THE state government’s new Doreen Secondary College has not derailed plans for an independent prep to year 12 school in the area. The government in last week’s budget promised $11.5 million for the first stage of Doreen Secondary, which plans to begin with year 7 and 8 students in 2015. But the independent Blackwood College would open a year earlier, initially offering prep to year 9, said college director Jessie Burtt. She said Blackwood was looking

at several sites, but was confident it would open in 2014 because of the “pop-up” relocatable building design that reduced construction time. The college would begin enrolments soon, but 100 potential students had responded in the first 10 days when the college invited expressions of interest. Mrs Burtt said the college had appointed Chris Goy, the former assistant principal of Acacia College, which closed last year, and his wife Karen as the educational leaders. “The government school is planning to open years 7 and 8 in 2015; that’s not going to help the children

needing a secondary school next year,” she said. “Laurimar Primary School was built for 450 students and has 1000 kids on site. “We’re way under capacity for the educational needs of the area. In [the City of] Whittlesea we need three more primary schools and two secondary schools and demand is growing.” She said the college was a registered non-profit organisation, and had a board of directors who were discussing school registration with the Victorian Registration and Qualifications Authority. Mrs Burtt, an Acacia College parent

who started Blackwood after Acacia closed, said fees would be “modest” for the non-religious school. “We are negotiating with financial organisations [for the $30 million project] and as soon as we get the land secured, we can get the school up and going and meet the deadline.” she said. Yan Yean MLA Danielle Green said that while the government funded the Doreen school and gave $29 million to expand Epping’s Northern Hospital, there was little else for the northern suburbs in the state budget. “There’s nothing for roads or public transport in Whittlesea, for the third year in a row,” Ms Green said.

Mini series hits Thomastown Expect the unexpected at Thomastown Neighbourhood House, which is planning to host mini-festivals twice a month. Each festival will have a theme, and is a chance for locals to gather and celebrate the “talents and diversity” of Thomastown. The first event, Expect the Unexpected, is on June 1 at the Main Street centre from 11am to 2pm. Former Circus Oz performer Matt Wilson (pictured) is one of the stars of the show. A BUNDOORA resident who installed a huge satellite dish on his roof has been ordered to take it down after neighbours complained. The owner of the house on the corner of Tarata Court and Japonica Street installed a dish with a 2.4 metre diameter on a 5.2 metre pole without a planning permit, according to an officer’s report to Whittlesea council. The owner applied for a planning permit but was told it was unlikely because the dish was too big, was attached to a pole on the roof, and was visible from the street and could not be screened, the report said. The neighbour complained the dish did not meet council’s policies on satellite dishes. The report said painting the black dish a colour to match the house would not solve any problems. The council refused the permit application at its meeting last week, and gave the resident one month to take it down. Council policy states that a dish with a diameter less than 1.2 metres does not need a permit, but bigger dishes that are visible from the street need a permit.

WHITTLESEA mayor Rex Griffin has called the state budget a “kick in the guts” and claimed it has virtually ignored one of Australia’s fastest growing regions. “South Morang, Mernda and Doreen are for the second year running the fastest growing suburban areas in the nation,” Cr Griffin said. He said despite the funding of a secondary school in Doreen, more money was needed for primary schools in Mernda, Doreen and Epping North by 2016. “Provision of basic infrastructure should ... be a right shared by all members of our society,” he said. “This is another demonstration of a government that commits us to a high growth setting but does not follow through with basic infrastructure and service delivery. “What we have at the moment is infrastructure lag to the point that

our growth communities are teetering on the edge of unsustainable liveability and this state budget does little to address that. The continued lag has direct implications for social wellbeing and economic productivity.” Cr Griffin said Whittlesea had an annual influx of around 9300 people, almost equal to a town like Swan Hill moving to the area every year, and it was disappointing that the budget catered for regional and rural areas rather than growth urban fringe areas. “Our community is fed up with a lack of infrastructure and services that people in inner Melbourne take for granted. If the government is serious about planning for and supporting growth as they have stated, then they need to make a substantive and ongoing funding commitment to the City of Whittlesea now,” he said. Whittlesea needed more schools, the O’Herns Road, Epping interchange onto the Hume freeway, the Mernda rail extension, a new police station in Mernda and more, he said.

THE Northern Hospital will get a $34.4 million medical research, teaching and training facility to educate the next generation of doctors to care for the expanding northern population. It will open in 2015 with the latest technology and improve the overall wellbeing of the local community, according to federal Health Minister Tanya Plibersek. The minister turned the first sod for the construction of the Northern Health Teaching, Training and Research Precinct – a partnership between the University of Melbourne, La Trobe University, Northern Health and state and federal governments – last week. The complex will house teaching facilities for medical and specialist health university students, as well as simulation technology, research laboratories and a 200-seat lecture theatre and library for students and hospital staff.

