REGION | King Valley, VIC VARIETY | Prosecco NOTES | The grapes were hand harvested and whole bunch pressed. The juice was fermented in stainless steel at a cool temperature of fourteen degrees Celsius before undergoing secondary fermentation. Light straw in colour, with lime hues. The nose explodes with sweet sherbet, lemon, lime and jasmine aromas. Yeasty and earthy characters add complexity, with added brioche notes. The palate is creamy and refreshing zingy with lemon, lime acidity. The wine has lovely length and softness with a touch of sweetness but a long dry finish.

2021 NGER INGA PET N A T REGION | Adelaide Hills, SA VARIETY | Syrah/Pinot Noir/Viognier/Semillon NOTES | All varieties sourced from the certified biodynamic Ngeringa farm. This lightly bubbly Rosé has a delicious nose of exotic flowers and musk, pithy grapefruit, blood orange and citrus blossom. On the palate there is a mixed fruit salad experience that is light, refreshingly fruity, with a dry, textured finish.

SPARKLING NV JACQUES PICARD CHAMPAGNE BRUT REGION | Champagne, France VARIETY | Chardonnay/Pinot Meunier/Pinot Noir since 1956. Made with a majority of chardonnay, this non-vintage cuvée is the perfect expression of our terroir as well as the continuity of Jacques Picard style perpetuated for 4 generations. It is the ideal Champagne for aperitif and to celebrate any occasions. 60 % Chardonnay, 35 % Pinot Meunier, and 5 % Pinot Noir. Blended with 30% to 40% of reserve wines Vinification in thermoregulated stainless steel. Ageing for eight months in tank. Bottles aged on lees for three years in their cellar at constant temperature and humidity, then rested for a minimum of three months after disgorgement.

NV DAOSA NATUR AL R E S E RVE REGION | Piccadilly Valley, SA VARIETY | Pinot Noir/Chardonnay NOTES | A base of Pinot Noir from the 2019 vintage is blended with a portion of older reserve wine which has been barrel-aged without sulphur- the ‘natural réserve’. Made in the traditional method and bottle-aged for 18 months before release, the resultant wine has depth and complexity, offering layers of fresh apple, spiced quince, and almond praline. The Altair gains its power and red fruit aromas from the Pinot Noir, while the Chardonnay produces citrus lift and gives the wine finesse. Blending of a clear base wine with a small addition of red wine to achieve the pale pink colour and fruit lift that is signature of this sparkling.

A late disgorged wine which showcases wonderful toasty brioche aromas enhanced by green fruits and zesty citrus. The palate has a harmonious balance of orange blossom, biscotti and green apple that complement the slaty, driving minerality.

RIESLING 2021 HENSCHKE PEGGY’S HILL RIESLING

NOTES | A more intense and aromatic riesling you’d be hard pressed to find for the pebbles. Foolishly best known for their pre-historic shiraz-driven wines, the team at Henschke know riesling as good as anyone around and it shows with this superb, if not just so damn quaffable, specimen. Fragrant aromas of lime zest and frangipani, with hints of ginger and grilled lemon are framed by fine minerality giving shape and focus to the end.

2021 R I ES LI NG F R EAK N O. 4 REGION | Eden Valley, SA VARIETY | Riesling NOTES | In a year where Eden Valley Rieslings are shining so brightly, No.4 is a beacon among them. The bouquet leaps forth with aromas of white florals, sweet spice, lime and quince. The palate is elegant yet assuredly structured with foundational slate-like minerality running beneath the more delicate flavours of citrus and rosewater. The racy natural acidity, which is a hallmark of the vintage, runs the length of the palate drawing through to a fine, crisp finish; and lingering lusciously in the mouth long after the wine has gone.

2020 5452 BY KT REGION | Clare Valley, SA VARIETY | Riesling NOTES | Wines by KT are small, lovingly cared for parcels of fruit that utilise traditional techniques in their creation. I’m passionate about the township of Watervale 5452 and am working with dry grown, sustainably farmed vineyards in the area and surrounds. With gentle care from grapegrower to winemaker, working with sustainable principles, it’s my intention to produce wines with drinkability and personality. 5452 by KT is sourced from a blend of Watervale Clare Valley riesling. This dry Riesling and its zesty fruit flavour, shows varietal citrus and punchy fruit characters with a crisp finish.

2020 TERRE A TERRE SAUVIGNON BLANC REGION | Wrattonbully, SA VARIETY | Sauvignon Blanc NOTES | It’s Sauvignon Blanc, but not as you know it. Twice awarded Best Sauvignon Blanc in Australia in Halliday’s Wine Companion, this as close to Bordeaux blanc as you’ll get without a travel exemption. Fermented and aged on lees in old 600L French oak “demi-muid” barrels, you won’t find any green grassy notes here- this is full flavoured and expressive, with notes of cashew, lemon curd, orange blossom, and ginger; velvety palate weight; and length and persistence for days.

