Recipe header 1 kilogram green maize 500 grams green peas 1 kilogram potatoes, peeled 500 grams margarine (blue band) 1 kilogram meat cubes 250 grams tomato paste 4 ripe tomatoes, chopped into small pieces

1 teaspoon salt 5 bunches of terere (amaranth leaves) 1 bunch of fresh dhania 1 cup of milk 5 large onions, chopped 3 teaspoons of cooking oil

Boil the green maize in a big sufuria (saucepan or pressure cooker). When the maize is almost cooked, add the potatoes and continue to boil until they are soft. Add the chopped amaranth leaves and boil for another ten minutes or until the water has dried up. Remove the mixture from the heat and add the margarine and salt. Mash the mixture with a mashing spoon until it is smooth. You can add fresh milk when mashing to bring the mixture to an even and smooth finish. This dish is called Mokimo and it can be served alone, with meat stew or other vegetables. Prepare the beef stew by first frying the onions in cooking oil until golden brown. Add the meat and continue to fry until it is soft. Add the tomatoes and cook until they have dissolved into the stew. Add three cups of water and the tomato paste and bring the stew to boil. You can add your favourite spices such as royco or aromat. Serve the dish when it is still hot.