Northern Health chief executive Janet Compton said Northern Health was growing along with the northern suburbs. “The population in Melbourne’s north, which includes the cities of Hume and Whittlesea, continues to rapidly increase, and our local population is expected to grow by 64 per

cent, or an additional 128,569 people, by 2031,” Ms Compton said. She said the Epping hospital was expanding from a community-based health service to a major university teaching service through the project. La Trobe University vice-chancellor professor John Dewar said medical and other health students, such as nurses, would become part of the northern community. “Our new students will be able to immerse themselves in the community where they are studying as their placements will be within medical institutions within the northern Melbourne region,” he said. He said the university’s strategy was “about making a difference to the communities we reside in, in particular to Melbourne’s north”. Completion of the Northern Health Teaching Training and Research Precinct is expected in late 2014 and it is expected to be fully functioning in early 2015. What do you think of the plans? Daddy bloggers kick goals A pair of footy-loving friends tackle fatherhood the write way. By Sue Hewitt

T

wo northern suburbs fathers have combined their love of footy and parenting to become daddy bloggers. Under the banner of tacklenappy.com, Travis Bull and David Goldstein, both 37, discuss the joys and sorrows of fatherhood. The idea was born over a few beers at the footy, when they realised that while there were many blogs written by mums for mums, there wasn’t much for dads. It took 18 months to get the site up and running, and they launched the blog on Brownlow Medal night in 2011. “We found there weren’t enough resources out there for guys about being a dad,” says Bull, a project manager at the City of Whittlesea. “We just talk about the daily frustrations and joys of being a dad.” Bull and his wife Amber are parents to Charlotte, 3, and nine-month-old Lukas. While many posts are lighthearted, Bull shared the couple’s loss of their stillborn son, Aidan, in 2008. “It was a horrific time and I’ve blogged about this a couple of

times and get very supportive responses,” he says. “It was a good outlet to encourage people to talk about it and for dads to know they are not alone. It is still painful but writing about it is cathartic.” The lighthearted posts include one about Bull being a “retro dad”, dreaming of wearing a smoking jacket while his wife does the chores and the children are seen but not heard. He is brought back to reality when one child yells out that someone has “done a poo”. “The best thing about being a dad is seeing your kids grow and develop and become their own little identities,” Bull says. “The hardest thing is getting a worklife balance; finding time to be at home.” The blog’s sporting themes include a logo with an AFL-style jersey background and a silhouette of a crawling baby, plus footy terminology such as “keep an eye on the ball”. Votes for the blog’s “dad of the year” follow the Brownlow formula. Bull writes under the nickname Chubba,

coined by a nephew who couldn’t say his name. Goldstein is Bucky, after a comedian’s joke about a Jewish cowboy called Bucky. Goldstein is a stay-at-home Bundoora father of three girls – Maia, 8, Keira, 4, and Matilda, 10 months, while his wife Alanna works. “I face all the challenges that Alanna faced at home; now she is working the tables have completely turned,” he says. “The biggest challenge is trying to find time to do the things you want to do. The meals have to be cooked, the dishes washed, the laundry done – the family comes first – before I can sit down to write. By 9.30pm, I am tired; I need another 10 hours in the day.” Goldstein usually starts writing about 10.30pm and can finish as late as 2am. The men have an internet radio program on Sundays at 9pm on Funky Kids Radio. They have a wide following, and have featured on Channel’s Ten’s The Project. I

Forces unit. “It really helps with decisionmaking, especially on the spot. Not that you always make the right decisions, but you learn not to dwell on it or beat yourself up about it.” Willis left the army in 2004, and about that time was introduced to an exercise program that would become his game-changer. CrossFit is Willis’ challenge of choice. Both a company and a style of exercise, it was founded by Greg and Lauren Glassman in the US in 2000. Combining strength and cardiovascular exercises in high-intensity sessions designed to improve an individual’s functional movement and work capacity, it is, quite simply, hardcore. “I’d spent nine years in the military as a Special Forces soldier,” says Willis. “Now I do a 20-minute workout and it absolutely annihilates me?! It pretty much handed my own arse to me on a platter.” Inspired, he became a qualified coach and opened his CrossFit affiliate in Sydney. (He came fourth in the 2009 CrossFit Games in California. Check it out on YouTube – it makes Tough Mudder look like a tea party.) About the same time, a friend who knew the casting agent for The Biggest Loser suggested he try out for a new role as the tough-guy trainer, who would be brought in as the ultimate punishment for hard-headed contestants. “The no-nonsense, no-excuses, in-your-face, one-dimensional, ‘not worried about your ailments or your other things that are going on’ guy,” he says. Thankfully, for both Willis and the viewers (although the contestants might be less enthusiastic), he’s now had a few seasons working in a considerably expanded role as one of the full-time trainers alongside Michelle Bridges and Shannan Ponton. But while his role has changed, his fundamental philosophy has not. “The whole ‘no-excuses’ thing is essentially about not putting blame on external

