Thanks to Jim’s passion for cellaring good reds, we recently stumbled across a stash of this gem from the Barossa. This old vine GSM is showing excellent signs of bottle development. A fruit driven style jam-packed with raspberry and anise. Surprisingly fresh for its age but drinking beautifully now.

Method: Place the trimmed fillets in a lightly greased baking tray. Grate ginger and lime zest over the fish, then squeeze the juice over (or just the lime leaves). Sprink le the garlic, onion, seasoning, lemongrass sti cks, chilli over the fish and then coconut cream to cover. Melt the butter & mix with the tumeric. Drizzle this over the coconut cre am. Bake in oven 180º for aro und 10-15 mins or until the fish is cooked. Serve with a fresh mago salsa or fruit chutne y & steamed rice. Serves 4

Dad’s enthusiasm was sincere and infectious, and he would never let anything stand in the way of reaching his goals. He was equally at home carrying boxes to customers’ cars as he was hosting a black tie event. It was not uncommon for Dad to personally deliver supplies to a party venue, generally greeted by a chorus of voices saying,

“enjoy the good times” and Dad would chuckle and say, “Isn’t that lovely”. As Jim’s son, I joined the wine industry 16 years ago and was fortunate enough to have learnt from the best in the business. To really know Dad, was to admire him and truly appreciate his great qualities. Sharp, generous, compassionate, open-minded and openhearted. Dad was a diamond in the rough. He embraced every opportunity to express his pride in Canberra, to help those less fortunate and to share his experience and knowledge with young entrepreneurs.

Quite the character, he loved nothing more than a good glass of wine and a laugh, and when he laughed, everyone around him would laugh with him. There is no doubt we’ll miss Dad’s presence at both our stores but I give you my guarantee that we will continue to give the same level of service, range and low prices that Dad was always so proud to provide.
