Cook Up a Fall Feast! It’s important to include fruits and vegetables in your diet year-round to stay healthy and to ward off diseases, but serving fresh vegetables can be a bit challenging during the winter months. If you enjoy eating seasonally, there are still a good variety of delicious, flavorful vegetables available. Here are some of the superstar fruits and vegetables of the fall and winter months. Sweet Potatoes: They have more nutrients than regular white potatoes and can replace white potatoes in some recipes. Sweet potatoes are loaded with beta-carotene (which the body makes into vitamin A), vitamin C, potassium, fiber, iron and vitamin B-6. Try them mashed, baked or as a dessert. Apples: A traditional fall favorite, apples are easy to find in the supermarket, or you can pick your own at a nearby orchard. They’re a quick, easy snack that can be paired with peanut butter or cheese for protein. Apples contain antioxidants, which may help protect against certain cancers and reduce levels of LDL, or bad cholesterol. Apples have vitamin C, vitamin K and fiber. Remember the old saying: “An apple a day keeps the doctor away.” Broccoli: This is one vegetable that can be eaten raw or cooked, hot or cold, by itself or with other foods. Broccoli can help prevent cancer and heart disease, while boosting the immune system. Nutrients in broccoli include vitamin C, vitamin A, vitamin B-6, iron, calcium, magnesium and vitamin E. Pumpkin: It’s is a great source of

potassium and beta carotene, a powerful antioxidant that is good for the eyes. Canned or prepared fresh, pumpkin can be made into a variety of soups, baked goods and desserts. Kiwi: This fruit can be eaten alone (after peeling) or can be added to many different dishes, including soups, salads and desserts. Kiwi contains antioxidants, which can help protect the eyes, heart and colon, plus vitamin C, fiber, potassium, magnesium and vitamin E. Avocado: While avocados contain healthy monounsaturated fat, even healthy fat is a dense source of energy, so it’s important to eat them in moderation. Avocados also contain vitamin E, fiber, potassium, folate and vitamin C. They can be used on sandwiches or salads, or made into guacamole. Spinach: Dark-green veggies contain lots of nutrients that a healthy body

needs. Spinach is packed with vitamin A, vitamin K, iron, folate, magnesium, vitamin C, calcium, potassium, fiber and vitamin E. Spinach also has antioxidants and anti-cancer agents. Frozen or fresh spinach can be added to just about any meal. Try using it on pizza or lasagna, or use it instead of lettuce in a salad. Pears: This fruit is a good source of fiber, antioxidants and vitamin C. Research suggests that regularly eating pears and other fruits may guard against macular degeneration. Pears seldom cause allergies and usually are safe for infants and small children. Green Beans: They are high in vitamin K, which protects red blood cells and helps reduce the severity of asthma, osteoarthritis and rheumatoid arthritis. They also contain vitamin C, potassium, folate, iron and magne-

sium. Green beans can be served as a side dish or used in salads, soups or casseroles. This recipe for Sweet Potato, Apple, Broccoli and Green Bean Bake uses these superstar fall vegetables in an interesting and delicious new way!

AUTUMN’S BOUNTY BAKE 1 large sweet potato, cut into 1/4 inch small cubes (1¼ cups) 4 large Granny Smith apples, cut into 1/4 inch small cubes 3- 4 cups broccoli florets 2 cups green beans, trimmed 1 small red onion, chopped 2 cloves garlic, minced 1/4 cup raisins or cranberries 3 tablespoons chopped walnuts, pine nuts, pecans or nuts of choice, optional 1/3 cup olive oil 2 tablespoons dried Italian or poultry seasoning 1 teaspoon salt 1 teaspoon ground black pepper 1/4 teaspoon sugar 1. Heat oven to 375 F. Line a large, rimmed baking sheet with parchment paper or foil. 2. On the pan, combine the sweet potato, apples, broccoli, green beans, onion, garlic, raisins or cranberries, and walnuts. Drizzle with the oil, dried seasoning, salt, pepper and sugar; toss to coat. Spread the ingredients into one even layer on the pan. Cover with foil and bake for 20 minutes. 3. Remove pan from the oven, and remove the foil. Using a spatula, turn the ingredients over to brown on top, and place them, uncovered, back into the oven. Jackie H., Owner I don’t feel like I had enough time before the snow came. I usually have all the patio furniture put away and my annual flowers pulled but this year I didn’t get to it before our first snow. It didn’t help that I was having back pain so some things just didn’t get done. I always pull off my screens inside my house for the winter too. Does anyone else do that? I hate screens and wish there was such a thing as disappearing screens. I know they make some that are less visible but they are still there. I like to look through the windows without obstruction all winter long! Also I feel like it helps with air circulation in the cold winter months even if it’s only in my mind. My dog is not impressed that the snow has returned again and makes a quick run outside to do his business and wants to be let back in right away again. Can’t say I blame him. Whites of Eyes Are Turning Gray DEAR DR. ROACH: Whatâ&#x20AC;&#x2122;s the best way to obtain and maintain healthy, white sclera? Mine appears to be a light, off-white gray. â&#x20AC;&#x201D; M.T. ANSWER: Sclerae â&#x20AC;&#x201D; the whites of the eyes â&#x20AC;&#x201D; tend to thin with age and reveal the darker-gray choroid underneath. This is benign and common, but I donâ&#x20AC;&#x2122;t know of any way to prevent or reduce it. Scleral color changes can happen with rare diseases like osteogenesis imperfecta, and some collagen diseases. The sclera also can change color as a result of scleritis (inflammation of the sclera), and this often happens in relation to Wegenerâ&#x20AC;&#x2122;s disease or rheumatoid arthritis. The bottom line, though, is: If you are having no symptoms, itâ&#x20AC;&#x2122;s overwhelmingly likely that these changes are the benign form. *** DEAR DR. ROACH: I have been diagnosed with positional vertigo. My doctor has me doing Cawthorne head exercises. Have you heard of these? Do they work? â&#x20AC;&#x201D; M.M.S. ANSWER: Vertigo is an abnormal sense of motion while still. Many people describe it as a â&#x20AC;&#x153;spinningâ&#x20AC;? sensation, but others feel it differently. The most common cause probably is benign paroxysmal positional vertigo, and rehabilitation exercises, such as the Cawthorne-Cooksey exercises, are very effective. Although medication is frequently prescribed, I recommend strongly against long-term use of medication, which can slow down or stop healing.

