This week we met with Mark Bloom, Co-Founder of Fayre Share Restaurant in Victoria Park Hackney which opened its doors last week. Fayre Share is a new sharing concept where the best of British dishes can be ordered for 1, 2 or 4 guests. Perfect for home style comfort eating. I understand you have all worked in the restaurant and food world for some time – excuse the pun but care to share? A. Nice pun! Barry started his career in the kitchen, he worked for Gordon Ramsey before moving on to the Mandarin Oriental and later Heston’s Hinds Head. From there he moved out of the kitchen into events. My key experience with restaurants has been with the amazing Corbin & King Group, where I have worked at The Wolseley as Restaurant Manager, along with periods at Colbert and Brasserie Zedel. I started off in a very different world. Much of my early working life was in nightclubs and bars and hotels. Barry and I were lucky enough to find Luke Spencer as Head Chef. Luke has spent much of his career working for Mark Hix, most recently at Tramshed. As soon as we sat down with Luke we were sure he would be a great fit, and once we tasted his food we knew it! He shares the same passion for British food as well as believes in our sharing principle! Q. We love your new take on the sharing concept with each dish being available in different sizes for 1, 2 or 4 people what was your inspiration for this? We wanted to create an environment that felt like you were in your own front room, somewhere where you could come together with your friends and extended family to eat as you would at your family home, sharing the meal not just the meal time. Your kitchen and dining room away from home! By offering portions for 1,2 and 4 we allow for people to have several single dishes and share them or to have one big dish in the middle of the table! Q. We understand you offer some hearty pies, steaks and 3 types of mash. Do you have some lighter healthy options too? A. 100% we know that not everyone wants to eat big hearty pies or Beer Can Chicken all the time. We also are very conscious of people wanting to have a lighter lunch or an afternoon snack. We have a great selection of salads such as poached salmon with roasted cherry tomatoes and lentils as well as lighter mains such as Cod

with Green beans, asparagus and poached egg. The mash options really add as an extra element to the pies. Each mash slightly changes the flavor of the dish, essentially making it 3 different variations of the same pie – the hardest part is picking from Cream Mash, Cheese and Mustard Mash, or Sweet Potato Mash! Serving such a classically British menu, did you stay loyally British in terms of sourcing your ingredients? We have looked to source as much as we can from British suppliers, not only do we want to stay true to what Fayre Share is, but we are also conscious of environmental factors. Victoria Park Village is a real oasis in the middle of a busy part of Hackney. One of the really lovely things is the smaller shops and restaurant, there’s a fishmonger, greengrocer and the Ginger Pig Butcher who we have been speaking to about working together on specials. We also have some great vegetarian and vegan options too. Q. We hear you have taken the sharing concept to G&T’s how does that work? A. You mean the G&Tea! It is served in a tea pot, with tea cups and lime on the side. A nice way to start the meal we thought. Sharing drinks can sometimes have a bit of a bad stigma attached with people having visions of fishbowls full of cocktails or jugs of beer. The G&Tea is a Gin and Tonic made with East London Liquor Company’s London Dry Gin, that is distilled just over the park from us. The covered garden, fireplace and a kitchen island bar really brings a home away from home feel to the restaurant. We have put a lot of effort into the conservatory to make sure it’s a comfortable place all year round, and can seat 20 for a private event, or larger drinks receptions. The retractable roof is a great feature for the summer evenings

but it very much feels part of the dining area with the fire place at the end and banquette seating, somewhere comfortable and homely all year. Perfect as I think Barry and I will be almost living here for the next 12 months! Q. As your first restaurant, what’s been the hardest part of getting to this opening point? A. I was always taught two things by Jeremy King during my time with them; never to get too worried about things that you will have forgotten about in a few days, and that change is normal. It was good advice when I worked for the company and it remains good advice now. www.fayreshare.co.uk

The suite will be transformed into a botanical terrace with a sail, outdoor seating and a secret instagrammable moment. The Botanical Suite will have a weekly changing roster, featuring a different menu and concept created by four senior team members at Dandelyan.

It was immediately successful, most notably with a famous 1-2-3 in the sub-750cc class of the final Mille Miglia in 1957. o Jaguar XK120 OTS – The Jaguar XK120 OTS was were Jaguar’s sports car history really began. It was the fastest car of its day, setting 24-hour and seven-day, seven-night speed records of more than 100mph each. Not bad at all for a car celebrating its 70th anniversary this year

o Ferrari LaFerrari – With a limited production of just 499 cars, Ferrari’s technological tour de force was first introduced in 2013. Powered by a 950bhp hybrid V12, the LaFerrari has a top speed of over 217mph.

o Aston Martin V8 Vantage – The Aston Martin V8 Vantage was considered "Britain's First Supercar", when it was launched in 1977. It produced 380hp, with a top speed of 170 mph and an acceleration from 0-60 mph in 5.2 seconds. This V8 Vantage is number 13 of the 16 first series Bolt On V8 Vantages.

The Event - The London Concours is an automotive garden party hosted in the heart of the City of London - Over the course of the 7-8 June, the Honourable Artillery Company Garden will play host to around 80 of the finest classic and performance cars ever produced - Now in its second year, the London Concours also hosts pop-up boutiques from luxury watchmakers, Breguet and Glasshutte, and arthouse Collier Dobson, as well as a champagne bar from Taittinger and cocktails from Remy Martin.

The Venue - The Honourable Artillery Company HQ is a five-acre oasis of green nestled among the buildings of the City of London, and located just off City Road. - The Garden is informally known as ‘the world’s second most valuable cricket pitch’, used from mid-April to mid-September for cricket matches - The Honourable Artillery Company is an active military facility, and holds the unique honour of being the location of Britain’s very first hot air balloon ascent

The Cars - More than £50m-worth of cars have been carefully curated by the London Concours Steering Committee, a group of motoring experts from varied backgrounds; journalism, finance, law, and classic car sales and restoration. - The theme for this year’s event is ‘Speed’ – all the cars appearing in the event will be grouped in classes; Fast, Faster, Very Fast, Superfast and Hyperfast - Headline Cars at London Concours o Lamborghini Miura S – Described by some as the world’s first supercar, the Lamborghini Miura debuted in 1966 with the aim of relegating Ferrari to the sidelines. o McLaren F1 – The F1 was the fastest car in the world for 13 years, from 1992 to 2005, setting a record of 240.1mph. It implemented a number of firsts for a road car, including a chassis made completely of strong, lightweight carbon fibre reinforced polymer.

o The Beast of Turin (Fiat S76 28.5-litre) – Informally known as ‘The Beast of Turin, this Fiat S76 was built by Fiat to break the land speed record in 1911. Its colossal 28.5-litre inline-four engine is the largest purpose-built car engine ever, and produces around 300hp.
