Wildlife - The Lilac Breasted Roller The lilac breasted roller is a member of the roller family of birds and is the national bird of both Kenya and Botswana. It is absolutely beautiful and like no other bird. They are very easy to spot as their vibrant colours make it impossible to camouflage in to their environment. They have a thick, large, black bill with a slight hook at the tip and are approximately 15 inches in length, with a wingspan that measures around 20 inches. They are blessed with a wonderfully coloured body; often having a green head, lilac throat and breast and a blue belly, with even brighter blue wing feathers. There doesn’t appear to be any colour difference between the 2 sexes. Genders are similar with a white or creamy buff face with a dark eye line and prominent bristles at the base of the bill. They have a creamy coloured chin with dark tan coloured cheeks. The throat and upper breast are purple. The throat and upper breast also show thin white vertical streaks. The upper wings and back are tan, but the scapulars and primary feathers are a rich, royal blue. The underparts are bright turquoise. The tail is blue with black outer streamers. In flight, the wings show as light blue with the wing pit contrasting strongly with dark blue primary and secondary feathers. To top this colourful display off, these birds have green / yellow coloured legs and feet. Juvenile lilac breasted rollers are dull compared to their coloured adults, with shades of brown and tan. However, they do develop adult colours quickly.

Their favoured habitats include open woodland and grassland, with widely scattered trees and shrubs which serve as good hunting perches. They are fairly widespread amongst most of Southern Africa, and extend as far north as Ethiopia. Their diet largely consists of insects, lizards, snails, rodents and small birds. Lilac breasted rollers are either found to live a solitary life or be found in pairs. However, during the winter months, they may stay in small family groups. When mating, they are monogamous and are believed to mate for life. Males put on quite a courtship display for the females, including flight dives with rolling or rocking, as well as loops and twists. These are cavity nesting birds, meaning that they build nests, lay eggs and raise their young inside sheltered chambers or cavities. Typically, they will take old kingfisher or woodpecker holes but they have also been known to nest in empty termite mounds. Both sexes will aggressively defend their nesting territory, even chasing off much larger predators. Their eggs are surprisingly plain in colour, with an average of between 2-4 eggs being laid in each brood. Only one brood is laid per year. Both parents will share incubation duties for around 22 days. Once hatched, the young are then cared for for another 20 days. This is until they have fledged the nest, but they then rely on parental care for another month. A fascinating trait of these birds is that are good at adapting to natural disasters. Recipe - Courgette Kuku Serves 4

A Persian version of a set omelette, similar to a frittata, kuku uses a mixed spice blend called advieh, which can vary a lot, so allow yourself free rein. A traditional kuku is mostly made up of chopped fresh herbs. We’ve given a rough amount, but add as many as you can cram in! All egg dishes such as flans, frittata and tortillas are best served just warm or at room temperature. Serve with a simple green salad. • 3 tbsp sunflower or light olive oil • 1 red or white onion, finely chopped • 500g courgettes, cut into 5mm slices • 2 garlic cloves, finely chopped, grated or crushed • 6 large eggs, lightly beaten

• 100ml milk • handful of chives, chopped • handful of mint, chopped • handful of dill, chopped • large handful of flat-leaf parsley, chopped • salt and pepper

For the advieh spice blend • ¼ tsp each of ground turmeric, nutmeg, ground ginger

• ½ tsp each ground cumin and ground coriander

Mix all the spices for the advieh blend together in a small bowl. Heat 2 tbs of oil in a large heavy-bottomed frying pan. Add the onion and fry on a low heat for 10 minutes to soften, stirring now and then. Heat the grill to medium. Remove the onion to a plate and add the remaining tablespoon of oil to the pan. Turn the heat up, add the courgettes and fry (in batches if need be) until they have some colour, about 2–3 minutes per side. Add the garlic, advieh spice mix and onion. Fry for a further 2 minutes, stirring, then season with salt and pepper. Whisk the eggs with the milk in a large bowl, stir in the herbs and pour over the top of the courgettes. Cook very gently for a few minutes until just set on the bottom. Finish under the grill until just set all the way through (test by gently tipping it sideways, no runny egg should appear). Wait for at least 5 minutes before cutting into wedges to serve. Variations • Add blanched and chopped spinach or chard leaves instead of, or as well as, the courgette • Instead of making the advieh mix, use 1 tablespoon of curry powder.
