Whenever I write an article pertaining to thyroid I get a tremendous response from the public. Probably because individuals feel the effects of hypothyroidism and synthetic thyroid hormone rarely fixes the problem. When I write articles on heart attack and strokes there is more of a ho-hum response. Probably because most individuals don’t have symptoms with atherosclerosis until it’s too late! As a matter fact the very first symptom of any heart disease for many individuals is death! If you’re relying on cholesterol as your predictor of future heart attack and stroke, you may end up very disappointed. Total cholesterol level is about worthless in determining your risk for heart disease, unless it is above 330. The greatly feared “bad cholesterolâ€? called LDL is not much better at predicting your heart disease. UCLA School of Medicine found that 75% of patients hospitalized for a heart attack had low levels of the “badâ€? cholesterol LDL, below the 130 mg/dl safe range. An American Journal of Pathology study verifies that chronic inflammation is a primary cause of heart attacks and strokes, not cholesterol. Two of the best and least expensive . biomarkers of chronic inflammation are hsCRP and fibrinogen blood The Great Min nesota Together levels. Major studies have demonstrated that elevated blood levels of hsCRP is highly predictive of future heart attack, stroke, sudden 3rd annual cardiac death, and the development of peripheral arterial disease. Elevated hsCRP levels predict risk over the next 30 to 40 years. Fibrinogen levels increase in the blood with chronic inflammation. Everyone should know their hsCRP and fibrinogen blood levels and how to maintain healthy levels without drugs. These are important biomarkers that I follow and treat in all of my patients. Spices Continued: • One spice still demanding a high price is saffron, which comes from the flower of a crocus species that only blooms for about two weeks. Each flower contains three stigmas, the tiny parts ground for the spice. It takes about 200,000 stigmas to produce one pound (.45 kg) of saffron. Fortunately, it only takes a tiny amount of saffron to flavor most dishes. • Saffron was brought to Pennsylvania in the 1700s by a German Amish family and has been a flourishing crop and common in Amish dishes ever since. It is grown commercially in Iran, India, France, Spain, Greece, Turkey and Morocco. Saffron is used liberally in paella, the national rice dish of Spain. • Cloves are the flower buds from tall tropical trees native to Indonesia. Buds are picked when they are pink and then dried to a dark brown color. Cloves are now grown in Tanzania, Madagascar, Sri Lanka, Malaysia and Grenada as well as Indonesia. The trees, planted from seeds, must grow about five years before they flower and can live to be over 100 years old. Cloves are handharvested and are not just for flavoring foods. Clove oil, called eugenol, is used in perfumes, mouthwashes and more. • The most common spice in the world, black pepper, comes from a climbing vine first cultivated in India. Arabs controlled the pepper trade to Europe for many years. Many European explorers began looking for pepper in their explorations. Ships brought pepper from Southeast Asia to America in the late 1700s. Salem, Massachusetts, once known as the “Pepper Port,” processed 7.5 million pounds (3.4 million kg) of pepper in 1805.

CRUDE OIL Crude oil (petroleum) is a complex mixture of many different chemical compounds called hydrocarbons. The separation of these compounds into useable products is known as fractionaldistillation. Through distillation, crude oil is heated to separate the hydrocarbons into raw fractions: gasoline, kerosene, fuel oil, gas oil, wax distillate and cylinder stock or bottoms. These raw fractions are then selectively changed through conversion methods (cracking and rearranging the molecules) and treatments to improve the products to meet specific requirements. Here is a simplified look at the different fractions of petroleum and what they are made into. • The gasoline fraction is further refined through a variety of processes that convert it into the different fuels we power our cars with. • The kerosene fraction is used for aviation fuel, and fuel oil fractions

are used as diesel for the trucking and construction industry. This fraction is also processed into a variety of specialty solvents used in manufacturing. • The gas oil fraction is a heavy, non-volatile fuel and is used either as a fuel or an oil. If the gas oil fraction is hydroprocessed, it can be made into white oil (sewing machine oil), or a higher processed oil for use in cosmetics and pharmaceuticals. • The wax distillate fraction is a valuable source of lubricating stock and paraffin. When the wax or paraffin is separated out, one of the basic components of lubricants is produced, which is called a neutral. Neutrals are further refined through distillation and hydroprocessing to produce specialized components used in the manufacture of engine oils, gear lubricants and greases. • Paraffins are used in many products, from candles to cosmetics to paper coating, inks, fabrics and even in our foods. • The cylinder stock or bottoms fraction is what is left over after crude oil has been distilled. It is a heavy, oily wax. The wax portion is separated out to create a product called Micro Wax. This wax has a much higher melting point than paraffins and is used in a variety of products such as plastics and building materials. It's also used as a food additive and even as an ingredient in candies and gums to help them keep their shapes. • The oil portion of the cylinder stock is a heavy lubricant base stock used in heavy-duty gear oil and many industrial lubricants. When it is further processed to remove resins, the resins are used to make many different products like high-temperature insulations and undercoatings, as well

as fuels for ocean-going barges. • The bottoms fraction is very asphaltic and is used for making road tar and heavy burner fuel. • Crude oil is more a part of our lives than most of us realize. The refining process is a complex operation generating many components that are the building blocks for much of what we use every day. We depend on petroleum to fuel our cars, but it's also a key component in fertilizers and pesticides; products such as plastic, synthetic rubber and synthetic fibers such as nylon, vinyl, acrylic and polyester; building materials; epoxy; paint; insulation; soaps; nail polish; hair spray; dental fillings; and the list goes on and on.

Candle Wax: To remove wax from carpeting or other fabric, first scrape away any excess. Then, place a brown paper bag over the wax and run a warm iron over the bag. The wax will melt right into the bag! Continue moving the bag around as you pick up the wax so you are always using a clean section. If a little grease stain remains on carpet, sprinkle with baking soda and allow to sit overnight before vacuuming, which will remove the grease residue. If colored wax leaves a stain on carpet, blot with spot remover or carpet cleaner, following label directions.

Cast Iron Pans: To gently and effectively clean your cast iron skillets after most uses, wipe out excess food with a dry paper towel, then sprinkle salt inside the pan. Wipe clean with a clean, dry paper towel. The salt acts as an abrasive to scratch off any stuck-on particles of food without using soap and water, which can remove your seasoning. For stubborn stuck-on food, use a putty knife to scrape it off. You may, however, need to reseason the pan after doing this.

Sausage and Pumpkin Pasta

There’s no getting around pumpkins this fall! Paired with spicy sausage, convenient canned pumpkin livens up the usual dinner pasta.

1 pound rigatoni 8 ounces spicy Italian sausage, casings removed 5 fresh sage leaves, finely chopped 1 can (15-ounce) pure pumpkin 1/2 cup grated Parmesan cheese 1. Cook rigatoni as label directs, reserving 1 cup cooking water. 2. In 12-inch nonstick skillet, cook sausage on medium 6 minutes, breaking up sausage. Add fresh sage leaves; cook 1 minute, stirring. Add pumpkin and reserved pasta water; mix well. 3. Drain pasta; return to pot. Add sausage mixture; heat through. Stir in Parmesan. Serves 4.
