hat special time of year is once again upon us. To each of us, the holidays mean something a little different. It seems that no matter what your beliefs are, this time of year brings the celebration of family, life, and happiness. Depending where you live and your traditions, your family’s celebration may be a little different than your next-door neighbors. Maybe you celebrate the birth of Christ with Christmas; Christians of every denomination recognize the birth of Christ as one of the most significant events in all of history. Christmas is both a sacred religious holiday and a worldwide cultural and commercial phenomenon. For two millennia, people around the world have been observing it with traditions and practices that are both religious and secular in nature. Yet, the great importance of this event is often lost in western culture, as is the intriguing history associated with the symbols, stories and songs of Christmas. Moreover Christmas is the holiday to bring

families together for Christmas customs are truly the holiday of giving and family togetherness. Celebrating the Jewish holiday of Hanukkah, also known as the festival of lights, is not one of the most important Jewish religious observances, but it is a celebration that gets added attention as you make the re-affirmation to live by The Commandments. Hanukkah celebrates a great Jewish military victory and the miracle of a one-day supply of oil for the temple lasting eight days lightning the menorah. Basically as the story goes, according to the Talmud, at the re-dedication of the Jewish temple following the victory of the Maccabees, there was only enough consecrated oil to fuel the eternal flame in the Temple for one day. Miraculously, the oil burned for eight days. Hanukkah is a celebration of remembrance of the past and bringing families together. Although, the light that Christians and Jews kindle during the holiday season is from the same source, as with a prism, it’s refracted in distinctive colors. Whichever path you follow, may the holidays bring health and happiness; as this time of year is special for nearly everyone.

Dreidel

A dreidel is a pointed, four-sided top, which can be made to spin on its pointed base. It has four sides with the Hebrew symbols for the words meaning, "A great miracle happened there or here (depending where you are in the world),” a reference to the Hanukkah miracle that transpired in the Land of Israel. Learning Torah was outlawed by the enemy, a “crime” punishable by death so Jewish children resorted to hiding in caves in order to study. If a Greek patrol would approach, the children would pull out their tops and pretend to be playing a game. During Hanukkah playing the game and singing the famous song, “Oh Dreidel,” remind kids of the emphasis Judaism places on education.

Fried Foods

Because of the central role that oil played in the Hanukkah miracle, it is customary to serve foods fried in oil. The traditional foods vary according to country of origin: Jews of Eastern European (or Ashkenazi) origin eat latkes, fried potato pancakes. Spanish and Portuguese (Sephardic) Jews eat different varieties of deep-fried doughnuts. Greek (Romaniote) Jews call them loukomades; Persian (Mizrahi) Jews refer to them as zelebi, while in Israel jelly doughnuts are wildly popular and known as sufganiyot.

Colors

From candles for the menorah, Hanukkah colors tend to come in blue and white or blue and silver. The most obvious explanation for the colors is the Israeli flag, designed by the Zionist movement in 1891 and officially adopted in 1948. The flag's blue stripes symbolize those found on tallit, a traditional Jewish prayer shawl. So why are there blue stripes on tallitot? According to the Torah, the Israelites were told to dye a thread on their tassels (tzittzit), which has a numerical value of 613, with (tekhelet), blue ink from a sea snail, so that they may look upon it, and remember all of the 613 commandments.

Menorah

One of the oldest symbols of the Jewish faith is the menorah, a seven-branched candelabrum used in the Temple. The menorah is a candlestick that holds nine candles, one for each of the eight nights of the holiday, and one “helper candle,” the shamash, to light the others. As its unique design communicates, the Menorah endures as a symbol of Divine light spreading throughout the world. Each night another candle is added and lighted for eight happy nights. It has been said that the menorah is a symbol of the nation of Israel and its mission to be "a light unto the nations."

Presents

As Adam Sandler pointed out in his hit “Hanukkah Song,” “Instead of one day of presents, we have eight crazy nights.” Create and follow your own traditions for giving gifts during Hanukkah. However, Hanukkah’s week-anda-day duration poses an annual conundrum: how to divvy up the gifts. Should there be eight nights of equally weighted surprises or should there be emphasis placed on a particular night for more significant presents? And if it’s the latter, what day counts the most? The first? The last? Some get gifts only on one night while others get gifts every night.

Gelt

Gelt refers to either money given as a gift on Hanukkah, or more commonly today, to a coin shaped piece of chocolate. Usually the chocolate coin is wrapped in gold or silver foil and given in small mesh bags. Many families continue to give their children actual monetary "gelt" as part of their Hanukkah celebrations today. Generally children are encouraged to donate this money to a charity as an act of “tzedakah” to teach them about the importance of giving to those in need.


