eing a mother is not only an honor and privilege, but a blessing bestowed on women. It’s not just simply a result of giving birth, or receiving a child. It’s a journey of spirit and time, transcending their own limitations and empowering their offspring to do, and be, more than they could ever envision. It is a journey into the heart and soul of what it means to be woman, and to be fully present for the benefit of another human being that has unconditional love and trust in you. The word “mother” is heavily defined by emotion, love, trust, protection, influence, and truth. It is, basically, an impossible task to be a mother …… but somehow every mom pulls it off with grace and style. Moms are expected to be strong yet gentle, corrective yet conciliatory, accepting yet uncritical, and self-sacrificed yet self-fulfilled. Motherhood is a fraternity of loving, nurturing, and sincerewomen. Motherhood is a beautiful ride, sometimes a wild ride, and the most incredible journey a woman can ever take. It changes the way a woman thinks about herself, her family, her friends, and the world as a whole. It changes the way she acts and reacts. A woman becomes more beautiful after child birth. She glows with a brighter love, not just for her child, but for everyone. The Our Town News staff would like to wish every MOM a sincere “Happy Mother’s Day”. First, I want to thank the students in the Marjory Stoneman Douglas High School television department for the incredible “Welcome Video” they produced for the City. People throughout the country are raving about it. The video has been a big hit and was very well done!

Our new trash hauler, Waste Pro, is offering single family homes and businesses rewards for recycling. Simply log on to WasteProRewards.com, sign up and take advantage of local discounts. This program is free and will be expanded to multi-family homes later in the summer. During the past 12 months, there has been 23 pedestrian related accidents on our City’s streets. For your safety, please cross only at clearly marked crosswalks and
never cross against the light. As a driver, we never know what we will encounter on the road. Even the most experienced drivers can benefit from brushing up on their driving skills. AARP is offering a driver safety class to drivers of all ages on Saturday, May 17 from 9 a.m. to 3 p.m. at the Coral Springs Public Safety Building. The class will review the current rules of the road, defensive driving techniques, and how to operate a vehicle more safely. Participants will learn how to manage and accommodate common age-related changes in vision, hearing and reaction time. Course costs $15 for AARP members or $20 for nonmembers. Participants who successfully complete the course will be provided with a certificate for their auto insurance agency. Participants must register in advance by calling 954-531-0343. While the City of Coral Springs no longer participates in Broward County’s Household Hazardous Waste program, residents have several options for disposing of household hazardous waste. Coral Springs residents can drop off paint, electronics, and fluorescent lights (only) on the first Saturday of every month at the Waste Transfer Station at the end of Wiles Road at NW 126
Avenue. Two forms of I.D. showing a Coral Springs address are required (driver license, plus bill, registration, etc.). In addition, Coral Springs, Coconut Creek, Tamarac, Fort Lauderdale and Pompano Beach have established a cooperative agreement that will allow City residents several opportunities to dispose the full range of materials at special one-day events throughout the year. The next one is set for May 3 at 6011 Nob Hill Road in Tamarac. Remember, residents are not allowed to drop off items at Broward County’s Hazardous Waste Disposal. If you have any questions, please call Public Works at 954-3441165. Celebrate that special mom in your life at CommuniTea on Saturday, May 10. The fun starts at 2 p.m. at the Marriott at Heron Bay, located at 11775 Heron Bay Blvd. This annual tea party will feature entertainment, an array of international teas and Tea Trivia with a multi-cultural flair. ebruary and March have been extremely productive months at the Coral Springs Chamber of Commerce. We had an extremely successful first time event partnering with our five local high schools for the first “Groundhog Day Job Shadowing”. Over 45 students were able to visit approximately 15 Chamber businesses, spend time with them and learn what they do in their job. It was quite a success! At the Chamber, we had three students shadow us and one of them now wants to go to school to be an event planner and work at a Chamber!! It was such a rewarding experience and

Each principal, as well as the DECA or BPA teacher and a student from the five area high schools have been invited to attend the Chamber’s May Wake Up Breakfast on Tuesday, May 20th to coincide with teacher recognition month. At the breakfast, the Coral Springs Chamber Leadership Class of 2014 and the Ambassador Committee are going to present a check to each of the five high schools. The funds will be utilized to assist the students and their families to cover some of the traveling costs involved to participate in competitions throughout the state and then nationally.