Although you can do the exercises on your own, I recommend learning how to do them properly and safely with an occupational or physical therapist. ROACH: How long do shin splints last? Is there anything besides ice that will make them go away faster? My left shin started hurting a little more than three weeks ago. I ran on it once or twice, then I stopped, but it still hurts. Is this normal? When do you think I can run on it? I did a longer run on a flat path, and normally I do it with hills, so I thought maybe that was the problem, but three weeks seems like too long. â&#x20AC;&#x201D; H.O. ANSWER: Pain in the shin bone (tibia) is common in runners, but the hard part is distinguishing between â&#x20AC;&#x153;shin splints,â&#x20AC;? properly called â&#x20AC;&#x153;medial tibial stress syndrome,â&#x20AC;? and a stress fracture of the tibia. A stress fracture usually has a discrete area of tenderness, but MTSS has more diffuse tenderness. An X-ray may be needed to be sure it isnâ&#x20AC;&#x2122;t a stress fracture, since the treatment is very different. A runner with a stress fracture needs to avoid impact activities like running, whereas MTSS usually gets better with just lower running mileage. In your case, the degree of pain is higher than I would expect after three weeks. Iâ&#x20AC;&#x2122;d recommend an X-ray. Rambunctious Puppy Is Out of Control DEAR PAW’S CORNER: I recently adopted a whippy little mutt who has a ton of energy. “Curtis” will zoom around the house at light speed, sometimes running into furniture and knocking things over. He will not listen to me at all. How can I get him to obey and to calm down? — Exhausted “Puppy Mom” in Denver DEAR PUPPY MOM: It sounds like Curtis needs more exercise time, preferably outdoors with plenty of space to zoom around. If you have a backyard with a fence, that’s a great place to let him run — supervised, of course. If you don’t have a yard, scout out a fenced-in area where you can take him regularly — but not a dog park, not yet. Curtis first needs to learn to come when you call. He needs to learn how to sit and stay. These three basic commands are the foundation of a dog’s training. Once you’ve let him run in an open space for several minutes and he’s spent that initial burst of energy, call Curtis to you. Use a firm, confident voice. Don’t plead. Don’t get angry. Don’t change your tone of voice. He may not respond right away; just call again. When he does come, give him praise (and a little treat). Do this every day until he responds each time you call. In fact, he may eventually spend less time romping around and come to hang out with you, the nice lady with the treats. Once he obeys this first command, begin teaching him “sit” and “stay.” There are plenty of websites with instructions on all three commands — some off leash, some on — such as Nylabone’s training tips. Creamy scrambled eggs, enhanced with mascarpone cheese, are topped with sauteed peppers, onions and sopressata in this tantalizing Italianinspired sandwich. 1 tablespoon olive oil 1 large onion 1 medium yellow bell pepper 1 medium red bell pepper 2 ounces sliced sopressata, Genoa salami or prosciutto 1/4 cup basil 10 large eggs 1/4 cup mascarpone cheese or whipped cream cheese 1/2 teaspoon salt and freshly ground black pepper 2 tablespoons unsalted butter 1 loaf ciabatta bread 4 slice fontina or provolone cheese 1. Heat oil in a large skillet over medium heat and cook onions and peppers 10 minutes, or until tender. Add sopressata and cook 1 minute longer. Remove from heat; stir in basil. Keep warm. 2. In large bowl, whisk eggs, mascarpone cheese, salt and pepper until yolks and whites are completely blended. Melt butter in a large nonstick skillet over medium heat. When butter begins to foam, add egg mixture. Reduce heat to medium. Push eggs gently with heat-resistant rubber spatula in a figure-8 motion as they begin to set and form soft curds; cook until just set but still creamy and moist, about 7 minutes. 3. Transfer eggs to bottoms of bread; top with a slice of cheese. Spoon the pepper mixture over cheese; top with remaining bread. Serve immediately. Serves 4.