Nativity

A Christmas nativity is probably one of the most recognizable symbols of the Christmas season, means arisen by birth. It is the literal representation of the birth of the Son of God. Over the centuries, Nativity scenes have evolved into much more elaborate displays. It mainly includes Jesus, Mary, Joseph, shepherds, wise men, and angels, in some cases even the star of Bethlehem.

Tree & Star

The Christmas star symbolizes the star of Bethlehem, which guided the three kings to the baby Jesus. Though a single star may have miraculously and spontaneously appeared, it is interesting to consider that God might rather have been orchestrating the heavens over many centuries in order to communicate a unique message about Jesus. A star is also the heavenly sign of prophecy fulfilled long ago and the shining hope of mankind to achieve a better life. The Evergreen tree shows everlasting light and life and the needles point up to heaven. The tree symbolized life during the winter.

Presents

The wise men who brought their gifts of gold, frankincense, and myrrh to honor the infant King in Bethlehem's manger have inspired the concept of gift giving at Christmas. God also gives us the gift of the Holy Spirit, which helps us to follow His direction in our lives. Though the practice of giving gifts on Christmas seems like a natural response to His great example. For many people, gifts define Christmas, focusing on the giving and receiving of gifts instead of Jesus, the greatest gift given at Christmas.

Santa

Santa Claus is a legendary character that, according to Western culture, brings gifts to children for Christmas. It is inspired by a Christian bishop, of Greek origin, named Nicholas who lived in the 4th century in Anatolia (Turkey). Legend has it that this bishop relieved the needs of a family by depositing their fortune in the shoes that were next to the chimney. The practice of gift giving in America is actually rooted in the European celebration of St. Nicholas’ Day on December 6th. Though the modern Santa Claus is associated with a world of fantasy, the historical St. Nicholas was a godly man known for his charity and generosity. Furthermore, the idea of giving gifts in Santa’s name is a useful practice. In essence, when gifts are given in Santa’s name, they are given anonymously. Secret generosity is consistent with how St. Nicholas gave gifts.

Wreath &Candles

A wreath is a circular, never-ending symbol of eternal love and rebirth. Today the wreath symbolizes generosity, giving and gathering of family. The candle is a mirror of starlight, reflecting thanks for the star of Bethlehem. In the Advent wreath, a purple candle (for penance) is lit for the first, second, and fourth Sundays of Advent and a pink one (for joy) on the third Sunday of Advent. On Christmas Day, a white (candle for the purity of Christ) is lit in the center of the wreath.

Angels

The term angel literally means “messenger,” and it is in this prominent role that angels take part in the Christmas story. As per the story, a Christmas angel appeared to Mary to spread the news of the birth of the Son of God, to the shepherds. The angels were ecstatic and sang a serenade for the newborn baby. They were assigned to fly closer to earth and sing a melodious song, which was heard in the heavens and throughout the earth.

t’s hard not to fall in love with Ivanka Trump Kushner; she’s intelligent, poised, soft-spoken, eloquent, sophisticated and stunning. Growing up in the lavish New York City lifestyle, Ivanka is probably best known as the daughter of the American business magnate and new PresidentElect of the United States of America, Donald Trump and his former wife Ivana. However, there is so much more to the beautiful blonde, doeeyed mom, entrepreneur and former model. While she doesn’t appear to toot her own horn, Ivanka is smart without making a point of it and not known for saying unkind things. Her very feminine classic style of dress is elegant. She even sells a readily accessible form of that style to women through her eponymous clothing brand, Ivanka Trump, a collection of chic silhouettes with clever details including shoes, clothing and handbags. As family is first and foremost to her, Ivanka is clearly a devoted mother and wife. In July 2009, after studying with Rabbi Elie Weinstock from the Modern Orthodox Ramaz School, she had an Orthodox conversion to Judaism and took the Hebrew name Yael. She attests to keeping a kosher diet and observing the Jewish Sabbath and states, “We’re pretty observant... It’s been such a great life decision for me... I really find that with Judaism, it creates an amazing blueprint for family connectivity. From Friday to Saturday we don’t do anything but hang out with one another. We don’t make phone calls.” Married since 2009 to husband and real estate developer, Jared Kushner, they have three beautiful children, Arabella, James and Theodore. “When it comes to parenting, don’t let your convictions be swayed by others’ well-meaning advice. Everyone thinks they’re a pro and it can undermine your confidence. Make the decisions that are best for your family. Period. As parenting philosophies continue to evolve, it’s better to blaze your own trail,” she says. Following in her mom’s footsteps, Ivanka’s modeling career kicked off