The Chamber welcomes new member Ruby Discount Liquors with a ribbon cutting. The accomplishments of these students are truly amazing and each school will be given five minutes to discuss their state projects which all have significant impact on our community. Also, quite remarkable is the fact that so many business owners in Coral Springs are participating in these programs and helping to develop the “leaders of tomorrow”. The Chamber is working diligently to get the word out – the partnership that has developed between the high schools and the Chamber is truly making a difference! The Chamber’s Government Affairs Committee has been reviewing initiatives regarding a business recycling program for Coral Springs. One of our Chamber members has volunteered his business for recycling testing. We are going to be holding some focus groups in partnership with the City to get various viewpoints from business owners in our City. Dates will be announced in the next few months. ‘Our Town News’ Local Hero
hen I read about your paper’s Local Hero Recognition, I immediately thought about my wife. Her endless heartfelt caring, her enthusiasm, and her genuine love for children have been an inspiration to me. Her name is Elaine Heyler, and she is a Special Education teacher at Coral Springs Middle School. She teaches 6th, 7th and 8th grade varying disabilities, which is a chore in itself! While it is very hard to do, it is a labor of love for her. She absolutely exemplifies all the love that comes to mind when we think of the word, ‘teacher’. There are certainly many reasons why Mrs. Heyler is a hero, but above all, she honestly “makes a difference” in the lives of children that she touches every day, both in and out of the classroom. She lives to teach while others in the profession mainly teach to live. Mrs. Heyler never stops planning, thinking, or acting on those plans to enlighten her students to achieve their higher test scores, improve their character traits and above all, garner self-respect and respect of others. Mrs. Heyler worked with the Mayor of Coral Springs and formed an environmental partnership to create a magnificent butterfly garden outside her classroom. Her students learned to care for it and gained a sense of respect for nature and the protection of nature. Mrs. Heyler reached out to the Kiwanis Club of Coral Springs to sponsor her as an advisor in “The Builders Club.” She made history by unselfishly advising this club and complet-
ing many community projects! One project included running a drive during the holidays to send CDs and DVDs to our soldiers in Iraq and Afghanistan, which was very successful. She is always thinking outside the box for new ways to teach her students how to give back to others. This was accomplished through this club. Mrs. Heyler’s students have her cell phone number, allowing both her students and their parents to call if needed. Her student’s value this, and it is never abused! They call her to ask about homework, and in the summer, just to say hello, knowing they can talk to her about anything. Just today as we were shopping, a former student called her from another state! He was visiting his grandmother, and was making a quilt for her based on his skills learned in her class! At present, Mrs. Heyler is making a classroom quilt and teaching her students the life

skill of hand sewing. This student had to share this with her, because she made a difference in his life on many occasions. I may be somewhat biased as this is my wife, but I stood outside the box, not as a husband, but a member of our community. Coral Springs Middle has a diamond for a teacher. One final note; Mrs. Heyler battled cancer 16 years ago. As is her fighting spirit and a loving “can do” attitude, she beat this disease and flourished, much to our joy, and the joy of EVERY student she has touched since then! Through God’s love, she is entering her 38th year of teaching. This is an accomplishment that needs celebration! If you were to ask Mrs. Heyler why she hasn’t retired, she would say that there are many children yet to nurture, love and educate, and that her job is not over yet! Mrs. Heyler is a hero, a hero with a halo and wings. She is a hero to all her children, past and present, and loved and respected by many, and of course, my hero!

