Apples are back in season and while I like nothing better than eating a fresh crisp apple straight from the fruit bowl they are also super delicious baked into these yummy cupcakes. I have also included a simple recipe to make your own cinnamon sugar you can use to sprinkle onto the cupcakes. Of course you can buy it ready made if you like. As usual make sure you have all ingredients before you start baking and allow eggs, butter and cream cheese to come to room temperature. The cupcake and frosting recipe can easily be doubled.

Apple Spice Cupcakes

(makes 12 cupcakes)

1 cup self raising flour 1 tsp ground cinnamon 1 tsp all spice 125 g unsalted butter 1/2 cup caster sugar 1/4 cup brown sugar (lightly packed) 2 eggs 1 tsp vanilla extract 1 cup grated apple (1 large or 2 small apples) Preheat oven to 180 C and line a muffin tray with baking papers. Sift together the self raising flour, cinnamon and all spice. Pop aside until required. In a large bowl at medium low speed combine the butter and both sugars. Once combined increase speed to high and mix for a couple of minutes. |