in 1997 when she was a cover girl for “Seventeen” magazine. Signed to Elite Model Management, Ivanka had a spread in “Elle”, appeared in Tommy Hilfiger ads, walked on a Paris runway for Thierry Mugler, did a charity event for Versace, and co-hosted the Miss Teen USA 1997 pageant. Amazingly, this was all done before she was eligible for a learner’s permit. Ivanka didn’t love modeling and gave it up after high school when she was admitted into Georgetown University. After two years she transferred to the Wharton School of Business at the University of Pennsylvania, from which she graduated Cum Laude with a B.S. in Economics. Following graduation, she worked as a diamond designer and in 2007, she joined forces with Dynamic Diamond Corp., a diamond trading company sightholder, to design and introduce a line of jewelry at the brand’s first flagship retail store called ‘Ivanka Trump’ on Madison Avenue. Currently, she is Executive Vice President of Development & Acquisitions at the Trump Organization and is involved with all aspects of the company’s real estate and hotel management initiatives. Additionally, she serves on the Board of 100 Women in Hedge Funds, an industry organization that provides support to women professionals in finance. Balancing her family life and business ventures, Ivanka says, “A scale is only in balance for a brief second. Inevitably the pendulum swings. It’s impossible to maintain.” Regardless of her last name, Ivanka has her own political views and said, “Like many of my fellow millennials, I do not consider myself categorically Republican or Democrat.” In 2007, she even donated $1,000 to the presidential campaign of her close friend Chelsea’s mom, Hillary Clinton. In 2012, she endorsed Mitt Romney for president and in 2013; Ivanka and her husband hosted a fundraiser for Cory Booker where they bundled more than $40,000 for Booker’s U.S. Senate campaign. Then, in 2015, she publicly endorsed her

father’s presidential campaign, introduced him at the Republican National Convention and was involved with his campaign by making public appearances to support him and has even defended him. However, she admitted mixed feelings about his presidential ambitions and says, “As a citizen, I love what he’s doing. As a daughter, it’s obviously more complicated.” After all, actions speak louder than words, Ivanka stood up for women and mothers at the Republican National Convention, arguing in favor of equal wages for equal work, improved childcare structures and paid family leave.

It’s also a time to gather with friends and family and celebrate...and for wine-lovers everywhere, there’s no better way than with bubbles. Just like our diverse holiday customs, there are numerous types of bubbles to enjoy while sitting by the crackling fire with holiday lights aglow. Waiting for the “Big Guy” to deliver presents is a tough job, but not if you have a glass of the #goodjuice in hand. Champagne is the go-to, and perhaps the most exceptional Champagnes in the world come from the House of Krug, founded by Joseph Krug in 1843 in Reims, France. pon entering Casa D’Angelo, Chef Angelo and his wife Denise warmly greeted us as if we were going to their home for dinner. “I created Casa D’Angelo with recipes handed down to me from generations of passionate Italian cooks, like Mama Elia” said Angelo. The menu focuses on fresh, seasonable ingredients; some imported directly from Italy and feature many nightly specials. Relaxing in the beautiful wine room, our Italian Tuscan culinary adventure began with a wonderful Antipasto Angelo, an assortment of seasonal grilled vegetables and sliced bufala mozzarella as well as the Gamberi Alla Mamma Giovanna, succulent Tiger prawns wrapped in Italian pancetta, grilled and served over broccoli rabe. The Melanzane Ripiene Al Prosciutto e mozzarella, baby Italian eggplant filled with San Daniele prosciutto Di Parma and bufala mozzarella with fresh tomato puree and basil is fantastic. The fresh Carpaccio Di Tonno Con Arugula Plio e limone, carpaccio of tuna, chiffonade of arugula was drizzled with lemon oil. Polenta Salsiccia e Porcini, soft polenta with house made sausage and porcini was a party in our mouths. Fresh pastas are perfect to share or as entrée and offer Orecchiette Salsiccia e Broccoli Rapini, orecchiette with homemade sausage, broccoli table, extra virgin oil and the Lasagnette D’Angelo, Angelo’s special lasagna layers ragu of meat, homemade mozzarella and Reggiano. The Linguine Positano with shrimp sautéed with white wine, garlic, fresh tomato and arugula is delicious while the Pappardelle Con Porcini, with porcini mushrooms, fresh tomato, white wine and herbs burst with flavor. The fabulous Rigatoni Alla Norcina is made with homemade sausage, winter mushrooms, pomodoro San Marzano and a dollop of fresh ricotta and the creamy Risotto Con Porcini with porcini mushrooms and white truffle oil is simply perfect. Choosing from the grill and wood-burning oven is certainly a treat. Galletto Ruspante Al Forno Aromatico, juicy wood oven roasted free-range chicken with roasted garlic, white wine, cherry tomatoes and fresh herbs is served with broccoli rabe and Tuscan potatoes. The tender Bistecca Alla Fiorentina is a 12 oz. oak grilled, dry aged New York strip steak, marinated

