Bar Carolina Sometimes, restaurants forget they’re in the hospitality game. Not so at Bar Carolina, a newish addition to Toorak Road. Run by the team behind Sarti and Il Bacaro, warmth is omnipresent as chatty staff explain the dishes. On the Caroline Street corner, cool young things and men who date them smoke cigarettes over spritzes. There are also premium wines by the glass and plenty of Italians by carafe or bottle. It’s dimly lit inside, but the energy shines. Start with flash-fried octopus, cuttlefish and school-prawn fritto on beetroot mayonnaise, or contemporary vitello tonnato that sees cubes of poached veal stacked beside sashimi tuna and decorated with branches of pickled mushroom. Don’t miss pasta made in house and perfectly pink lamb rump with eggplant and sweetbreads. Or order Josper-baked barramundi to see its salt crust cracked open, tableside.
