MAPLE-ROASTED SWEET POTATO SPEARS Serves 6-8 I like to make a lot of these, especially when the weather turns colder. It is a great side dish for Thanksgiving. Even finicky children love them.

3 large sweet potatoes (about 12 oz. each), scrubbed and patted dry 2 t. olive oil 1/2 t. coarse kosher salt 1/4 cup maple syrup 1 T. cider vinegar 1 t. fresh thyme or 1/2 t. dried Preheat oven to 425°.
