Beer-Steamed PEI Mussels Method 1. Rinse fresh PEI Mussels under tap water. Tap any mussels that are still open and discard any that do not close after being tapped and rinsed. Set aside. 2. In large shallow pan, melt butter over medium heat; cook chopped onion, tomato, salt and pepper, stirring occasionally, until softened, about 5 minutes. 3. Squeeze juice from lemon into pan; add remaining lemon. Add PEI local light beer; bring to boil. 4. Add mussels, cover and simmer until mussels open, about 10 minutes. Discard any that do not open. Discard lemon; sprinkle with green onion

Ingredients • 2 lb fresh PEI Mussels • 1 tbsp butter • 1 onion, chopped • 1 tomato, large, roughly chopped • 1⁄4 tsp salt • 1⁄4 tsp pepper • 1⁄2 lemon • 1 bottle, PEI local light beer • 2 green onions, sliced

Grilled Beef Yields 4 Steak Sandwich with Melted Onions Method 1. Combine 2 tbsp (30 mL) oil, vinegar, garlic, salt and hot pepper flakes in sealable freezer bag. Set aside 2 tbsp (30 mL) of marinade. Using fork, pierce meat all over; add to marinade in bag. Refrigerate for 8 to 12 hours. 2. Remove steak from bag and pat dry with paper towel. Discard used marinade. Grill steak over medium-high heat, about 6 to 8 minutes, turning at least twice, for medium-rare doneness 145°F(63°C). Let steak rest on carving board for 10 minutes. 3. Meanwhile, pan-fry onion in remaining oil over medium heat in non-stick skillet for 10 minutes or until softened and golden. Toss with reserved marinade. 4. Slice steak thinly on the diagonal. Drape slices of steak on each baguette bottom piece. Top each with warm onions and arugula.

Ingredients • 3 tbsp (45 mL) olive oil •2 tbsp (30 mL) red wine vinegar • 4 cloves garlic, minced • ½ tsp (2 mL) salt and hot pepper flakes • 1 lb (500 g) Prince Edward Island Certified Island Beef Inside Round or Sirloin Tip Marinating Steak/Medallions • 1 sweet onion (e.g. Vidalia), sliced • 1 whole wheat or regular baguette, quartered and halved lengthwise • ½ bunch arugula, trimmed • 2 green onions, sliced

Famous PEI Potato Pie Method Using a pie plate or casserole, line with bacon leaving half slice of bacon over the edge of dish. Layer potatoes and a generous amount of grated cheese, chopped chives and salt and pepper. Add ground thyme to first potato layer only. Repeat potato and cheese layers until you have four layers. Pull bacon up over top of pie. Pie should be 4-5 in. (10-12 cm) thick at middle. Fasten centre with skewer. Cover with foil and bake at 400°F for 2 hours, remove foil and continue to bake for another 30 minutes, until fork tender and bacon is cooked. Sauce: In a medium bowl, combine all sauce ingredients. Serve over cooked potato pie.

Baked Oysters with Spinach, Tomato & Balsamic Vinaigrette Method Preheat oven to 400° F. Shuck all of the oysters and then strain and reserve the Oyster Liquor. Place the empty shell bottoms on a sheet pan that is lined with crumpled foil in a way that the foil will provide support for the shell and the juice will not run out of the shell. Sauté the shallots and garlic in olive oil over medium heat in a sauté pan until they are translucent. Deglaze with white wine. Add the Oyster Liquor and the spinach. Steam the spinach for one minute. Place some cooked spinach in the bottom of each oyster shell and place one oyster on top of the spinach in each oyster shell. Place ½ tbsp of the juice that is left from steaming the spinach into each shell. Top each oyster with some chopped tomato, some fresh basil and a drizzle of balsamic vinegar. Season each oyster with salt and fresh cracked black pepper. Place the sheet pan of oysters in a preheated oven at 375° F for approximately 4-6 minutes.

GARLIC BUTTER GRILLED PEI LOBSTER WITH WHITE CHEDDAR & SCALLION Yield: 4 servings 4 each ½ cup 1 clove 1 cup 2 each to taste

PEI Market Lobsters PEI Salted Butter, melted Garlic, minced PEI White Cheddar Cheese, grated Scallions, chopped Black Pepper

Instructions: Bring a large pot of cold-salted water to a boil. Place lobster into water and boil for 2 minutes; remove from pot and place into an ice bath to stop the cooking process. Once cooled, remove tails and claws from bodies; discard bodies. Cut the lobster tails in half lengthwise. Crack claws and knuckles and remove meat from shells; set aside. Heat grill to medium-high heat. Combine melted butter and garlic; brush onto lobster tails. Place lobster tails onto grill (shell side down) and grill for 3-4 minutes; brushing with garlic butter occasionally. Sprinkle the lobster tails with cheese and scallions and cook for an additional minute or until cheese is melted. Gently sauté lobster claws and knuckles in remaining garlic butter for 1-2 minutes or until heated through. Place lobster tails onto plates and season with black pepper. Divide lobster claws and knuckles amongst plates. Serve hot. Chef’s Tip: Lobster can be finished on the BBQ or under the broiler if desired.

Lobster Filled Potatoes Method 1. Preheat oven to 375ºF (190ºC). 2. Bake potatoes for 60 to 70 minutes. 3. Halve the potatoes lengthwise. 4. Scoop out the potatoes; reserving the shells. 5. Add the mayonnaise and sour cream to the potatoes and mash. 6. Add the lobster meat, spring onion, tarragon, mustard and paprika and mix thoroughly. 7. Fill the potato shells with the lobster and potato mixture. Sprinkle parmesan over the potatoes. 8. Place the potatoes on a baking sheet and place in an oven preheated to 375ºF (190ºC). Bake for 15 to 20 minutes.

Ingredients • 8 medium sized potatoes, baked and halved • 1⁄3 cup (80 ml) mayonnaise • 1/4 cup (60 ml) sour cream • 2 cups (500 ml) fresh or canned lobster meat, chopped • 2 spring onions, sliced • 1 tbsp (15 ml) Dijon mustard • 1 tbsp (15 ml) chopped fresh tarragon • 1/2 ttsp (3 ml) smoked paprika • 1/4 cup (60 ml) grated Parmesan
