One should ask a competent rav if children or the infirm may consume kitniyos in products such as baby formula or nutritional supplements (like Ensure). These foods should be prepared using separate utensils that are used neither for chometz nor for Pesach.

Today, scientists can manipulate enzymes, thereby creating and changing properties of foods. This generates all sorts of questions in the field of kashrus, including kitniyos.

The minhag is to not eat kitniyos from the time of sof zman achilas chometz.

Mustard, green beans and sesame are all kitniyos. Though they may not be definitively classified as kitniyos, fennel, cumin and caraway seeds — three variations of kimmel — are often avoided because such seeds were prone to contamination by wheat kernels.

Some foods you may not have suspected of containing traces of kitniyos: baking powder, mayonnaise, margarine, liquor, ice cream, candy, chocolate.