CHARDONNAY 2019 ROUGEOT-DUPIN BOURGOGNE CHARDONNAY NOTES | Domaine Rougeot has a long history of making superb white wines out of the famed village of Meursault. The Rougeot- Dupin label is a venture that started in 1990 in order to diversify the family range. The wines are made from purchased grapes, the Chardonnay grapes are carefully selected from sustainably grown vineyards in Cote de Beaune and Cote Chalonnaise. The wine has a subtle nose of white stone fruit, fresh hazelnut, almond and hint of butter. It’s perfect to open when it’s young, in its first one to four years.

NOTES | This is a wine with a serious pedigree. Winemaker Brian Croser is the OG pioneer of the modern Adelaide Hills wine region. Croser first planted Chardonnay in the Piccadilly Valley in 1979, recognising the climatic similarities with Burgundy. You’ll find layers of citrus and stone fruit, notes of cashew and nougat, underpinned with seamlessly integrated oak and fine-boned acidity. World class.

Previously known as Etienne Boileau, this producer focuses on creating classic, minerally, racy Chablis with freshness and purity. Temperature controlled alcoholic fermentation at low temperature in stainless steel tanks. Ageing on fine lees for 8 months. This wine is wide open, with attractive citrus and almost a little menthol. A lovely Petit Chablis.

Natural fermentation in stainless steel and old French barriques results in a textured wine balanced with natural Adelaide hills freshness. Dry on the palate with refreshing energetic tropical flavours and a white nectarine finish, made for summer and food. Thank you, Turon, for continuing this classic style which gives so much more in a white wine.

NOTES | One of the very few expressions of single variety Roussanne in Australia, this wine is sourced from three Eden Valley vineyards, with varying ripening periods, resulting in an exotic, food-friendly wine that is full of flavour and texture. Aromas reminiscent of walking through wild flowers; chamomile, lavender, and wild rose. A silky yet defined wine, white fleshed peach and vanilla custard layered over fresh grapefruit acidity and a fine almond meal texture with lingering hints of honeycomb.

2021 LONGVIEW ADELAIDE HILL PINOT GRIGIO GRUNER VELTLINER REGION | Adelaide Hills, SA VARIETY | Pinot Grigio/Gruner Veltliner

NOTES | Longview’s Vista Grigio Grüner takes the best of Italy and Austria and blends them together to create a wine that is unabashedly Australian. Punchy and exciting, the wine jumps out of the glass with freshly picked nettles, spice and pine-lime aromatics. The invigorating palate is all pizazz; upfront sherbet, then spicy poached pear with mouth-watering acidity, finishing with remarkable texture and length.

NOTES | White pear and lemon with fragrant citrus blossom and honeysuckle on the nose. Light notes of apricot and honey. The palate is packed with ripe apple and juicy pear. NOTES | From a vineyard plot on flint clay, Aurore is 100% Chenin Blanc. The fermentation and aging take place entirely in barrels for 18 months. It’s hard not to love Chenin Blanc! Southeast Asian cuisine or pork chops with apples paired with Aurore Chenin Blanc will blow your mind.

2021 SEQUENT PI NOT GRIS REGION | Adelaide Hills, SA VARIETY | Pinot Gris NOTES | An absolute thirst-crusher. Refined Pinot Gris characters are here in abundance; aromas of juicy ripe nashi pear and fresh green apple, refreshing citrus zesty acidity and a touch of complex minerality with a lovely lingering finish. Crack open a bottle with mates over a long lunch, finish the case watching the sun set. Sequent Pinot Gris pairs brilliantly with just about everything - or nothing. Our favourite is salt and pepper squid, ideally from the Star of Greece.

OTHER WHITES 2020 KAESLER SEMIL L ON NOTES | Planted in 1961 and celebrating its 60 vintage this Barossa Valley variety is a real hidden gem. Brilliant clarity, yellow with a touch of light green. The bouquet is lifted and bright, with plenty of lifted limes and lemons. The palate is vibrant and inviting with crisp acidity and flavours of zesty limes, grapefruit and a hint of green apple. A delightful Semillon crafted from beautiful old Barossa vines.

2021 SHER R AH C HENIN B L A N C REGION | McLaren Vale, SA VARIETY | Chenin Blanc NOTES | A bright summer fruited wine, with lemon zest and tropical aromas and a textured palate. Blewitt Springs Chenin Blanc from 30 year old vines, harvested at night, and then left briefly on skins for 12 hours, before pressing to stainless steel for fermentation with a light amount of solids. Pressings were wild fermented in seasoned oak, then the finished wine was stored on lees in seasoned oak for 4 months prior to bottling. No acid additions.