ur 2013-2014 school year is almost complete and what a fantastic year it has been. Although we are nearing the end, there are still more opportunities to participate in more fun and exciting events at Park Trails Elementary School. Come join your PTE family for Run for Recess, a fun evening raising money to add new playground equipment, refurbish and replace existing pieces, and remove the sand and replace it with a rubber surface, making it accessible to every child. The event will be held on Friday, May 2 from 5:30 pm to 7:30 pm at Park Trails Elementary. Email Vicki and Erika at email@example.com with any questions. One of the most anticipated Park Trails’ events is almost here, so mark your calendars! Tuesday, May 20 from 6 pm to 8 pm will be our Annual Cultural Arts Night. The next day, May 15, is Dunkin’ Donuts Day, remember to stop by and drop your receipt in the Heron Heights Elementary School box. There will be no school on May 25th, it is a planning day for staff. On Monday, May 26, school will be out in observance of Memorial Day. The last event of May is on the 27th when the Spring Chorus Concert will take place at 6:30 pm. Be sure to attend this event! MEMORIAL DAY ……. REMEMBERING OUR FALLEN HEROES
By Brian Weidenbacher emorial Day is a US federal holiday celebrated every year on the final Monday of May. It’s a day of remembering the men and women that have perished while serving in the United States Armed Forces. Formerly known as Decoration Day, it originated following the Civil War to commemorate the Union and Confederate soldiers who died in that horrible four-year battle. Many people visit cemeteries and memorials, predominantly to honor those that have died while serving in military service. On this historic occasion, the flag of the United States is raised briskly to the top of the staff, and then solemnly lowered to the half-staff position, where it remains only until noon. It is then raised to full-staff for the remainder of the day. The half-staff position remembers the more than one million men and women that have given their lives in service of their country. At noon, their memory is raised by the living, resolving not to let their sacrifice be in vain, but to rise up in their stead and continue the fight “for liberty and justice for all”. For many Americans, the central event of the day is attending a memorial service, or one of the thousands of parades in large and small cities all over the country. Most of these feature marching bands and an overall military theme, with the National Guard and other servicemen participating along with the veterans and military vehicles from various wars. This magnificent day can be spent in many ways commemorating and remembering our fallen heroes. These brave and dedicated men and women have given their lives for their country, our freedom, and hopefully, not in vain. Their courage is defined by loyalty and honor. May their souls rest in our hearts, as well as our thoughts, FOREVER!
Beginners’ Reading Workshop
his summer the Reading and Learning Clinic of Coral Springs, Inc. will be offering a program dedicated to beginning readers, entitled “Kids Who Read Succeed.” Educators agree that early success at reading acquisition is one of the keys that unlocks a lifetime of reading habits. The program will include reading instruction containing a balance of activities designed to improve word recognition, including phonics instruction, and reading meaningful text. Phonics will be taught as part of the text because it can help children attain automatic visual recognition of spelling patterns within words for word recognition. Writing activities will also be included because they effect overall reading ability in a positive way. Comprehension strategies will focus on material that is relevant to children as well as the material the children read themselves. Children entering kindergarten and first grade in the fall will benefit from the program. Two classes will be offered. The first session will run from June 16-27 and session three will be held from July 28 through August 8. Each class will meet Monday through Friday from 1:30-3:30 PM. t’s May already and our Riverglades 2013-2014 school year is almost complete. It’s been an awesome year and what can we say, time flies when you are learning and having fun. But don’t put your calendars away yet, there are lots of events planned for the end of the year! There is a lot of reading and creativity going on here this month. The Scholastic Book Fair once again visits Riverglades the beginning of May. It’s a great week to get those books for spring and summer. Then on May 8th, Cultural Arts Night is on! We are excited to show off one of our largest events showcasing artwork from each Riverglades students. This night is really a work of art and offers hands-on interactive art kiosks for the children to explore their creative side. Our Riverglades Elementary staff rocks and we know it! During the week of May 12th through May 16th, we will show our appreciation for all their hard work. On May 13th, the staff will be recognized with a wonderful luncheon for all those who support us throughout the year. And our PTA End of the Year Luncheon will be hosted on May 14th to give a special thanks to all of you who have supported Riverglades throughout year. On May 19th, the Safety Patrol and Morning Announcement Lunch will be held. This is the time to thank all those hard working fifth graders for their volunteer time to Riverglades and give them a big thank you– and yummy lunch. In addition (we have a lot of thanks to acknowledge), on May 20th, all Riverglades volunteers will be recognized. Join us for a celebratory volunteer breakfast – you deserve it. As June rolls in, a few dates to remember and mark down include: the STAR breakfast and Fifth Grade Celebration on June 4th; and of course the Last Day of School on June 5th (don’t forget to celebrate with visiting Yogurt Craze). Help For Struggling Readers
