Veggetti The Veggetti is a fun gadget that turns out spiralized spaghetti-like strands of vegetables. I find that although it’s more of a toy than a serious kitchen tool, it comes in handy, especially when watching one’s weight. It creates flavorful, eye-appealing dishes as well as versatile garnishes. There are a variety of spiralizers available. The commercial-grade ones are more costly, but easier to use and work better with firm vegetables such as beets or kohlrabi. The standard models work great with zucchini, potatoes and daikon, and quite well with carrots, but feel free to experiment with other vegetables as well. This week’s recipes are all gluten-free.