factors,” he says. “We can’t all be bullet-proof and we have to approach it from different angles and be smart about how we do things, but what it comes down to is saying, ‘I understand that this has happened or it’s part of your life, but you can focus your energies on some other area’.” Willis practises what he preaches. After reeling off a litany of injuries – “I’ve had both knees operated on, I’ve busted my back parachuting, I’ve had an ankle operation, I’ve had a lot of dislocations of the shoulder” – he swears he’s fitter and more mobile than when he was in the army. Plus, he has to fit in his own training around The Biggest Loser, its publicity demands, his training and bootcamp business, and spending time with his wife and three children, Brianna, 14, Ella, 5, and Jack, who turns two in July. When the show is in production, he gets up at 4am, trains, then heads off for show commitments. “The reason I train in the mornings is that I have time in the afternoon for my kids,” he says. “To take them to their activities, go for a swim at the pool, all that kind of stuff. It’s hard. But I think it comes down to the quality of time, not the totality.” As for his persona away from the camera, Willis insists he’s not nearly as tough as his TV image. “I am a big softie,” he says, laughing. “The methodology and mentality and application towards life and training [you see on the show] remain the same. It’s quite rigid but I truly believe in balance, and I’m a very easy guy to get along with. “I really enjoy all the facets to life. I like training hard, working hard, playing hard.” I The Biggest Loser: The Next Generation airs Sunday to Tuesday at 7.30pm on Ten. ang on a minute. Isn’t this the guy who, as Commando on Channel Ten’s The Biggest Loser, scares overweight people into performing seemingly impossible physical tasks? Steve Willis, the 36-year-old with the camo pants, the banging bod and the hard-man persona is, these days, big on moderation – although for some of us his idea of balance sounds positively abstemious. “I’ll got out to dinner with friends and enjoy a beer or a couple of glasses of wine and share dessert,” he says. “I don’t mind a black coffee, maybe a couple of pieces of really dark chocolate. But I don’t overindulge in those things – it’s balanced and it’s a treat. Something I allow myself to have from time to time.” His dedication to moderation shows. You can’t help but be perplexed or overawed at how someone can look so good but, as has been driven home throughout The Biggest Loser, you don’t get that way by sitting on the couch and jamming your cakehole. It should be no surprise that a guy nicknamed Commando has a military background. Willis grew up in Brisbane, but his family moved to Hervey Bay just before he started year 11. “It was hard,” he says, “being taken out of that environment, away from my friends. I may have done some things differently if I’d remained where I’d grown up. But I was like, ‘You know, I don’t really like where I am, I don’t know anybody’. The next best thing was to join the army.” He was just 19 at the time and, after a year in the infantry, joined the Counter Terrorism Team. “You learn a lot about yourself and a lot about life and living on the edge,” he says of his time in the Special

up playing together and we did really well, much better than last year. We put some good pressure on other teams.” It was the fourth time Scopelliti made the Victorian team, but she didn’t find out about her Australian selection until a call from a friend. “When I heard I was pretty excited. It means a lot, I’ve been training really hard for it. It’s always been one of my goals to play for Australia,” she says. So committed was she to make it, Scopelliti did extra training with her school, club and state. “I trained by myself, always doing something extra to push myself,” she says. “I was doing pitching training and fitness work, and a bit of extra batting practise as well.” Her selection on to the Australian team comes on the back of some impressive performances. Her school team thoroughly dominated its opposition this past season and in March Ivanhoe beat Wesley College in the grand final. “We’ve done really well,” Scopelliti says. “We’ve been winning by a lot. The girls came together well. “I haven’t been pitching that much because I pitch at the start of the match and if we get more than seven runs I only end up pitching the first innings.”I

t’s been nearly eight years since the International Olympic Committee voted to remove baseball from Olympics but Sarah Scopelliti is still hoping she will be an Olympian one day. The Beijing Games in 2008 was the last time softball formed part of the Olympics. It was dumped for London last year, and for Rio de Janeiro in 2016, but there is a bid to get it back into the 2020 Games. The exclusion from the Olympics meant government funding was cut, but also meant much disappointment for athletes hoping to represent their country in the world’s biggest sporting competition. Scopelliti, a Thomastown resident, was recently selected as part of Australia’s under-17 girls’ softball team, and has long held the dream of making it to the Olympics. “We are hoping that softball will get back into the Olympics,” she says. “We think it should in a few years. I’d love to play one day.” Scopelliti has been busy lately. She has been balancing year 12 studies with softball, playing for Ivanhoe Grammar, Northern District and Victoria. Scopelliti and her Victorian team mates finished fifth in the national tournament in January. “It’s really fun playing with Victoria,” says the 16-year-old. “Us girls have grown