in olive oil, rosemary and garlic and served with sweet Vidalia onion and wild mushrooms. The Costoletta Di Vitello Alla Griglia Con Funghetti Trifolati, marinated 16 oz. grilled veal chop with sautéed wild mushrooms in a fresh rosemary sauce, is amazing and the Gamberoni Al Vino Bianco e Olive Taggiasche, jumbo prawns sautéed in white wine, garlic, fresh tomato and imported Ligurian olives is just spectacular. the lighter side, the Pesce Del Giorno Arrosto o Alla Griglia, Chef Angelo specially selects fresh fish of the day, roasted or grilled. Irresistible sides, large enough to share offer a variety of selections including cannellini tiepidi all’olio d’oliva, traditional Tuscan white beans served warm with extra virgin olive oil and cherry tomatoes. Another side is the broccoli rabe in padella, sautéed broccoli rabe in garlic, oil and crushed red peppers as well as the verdura del giorno, grigliati alla Toscana, grilled vegetables of the season. Along with our cappuccino, we indulged in creamy Ricotta Cheesecake and luscious Ricotta Cannoli. The Apple Tart, served with cinnamon gelato and the Chocolate Delizia, served with vanilla gelato were decadent and delightful. Homemade Tiramisu is silky and luscious, just like the Frutti di Bosco e Zabaglione (homemade sabayon with fresh berries). Just like a fine wine, Casa D’Angelo gets better and better with every passing year and we thoroughly enjoyed our journey to Italy with Chef Angelo. Inspired by long standing culinary traditions of the Greek culture with a fresh modern twist, the menu is reminiscent of the undulating textures in the Mediterranean. Just as the vast oceanic beauty inspired ancient fishermen, Nisi inspires to capture the true essence of the sea as the menu honors the lush landscape and exterior, by bending the boundaries between nature and artifice As we settled in for our journey to the Greek Islands, we began with the Meze selections of appetizers including the mouthwatering enticer of Grilled Mediterranean Octopus served with gigante bean puree. The addictive lightly fried Zucchini Chips accompanied by tzatziki and Feta Sticks, feta cheese wrapped in phyllo dough, fried then drizzled with honey and sesame seeds were outstanding. The succulent Shrimp Saganaki of wild American shrimp, grated tomato sauce and

melted feta was delicious as was the refreshing Watermelon and Feta salad, served with balsamic glaze and micro arugula. Entrees with modern Greek touches graced our table as we enjoyed the Wild Icelandic Cod Filet, pan fried and served with organic quinoa tabbouleh and the quintessential, yet-polished, Moussaka layering ground lamb, béchamel sauce, potato, and eggplant. Nisi boasts an impressive selection of Daily Catches on display as we devoured a baked whole fish encased in a salt shell, and then they carefully remove the crust tableside. This baking method allows the salt to seal in moisture and create even more succulent flavors. Fresh Australian Lamb Chops are wood grilled and served with lemon roasted potatoes while the Marinated Amis Chicken Skewer packs on crimini mushrooms, sweet baby peppers, red onion and aromatic organic orzo. Simply yummy! Since no meal is complete without dessert, Nisi delivers an abundance of traditional Greek sweets with a modern spin. We indulged in the delicious Baklava with chopped almonds, pistachios and cinnamon sugar (must-have) in addition to fantastic Galaktoboureko, orange-vanilla semolina custard wrapped in phyllo dough, along with the Loukoumades, wonderful fried Greek donuts soaked in syrup and topped with chopped walnuts. he use of gift-wrapping was first documented in Ancient China, where paper was invented in the 2nd century. On the other hand wrapping food in bacon started as a French thing. You can probably find it being credited to the early 20th century by French Chef Escoffier. In fact, quail wrapped in bacon was one of the delicacies served on the opulent menu on the Titanic. By wrapping delicate flavored birds in bacon not only would keep them tender and juicy but would also add immense flavor. Additionally, in the early 60’s the exotic finger food, devils on horseback, was all the rage in holiday entertaining. They where decadent little morsels of dried dates, prunes or apricots stuffed with blue cheese, smoked almonds or chicken livers. Medjool dates are some of the best in the world. The date palm tree is known as the tree of life. Originally from Morocco, the Medjool Date was reserved for royal hosts and other dignitaries.

