This tasty soup is perfect for lunch, served with you favourite bread, or as a starter with a dollop of crème fraîche and some toasted pumpkin seeds. PREPARATION & COOKING TIME: 25-30 MINUTES 375g pumpkin, peeled and roughly chopped 150g carrot, peeled and roughly chopped 300g onion, roughly chopped

1.3 litres vegetable stock (or chicken stock for non-veggies) 100g red lentils Salt and freshly ground pepper Finely-grated rind and juice of 1 large orange

1. Put all the ingredients, except the orange, into a large saucepan and bring to the boil. Cover and simmer gently for 20-25 minutes or until all the vegetables are very tender. 2. Leave the soup to cool slightly before pureeing in a blender or food processor. 3. Stir in the grated orange rind and juice. Adjust seasoning to taste.

Crema de Calabaza con Naranja

Esta crema, acompañada de tu pan favorito, es perfecta para la hora de comer, o también como entrante, servida con una buena cucharada de crema fresca y algunas pipas de calabaza tostadas. Tiempo de preparación y cocción: 25-30 minutos 375g calabaza, pelada y troceada 150g zanahoria, pelada y troceada 300g cebolla, pelada y troceada

1.3 litros caldo de verdura (o caldo de pollo si no son vegetarianos) 100g lentejas rojas Sal y pimienta negra recien molida Zumo y piel rallada fina de una naranja grande

1. Poner todos los ingredientes, excepto la naranja, en una olla grande y calentar hasta que hierva. Tapar y dejar a fuego lento durante 20-25 minutos hasta que las verduras estén blandas. 2. Dejar enfriar un poquito antes de triturar 3. Añadir el zumo y la piel de naranja, moviendo con una cuchara. Salpimentar al gusto.