Triple treat A blend of three independent grapes makes a delightful drop. By Ben Thomas

A

s stand-alone varieties, grenache, shiraz and mourvedre make good, often great wines. Blend the three together and each grape draws on the others’ strengths to make a truly delightful wine, known as GSM. Grenache and mourvedre in particular may not be as well known as shiraz by many wine drinkers, but a mention of the acronym GSM gets nearly everyone I know nodding in acknowledgement. Shiraz from Hermitage, rose made with mourvedre from Bandol in the south of France and grenache from Priorat in Spain are some of the world’s great wines. In Australia, you’ll find these three grape varieties growing on vines more than 100 years old in McLaren Vale and the Barossa. The GSM blend has its roots in France’s southern Rhone Valley in and around the iconic Chateauneuf-du-Pape, which has produced the world’s most sought-after examples for millennia. Interestingly, grenache was Australia’s most widely-planted wine grape until the 1950s and

was regularly blended with its GSM cohorts before being fortified and labelled as port. According to Rosemount Estate winemaker Matt Koch, grenache should always play the leading role in a GSM. “We’re looking for round, full flavour, with a juiciness and a slipperiness from the low tannin and full flavour of grenache. That’s the main character of the show.” Grenache grapes are naturally larger than many other red grape varieties. There’s therefore a high ratio of juice to skins, meaning the wine is less tannic (tannins are derived from the grape skins and pips) than many reds. “It has a tendency to display floral characters and a juiciness that for me is different to shiraz and cabernet,” says Koch. “We tend to harvest it a bit riper [later in the harvest], looking for the juicy characters. Picked early, you get spice and elegance and it’s the balance between those two that you want to highlight – for GSM we’re looking for the spice, roundness and fullness that grenache brings to the blend.”

Depending on what the vintage delivers in terms of flavour in the grenache, the percentage of how much shiraz and mourvedre are included in the GSM blend is decided after the wines have fermented and spent time maturing. “Shiraz should always add weight and structure to the wine,” says Koch, who adds that not all styles of shiraz are suitable for a GSM blend. “Shiraz is a beast, it can produce different flavours depending on the soils and where it is grown. Shiraz from sandy soils, which tends to be more floral, is a good match for grenache. You’re trying to capture flavours that complement each other. A dense shiraz would kill grenache’s floral notes. “Grenache is the upfront character and you want the shiraz to come in to the mid and back palate to give it some evenness. “Mourvedre adds tannin and colour to the blend, plus a savouriness. We add between five to eight percent to the final blend – a little goes a long way.” I

Full of complex aromas of meaty, smoky, violets, berry, tar, graphite and a perfume that carries onto the palate, it’s silky and lithe, with refreshing acid, powdery tannins and an x-factor throughout. T

he most interesting thing about Hyundai’s Santa Fe is the button adjusting the steering. You can choose between normal, comfort or sport, although what a sport setting is doing on such an unsporty vehicle is beyond me. According to the folk at Hyundai the button adjusts the amount of effort and feedback. Dial in comfort and you get light steering efforts, good for parking and crawling along in traffic. Normal is just that, and sport makes it heavier, increasing feel for the open road. I didn’t notice much difference between them, but even without adjustable steering this is an easy thing to drive and park, although it feels like it’s a bit bigger than it actually is. There’s a good back-up camera and rear parking sensors, and pretty good visibility to the rear as well. The diesel is economical as well as being quite enthusiastic, as long as the turbocharger is bubbling, and that’s most of the time. And even when it’s not, it’s not far away. This is because the transmission, unlike many others lately, is not rabidly calibrated for economy. So this is a very comfortable and relaxed

way to travel. You’re high and in charge. The ride quality is excellent. And for a big thing with a high centre of gravity the Santa Fe doesn’t handle badly with less body roll than a lot of sports utility vehicles and a good, solid feel through fast sweepers. It’s pretty well specified too, with Bluetooth and seven airbags in all models. The Elite gets a proximity key, navigation, climate control and premium audio package, which is mediocre. You get seven seats and when the rearmost row is not in use it folds flat into the cargo floor, giving a good, if high, load area. This reduces markedly when the seats are in use. There’s a full size spare under the rear body. Against obvious competitors like Mitsubishi’s Outlander the Santa Fe is expensive, but it is better finished and has a rather more pleasant interior, with good surfaces and plenty of storage. There is also good leg room and excellent head room throughout, although using the rearmost row of seats cuts into this significantly. I came away liking this one. I