NOTES | This beautifully pale rosé has lovely aromatic wild strawberry and cranberry notes on the nose. The palate is tangy, dry and textural with creamy berry fruit and a deliciously moreish finish. Crafted from old vine Grenache, this racy rosé is a brilliant example of why we think Grenache is so gorgeous.

ROSÉ 2021 WATKI NS GR ENAC H E ROS E REGION | Langhorne Creek, SA VARIETY | Grenache Langhorne Creek, which is situated away from the heavy alluvial soils of the flood plains, on shallower terra rossa soil, ideal for precision control over water use on the vines and known to provide more structural wines. Dry style rosé that is made using the traditional French Saignee technique, bleeding juice from Grenache early in production for a lighter wine. Balancing out less than 2g/L of natural sugar with crisp acidity, here is a rosé ready to be enjoyed in the sun as an aperitif, or with lighter meals. Style is aromatic and textural with cherries and strawberries on the nose and a palate balanced between fresh fruit and lingering acidity.

2019 POD ER I I L PALA ZZIN O ROS A TO REGION | Tuscany, Italy VARIETY | Sangiovese/Canaiolo NOTES | Rosato comes from an early harvest, to obtain a fresh and pleasantly acid-fruity wine. Made up of Sangiovese and 5% Canaiolo, the grapes are picked early, then 15-20 days of maturation, will be able to become high quality red wines. The grapes are placed in a stainless steel vat and the juice is immediately separated from the skins, without pressing, but only with the help of the grape weight itself, so that only the flower must is taken, with no rustic or astringent components.

2018 DALRYMPLE SING LE VINEYARD OUSE PINOT NOIR REGION | Ouse, TAS VARIETY | Pinot Noir

NOTES | This unique vineyard is Dalrymple’s most inland and coolest site, located five kilometres east of the town of Ouse. The Single Site Ouse Pinot Noir offers aromas of spiced strawberry and ironstone. Restrained characters of tamarillo, spice and baked rhubarb carry onto the palate, accompanied by savoury tannins and natural acidity, providing great focus and length with a savoury finish that has wonderful persistence.

PI NOT NOIR 2020 C LAR ENC E HOUSE PIN OT N OIR REGION | Coal River Valley, TAS VARIETY | Pinot Noir Pooley winery. The Estate blend comprises fruit from all three pinot blocks, utilizing five different clones. Harvest occurred over two weeks, with the majority of fruit de-stemmed aside from a small portion (5%) of whole bunch. All wild ferments, no adds, on skins for an average of three weeks, before pressing to primarily old French oak barriques. Dark berry fruit, briar, forest undergrowth and dried flower. Instant intensity on the palate, a core of red spectrum fruit, ripe and concentrated, woven through a fleshy texture of supple tannin and freshness.

oak maturation, vinified through the historic 1888 Gravity Cellar highly regarded for its small batch format and gentle maceration. Built into the hillside on a series of terraces, gravity guides the flow of fruit down through the winery to deliver gentle extraction of colour, flavour and tannin. Sourced from the famous terraced vineyard at Seppeltsfield, this wine is medium bodied with aromas of cherry, cranberry and red currants; lifted and pure. Deeply fruited with an all spice and Campari complexity. Raspberry, cranberry, red cherry and complex notes of dark chocolate appear on the palate, complemented with fine cocoa tannins.

Displays all of the aromatic intensity and floral inflections you could hope for in Barossa Grenache. Vibrant red fruit overlaid on fine, silty tannins and crunchy acidity. Fruit came from blocks 18 and 22, both planted in 2016. Block 18 is on a schist base with some limestone, while Block 22 has bush vines planted on the contours. It’s very rocky (schist and quartzite) with limited topsoil. NASAA certified organic and biodynamic.

NOTES | Previously labeled ‘Graillot Project’ Syrah No. 2, the

2016 vintage was the last vintage of this wine to be bottled under the Graillot labelling. All the fruit is hand harvested and the 2017 was blended from spontaneous 100% whole bunch ferments. This 2017 was raised by Luke Lambert, mostly large format, neutral oak (predominantly Stockinger) and no sulphur used through the ageing. As always, the winemaking is extremely simple. 2017 needs little introduction, so let’s just say that this vintage gave exceptionally pure, balanced fruit, which we think is borne out in the quality of this release.

CABERNET + BLENDS 2019 LAKE BREEZE CABERNET SAUVIGNON NOTES | The 2019 Cabernet Sauvignon uses fruit produced from 40 year old vines on the Follett family vineyard, situated on the Bremer flood plain at Langhorne Creek. Traditional open fermentation was employed followed by maturation in French oak barriques for 20 months, prior to bottling. The wine displays a lifted aromatics of black fruits and violets, along with some cedary oak nuances.
