Summer Cold Noodles

Ingredients

Udon/ Soba or any other noodles you like (in this photo I’m using Korean wheat noodles) Egg Ham Cucumber Fresh baby corn (or canned) Ice

Sauce

Mix all these together for sauce, adjust to your own taste:

Half lemon juice 1 tablespoon soy sauce 1 tablespoon sesame oil 1.5 tablespoon rice vinegar 1.5 tablespoon water 1.5 tablespoon honey Wasabi - optional

To make

1. Boil egg and remove shell, cut in half 2. Cut cucumber into thin and long sticks 3. Baby corn cut in half, boil and drain 4. Roll ham into flower shape 5. Cook noodles according to instruction on pack. Drain and rinse with cold water, until completely cool. Soak in cold water until being served.

To serve

1. Remove noodles from cold water, drain completely and put in a bowl 2. Assemble all other ingredients 3. Put as much ice as you like around the noodles 4. Pour sauce over and enjoy!