Budding chefs on parade

A

new generation of master chefs is whipping up a pasta dish in the food technology class at Parade College before cleaning the workstations in a manner that would bring joy to any parent’s heart. Thanks to Parade College’s new commercial training kitchen, these boys are among up to 750 extra students a week from Parade and surrounding schools who can now study food and hospitality courses at secondary level. The kitchen, built to full commercial standards, represents an investment of nearly $1 million and opened in time for the 2013 academic year. Part of Parade College’s Yarangabee Hospitality Centre, it doubles the school’s capacity to offer food and hospitality courses. The centre previously had one training kitchen, as well as function space, but the kitchen was a teaching facility only. Parade College was founded by the Christian Brothers in 1871 and now has nearly 1900 students enrolled in years 7 to 12 at its Bundoora and Preston campuses. The school is able to claim both a strong academic record and an increased focus on vocational training since the opening of its Edmund Rice Trade Training Centre in 2010, for boys in years 10 to 12 who wish to pursue a trade career. Students from Parade and other schools in the Northern Melbourne VET cluster use the trade training centre to study for certificates in

building and construction including carpentry, brick-laying, cabinet-making, plumbing and integrated technology. The hospitality centre offers a certificate course in hospitality (kitchen operations) as well as VCE food and technology, and the school’s theatre offers a music industry skills (technical production) certificate course. Parade’s VCAL students are all snapped up for apprenticeships, and the school has a total of around 80 students undertaking VCAL courses in years 11 and 12. There’s also the opportunity for VCE students to include a VET subject in their course, combining a technical skill with academic study. Parade College principal Dr Denis Moore says that while the school has had a training kitchen for 15 years, it had wanted to meet increasing demand for food technology and hospitality subjects, and to make it part of the curriculum for years 7 to 12. “Boys like to have choice in their education and there’s increasing demand for food and hospitality courses. Boys love hands-on activities, and inevitably with food there’s practical work and they get to enjoy the results. “We have students here who have great ambitions in the hospitality industry and a few have relatives running establishments in Lygon Street and elsewhere, and these students are often keen to follow in the family’s footsteps. “But there’s also a growing awareness in our society that boys and men need to be able to

look after themselves and their families, and being able to cook healthy meals is a part of that,” Moore says. “It is important to us that our curriculum meets the needs of our community. Our students achieve great success in their various career pathways but it’s just as important for our students to become well-rounded as individuals.’’ The kitchen will also play a star role in Parade’s community action program, where students assist in aged care facilities and other community initiatives. Every Christmas the students invite residents from the aged care facilities they visit to a party at Parade, and they will now be able to cook and serve a restaurant-quality meal. Project architect Ezio Costa, of architects Clarke Hopkins Clarke, says the challenge was to create an exciting learning space that met all criteria for a commercial kitchen and could be integrated into the existing Yarangabee Hospitality Centre, which included the original training kitchen and a function space with amenities. The newly extended hospitality centre includes an outdoor courtyard between the two kitchens, with the opportunity to create a herb garden in pots and planters. The new building and its fit-out were also designed for sustainability with energy and water-efficient design and fittings. The kitchen, a gleaming May 14, 2013

domain of stainless steel, has an abundance of natural light streaming through large windows that look out to the school gardens. Full-height tiling on the walls includes brightly coloured panels of the school colours – purple and green – with an orange accent. A large screen is mounted from the ceiling at the front of the kitchen to give all students an exceptional view of the teacher’s demonstration via a workstation camera. There are 13 workstations for pairs of students to prepare dishes, and serve and clean up using the preparation benches, commercial stoves with gas cooktops, overhead canopies and a full complement of culinary tools including KitchenAid appliances. Specialist equipment such as pasta cookers, deep fryers, a combi-oven and a salamander are part of the kitchen’s inventory, and an electronic dishwasher has been installed to service the dining and function space when required. There’s also a generous larder, coolroom and large freezers from which the students source their ingredients. Clarke Hopkins Clarke has extensive experience in the design of training kitchens for hospitality courses, including several trade training centres opening across Victoria as well as for a number of schools including Penola Catholic College, Doncaster Secondary College and John Paul College.