he Reading and Learning Clinic of Coral Springs is offering a class designed to give problem readers a whole new chance. The program is called Reading Mastery, and it is offered for students in grades 2-5 who are struggling readers. Students in the program learn basic decoding and comprehension skills. Decoding is taught through an explicit phonics method that stresses letter sounds, and blending. Students practice decoding by reading word lists and stories, both aloud and silently. Comprehension activities include a variety of literal and interpretive questions. Students also learn basic reasoning skills, such as making inferences and drawing conclusions. The daily reading selections include realistic fiction, fantasy and factual articles. The Reading Mastery program is designed so that students are given directed reading lessons and are constantly tested as they progress through each level. Our first-rate youth theater program has its permanent home at one of South Florida’s finest performing arts center: The Coral Springs Center for the Arts. From humble beginnings growing up, Roseann hop-scotched the United States as a newlywed after leaving Rochester, NY, quickly rose in the corporate world, and carved her name in a business that flourished and became nationally known. During these trying times, she managed to work full-time, raise three wonderful children, and supply her family with the love and caring needed “to make a house a home”. All qualified 7th and 8th graders were welcomed into this prestigious association. This is the largest group of new candidates ever selected in the history of this club at MHOC. Membership is considered an honor. Selection for membership is determined by five basic tenets of behavior, including character, leadership, scholarship, service and citizenship. There are many misconceptions about security officers and what roles they play in society. Many feel security is a meaningless job and security officers are want-to-be cops or someone who lacks the skills to do something else. Truth is, to become a Florida state Robert Zajic licensed security officer you must attend a state certified school, complete 40 hours of classroom training and pass a written test with a score better than 70%; while some schools require an 85% or better to pass. After passing the test and receiving a certificate, fingerprints are sent to the FDLE and FBI for a full background check, only after this has been completed and approved are you permitted to work as a security officer. Thereafter, they are required to renew their license every 2 years with the State of Florida. There are several types of security officers and duties for which they are hired. Unarmed officers, which do not carry firearms, are the most popular. These are officers that are usually hired for gated communities, roving patrols and condominium lobbies. Depending on the property, they are mostly required to stop and identify guests entering the property to ensure they are expected. Essentially you have a security officer to regulate traffic entering the community. Security officers that carry firearms are considered “armed” and you will most likely find them in banks, stores, high crime areas and events.
Security is an integral part of the country’s workforce with over 1 million employed by contract companies in the United States. Currently, there are only a little over 700,000 sworn police officers. As a contract agency, I can say we work closely with several police agencies to help with investigations whenever possible, mostly by our video surveillance systems we install in our gatehouses. We have successfully aided the police on several occasions with information that resulted in an apprehension of criminals. Security is a position that is often used as a stepping stone to further one’s career in Law Enforcement. Being a security officer allows the person to understand how to deal with people and have first-hand experience with different situations, which may prepare them for law enforcement. Security personnel often are exposed to physical and psychological trauma that can have lasting effects. This has always been an issue, but todays more violent and angry culture combined with drug and alcohol-related violence results in more instances of security personnel being physically or verbally abused, and sometimes by the people that hire them. Despite this, we have had many of our security officers go onto successful careers with the Broward Sheriff’s Office, Police Departments, Federal Corrections and County Corrections Officers. Many security officers take their job serious and have been accredited with saving lives. When I was informed about a chance meeting that was going to take place with Larry Berfond, I had absolutely no idea what was going to take place. After nearly three hours in his office and a lunch break, I realized that trying to condense his life’s story to this point was an impossible task. To properly write about his accomplishments and life travels, the “story” would be about the length of War and Peace. During Larry’s college days, he worked for two years as a “coconcert” promoter on Long Island for Sly and