Fast-forward to the present, wrapping everything in bacon just simply makes it taste better: think burger, filet mignon, oysters or lobster. Today you can wrap your taste buds around chef created delights such as bacon wrapped diver scallops dusted with smoked paprika or honey sriracha Brussels sprouts roasted and belted with bacon or jalapeño poppers tied with bacon, and even avocado fries that are wrapped in bacon for a pleasurable surprise. Just imagine what you can do at home for this holiday season to impress your family and friends. Think about trying one of these combinations wrapped in bacon: rum soaked pineapple, maple roasted calabaza, goat cheese stuffed pear, dates and Gorgonzola, figs and Brie, or mojo fried yuca and even coconut shrimp. My gift idea for you is to simply adapt my technique in the following recipe for devils on horseback with your favorite combination of seasonal ingredients. Make your gifting delicious.

THE DATES: Using a paring knife cut the date in half-length wise to the pit. Remove the pit and open the date. Do not cut through.

Serves 12 • Preheat oven to 350 degrees

THE STUFFING: In a small bowl combine the chutney and cheese with a small fork, mashing it together lightly. Spoon a teaspoon of the filling into the center of each date and close the date.

12 large Medjool dates 1/4 cup mango chutney 1/4 cup Manchego cheese, grated 6 strips apple wood smoked bacon

THE BACON: Lay out the strips and cut each in half. Wrap the half strip of bacon tightly around the center of each date. Place the dates on a baking sheet, evenly spaced. Bake for 8-10 minutes until bacon is crispy. Remove from oven and place a bamboo toothpick through each. Serve on a small colorful plate.

hefs need to be more creative than ever in order to stay relevant. Labor is at an all-time lull and costs are higher than we ever would have imagined. Some would think that’s a sign for difficulty and frustration. For me, being forever the optimist, I think it’s a time to shift the focus to what made this business interesting to begin with. The team you surround yourself with AND food itself. As a leader, I recognize the importance of who I surround myself with, and the need for those people to make up for my own shortcomings. The opportunity for creativity has to weigh itself on the team. Like most business

EVER EXPANDING.” owners, chefs can become bogged down on the things that are most time consuming, such as PR and marketing efforts. With all of that, the creative process is easy to put on the backburner. I realized a long time ago that I needed to tap into the energy of my teams to help keep us fresh. I thank them often...and that’s probably not enough. Throughout the years, many people have passed through our backdoors. Many have gone on to great success and I applaud them. To the team I have now, I salute them. We have had some great times. We have worked harder than we should. A chef is nothing without his or her team. It may be mine or someone else at the helm, but it’s the team’s insight to the overall experience that keeps it all moving forward. Again, chefs are in demand, but a great team is forever sought. Here is a dish that exemplifies a team effort: 70

WILD MUSHROOM RISOTTO WITH EGG Serves 4-6

3 tbs evoo 3 tbs shallots chopped 1½ tsp garlic chopped 2½ tbs butter unsalted 1½ cups vialone nana rice ½ cup dry white wine 5 cups chicken stock (plus 3 cup in reserve) ¼ cup dry porcini mushrooms 1 ½ tsp fresh thyme leaves chopped ½ cup grated parmigiano reggiano cheese 2 egg yolks 4 cups mixed wild mushrooms as needed: crushed red pepper flakes, kosher salt, evoo, preserved black truffles, fresh truffles In a 2-qt saucepan heat chicken stock and steep with dried porcinis for 8-10 minutes, remove porcinis. In a 4-qt saucepan, heat 3 tbs olive oil and 1 tbs of butter over medium-heat, add shallots, garlic, crushed red pepper and a pinch kosher salt and cook for about 5 minutes. Add thyme, rice and cook, stirring, for 1 minute to toast lightly. Add the wine and cook till evaporated. Add 1 cup of the chicken stock and cook, stirring, until the liquid has been absorbed. Continue cooking (adding broth as necessary) until the risotto looks creamy but the rice is still al dente about 18 minutes. Turn off the heat. Fold in remaining 1½ tbls butter, cheese, truffles and egg. In a large sauté pan add olive oil, mushrooms and cook for 4-5 minutes then fold into the rice. Finish with shaved fresh truffles.
