive oil in a large fry pan until onion is golden. Lay cleaned mussels on top of onions and sausage. Add wine and salsa. Mix and cover. Steam for 4-7 minutes. Add salt and pepper to taste. To serve, place mussels and sausage in bowls and spoon cooking sauce over. Remove any mussels that do not open.
