I ask Mark what he thinks we can do to help the bees, since their numbers are declining rather alarmingly. He recommends planting wildflower varieties in our gardens, as hybrid plants are often sterile. In addition to his honey, which we later find has a beautifully light and delicate flavour, Mark also makes lip balm. Made simply with Calendula flowers, rapeseed oil, coconut oil and of course, beeswax, it’s such a natural product you could eat it. In fact, Mark tells us there was once a slight misunderstanding with someone spreading it on their toast... But though it won’t hurt you it’s not exactly flavoursome and it’s best to use as intended and leave the toast for the actual honey, wish surely has to be one of nature’s most delectable ingredients. You can buy Mark’s honey here. Or find it in stock at the Scottish Deli, Dunkeld.