The Family Stone ….. and the journey began. From there, his life took off and the doors of a different world opened for him. In 1969 he opened Yorkville Glass and China, a fine China glassware shop, supplying restaurants, the public (including movies and TV set such as The Godfather and the Exorcist), and the United Nations Consulates. By the time 1973 arrived, Larry was off to Florida and the adventure really unfolded. He opened additional China and Glassware Shops (Yorkville China and Glass in 1973). Soon, realizing that most people ate out and didn’t require dishes etc., he started Corner of the World Wine and Cheese in Tamarac. By the time 1974 arrived, Mr. Berfond’s Corner of the World led to Fine Wine Knowledge and Catering (Cartwheels). Many unique experiences and opportunities arose from this company. Larry began catering wine and cheese events for Miami celebrities on a regular basis, including William Paley (CBS TV / Warner Bros / Miami Seaquarium), and Jackie Gleason and The Inverrary Classic serving Presidents and luminaries visiting the yearly event. As the years rolled on by, Larry got the restaurant bug and in 1977 opened Lo-Cal Express Restaurant in Boca Raton. This “lowcalorie” dining restaurant served Pita Bread Sandwiches and Salads, something unheard of and way before its time in the restaurant business. In 1979, Larry opened “Night Train”, which exploded onto “the” dining and music scene in Boca Raton, featuring guitarists and fine wines, while infusing his daytime supply of healthy foods into the mix. The “idea man’s” creations led the newspapers to dub him, “Nouvelle Cuisine Found in Florida” (the new upcoming trend by Food Critics) ….. the place went crazy! Following the birth of his child, Larry decided that he did not want to work day and night, and “retired” at the age of 30. Like most
people that retire at an early age, the itch for something new and exciting entered Larry’s realm of thought. What was next for this man of constant movement? Was his baptismal into the food world just a stepping stone for bigger and better accomplishments? Could a new adventure bring him to the pinnacle of his never-ending creations? Larry realized that he wasn’t ready to “pack it in”, and the wheels started to spin. What comes next might surprise most people, but after sitting down with this creative genius, I was ready for anything. I certainly wasn’t disappointed. This first part of Larry Berfond’s tale is just the tip of the iceberg……. and it’s a BIG iceberg! So now it’s 1988 and Berfond opens Café D’Estournel (French Food with a Twist) opposite the Waterfalls, by Inverrary on Oakland Park Boulevard. The restaurant served French cuisine, which was anything but French, since it was basically Larry’s creations combining ideas from all his favorite dishes to harvest a menu that was interesting and exciting. The place exploded ….. Southern Wine and Spirits, the nation’s largest distributors of fine wines, brought their celebrities and food experts to this unparalleled establishment and Berfond soon became “the toast of town”. Paired with Southern Wine and Spirits, a monthly Wine Tasting Vintner Dinner Event was fashioned, once again proving that this“trend setter” was an unstoppable force. Luminaries from different wineries would bring their wines, and Larry paired the “grape delights” with five or six course meals, while teaching interested individuals about the joy of wines. “Blackening” became an integral part of the restaurant’s reputation, thanks to the guidance of renowned New Orleans Chef Paul Prudhomme. Once again, Larry’s mind and diligent work produced a movement that other restaurants have copied, but never equaled. Since Fort Lauderdale was the “Capital of Spring Break” in years past, Larry opened “A Spring Break Fiasco” that basically did not have a name. The money was great, but it wasn’t for him. The short-lived place lasted only one season (3 months), and Berfond was out of there faster than a fat kid playing dodgeball. That was quick, especially since Larry couldn’t run out of sight in a year! Following this fiasco, Berfond loaded up his equipment and opened a “wine themed California cuisine restaurant” in Davie called Silverado Café 1991. Once again, this restaurant was a groundbreaking experiment never before witnessed in this area. With lettuce, various herbs, and spices literally growing on the walls of the establishment, customers had the feel of dining in a quaint California restaurant in the Napa Valley. But, problems arose again. Despite being voted as one of the 7 top restaurants in Florida, Larry’s mom was extremely ill, and the hours were long, making it very difficult to balance everything. So a coin was tossed to see whether his partner, or he, would be leaving …… Larry left! After his departure, a supplier, whose family owned the majority of fish farms in Norway, got in touch with Berfond, and together opened Two Chef’s Seafood, a wholesale market in Coral Springs. They supplied every Sushi Restaurant and “fine dining” restaurant with Norwegian salmon. Larry began smelling like a sardine after cleaning thousands of pounds of salmon daily, and decided to make an early exit from the business. Besides, his band-mates seemed to keep their distance while rehearsing at their homes. One of his friends offered, “Why don’t you create a cologne? You can call it Essence of the Sea”. As can be seen from his past, Larry bounces back faster than a “super ball” off a wall. The past was fun, but the future will be a rat race …… and believe me, the rats won’t win this marathon!

oday in our fast food world, many of our foods are processed in large manufacturing plants instead of our own kitchens. These facilities are able to handle millions of pounds of a variety of foods a year, many running continuously, twenty-four hours a day. When you are handling this much food, the chances for confusion and contamination are greatly increased. In an effort to protect the general public, our government has set guidelines. One of those guidelines is for zero pathogens in select foods which also includes pet foods. Foods that are naturally raised and naturally produced are consumed by every creature on this planet without any cooking or processing. Do these foods, including raw plants and animals contain pathogens? Are E.Coli, Salmonella, and other living organisms really as dangerous as we have been led to believe? Most of these pathogens are naturally occurring organisms and are ingested by all life forms universally. If they were that harmful, wouldn’t the planet be devoid of life? Diarrhea, vomiting and gastric discomfort, usually following a meal is often diagnosed as food poisoning. These same symptoms also represent the body’s natural method of housecleaning most toxins. In fact, if you read the warning labels on most medications along with household and lawn products, these symptoms are always listed as side effects. In many cases, it is even recommended that you induce vomiting or a method of cleansing. This is a first line of the body’s defense.
A diagnosis of E Coli or Salmonella is usually made with little or no testing being done and when testing is done, just the presence of the pathogen is not an accurate confirmation of disease. In fact, most recalls are for suspected pathogen contamination and result in few people or pets being affected and no conclusive evidence of the cause. Currently, there are ongoing worldwide studies indicating that these pathogens are necessary and beneficial to sustain life itself. These pathogens actually carry nutritious body building qualities as well as neutralize and remove other dangerous toxins. So why is there urgency for all this processing and is it really safer for us? Is it better to use toxic synthetic chemicals than to consume what is produced naturally? For instance, many processors spray foods with a number of disinfectants such as chlorine. Have you ever added bleach to your favorite recipe? Animal’s bodies are designed to protect and heal themselves. Stomach acid will destroy and aid in the digestion of even the most virulent of pathogens. If however, we change that normal gastric chemistry with medications such as antacids and antibiotics, we lower the body’s defense and also the immune system. When you acquire “zero pathogens,” it means less nutritious foods. The addition of toxins, the destruction of vitamins, enzymes and nutrients make the food less beneficial and harder to digest. Even minimal processing such as grinding of meat and cutting of fruits and vegetables accelerates oxidation that not only
changes the taste but breaks down the nutrients. Synthetic nutrients and additional flavors must be added for enhancement however, this definitely lowers quality. In pet foods, many consumers are under the impression that kibble is a safer product than fresh food. Kibble is actually one of the most highly processed foods on the market with almost all the ingredients in it being processed as well. When you read the ingredient label, if you cannot buy it in the food section of your supermarket, then it’s not food or it’s processed. Some national brands are 90% or more non-food. All the additives and processing render the food as difficult to digest and actually plug up the system similar to having a clogged drain. Please realize that almost all recalls of all foods and pet foods are mostly processed brands. In conclusion, yes, the quest for pathogen free foods can potentially be fatal to our pets. We must remember that nature has provided a pretty perfect system that has worked for centuries. Can we really improve on what we were naturally given? Which choice would you trust?
