The Knutsford High Street Website (see page 9) now offers on line ordering from many local shops making it ideal for all your Christmas shopping. Wines and spirits, chocolate hampers, candles, jewellery, clothing and canvasses are just some of the products you can order on line for free local delivery in Knutsford. And what can you buy that person who has everything? A Knutsford Voucher of course! Redeemable at scores of Knutsford businesses, purchasing a Knutsford voucher from the town council offices or website means that the spend is ringfenced locally and you will be helping to support local businesses who need us now more than ever. www.knutsfordhighstreet.co.uk was launched by Boxed Red Marketing in partnership with Knutsford Town Council at the start of lockdown to ensure the residents of Knutsford understood where they could access what they needed locally and also as an on-line space for all our local Knutsford businesses to communicate with residents. Since this time it has proven to be an extremely successful community resource with residents visiting the site regularly. We hope you have heard about The Knutsford Voucher in social media and local press. If you haven’t – make yourself a cuppa and have a read.

D

uring this challenging year, one of the things we learnt from Lockdown was that it was the local community – the shops and volunteers who came to Knutsford’s rescue. Yes, of course the big supermarkets (and their amazing staff ) rose to the challenge, but we wouldn’t have really expected anything less.

The list of the shops involved is growing and includes those below but you can check out the full list on www.knutsfordtowncouncil.gov.uk/ voucher (along with the full T&Cs)

However, once the shock of Lockdown had lessened on our local shops, what did they do? They were out delivering gin, wine, birthday cakes, sweets, prescriptions, meat and veg, clothes, IT equipment and everything the home office worker desired. They adjusted their websites and payment processes to ensure Knutsford did not go without. Digitally, KnutsfordHighStreet.com and the Facebook group Knutsford Virtual High Street ensured everyone knew where to buy their essentials and more. The charity We Are Knutsford helped those who were shielding. In short, there was a lot of love for local.

What can we do to pay this back? One way is simply to shop local. This is where the Knutsford Voucher comes in. Produced and managed by Knutsford Town Council, the vouchers can be bought via our website or in person at our offices in Toft Road. Initially available in £5 and £10 denominations the vouchers make the ideal gift for Christmas, birthdays, staff incentive schemes and importantly ring fence spend locally. So not Amazon, not a generic high street voucher but a voucher for Knutsford. Once you spend your voucher, the council simply pays the shop or business back – in full.

WENCESLAS APPEAL to help alleviate fuel debt and other hardship in Knutsford In 2015 Knutsford Lions set out to help alleviate fuel poverty in our local area by asking people to donate to their Project Wenceslas Appeal. Senior citizens were asked to consider making a donation from their Winter Fuel Allowance to enable Lions to support people trapped in fuel debt.

In 2019 the appeal was widened to support other financial hardships as well as fuel poverty. With Coronavirus this year, we are also appealing for donations from not just those receiving Fuel Payments. As in previous years, Lions will link up with other local organisations to help administer this scheme. Mobberley’s Super Sculptor Andy Burgess talks to Val Dawson

I

n these uncertain and confusing times what could be better than a morning meander around Mobberley? Trees and fields aglow with golden autumnal light. Poetic eh! I was on my way to take a peep into the life of the very talented wood sculptor Andy Burgess. He had kindly suggested we meet, socially distanced, of course, at his studio/workshop so that I could see where the magic happens. Many of you will know of Andy or have seen the vast tree trunks (sustainability the watchword) out of which he carves a variety of extraordinary shapes, figures and animals. They often appear in the gardens of rather smart houses. So where did this desire to wield a chainsaw come from? Read on... He took me back to his early years growing up in Hale, going to St Ambrose College then on to Sheffield Hallam University to study for a town planning degree. The 90’s travel bug took over when he and a friend decided to see the world ending up visiting 12 countries. They worked their way across the USA delivering cars - an exciting adventure plus a spell living in Sydney which was even more momentous when, through friends, he met and fell in love with Elen. They kept in touch and would marry in 2005. Ahhh... Eventually he returned to UK and the real world where he began to enjoy renovating houses. Mostly self taught but he realised he had natural practical DIY skills. His older brother was a successful wood carver and suggested Andy might like to keep up the Burgess family tradition. He did. A good decision. Accuracy and attention to detail being paramount if you are going to spend your working life carving intricate shapes out of tree trunks...with a chainsaw! After 15 years living and working in Didsbury, Andy, with his wife, Elen and two daughters, needed more space. Hence the move to their charming farmhouse tucked away down a narrow lane in Mobberley. No longer a working farm but the old outbuildings

have been repurposed and adapted perfectly for his work. Andy showed me round. A special sound proofed section is a necessity as well as storage area and a separate room to display his various creations. I was struck by the calm and orderliness of his environment. The sweet smell of timber and sawdust is strangely comforting bringing back childhood memories. Thankfully, I was not treated to the shattering sound of a chainsaw! Andy is quietly spoken and unassuming, even modest, about his obvious skills which have made him into a go-to media man where wood and creativity are required. He has been featured in magazines and on various tv programmes. The RHS Shows, Tatton and Chatsworth, are always a great shop window for his profession. He was the first chainsaw wood sculptor to exhibit at Chelsea in 2013. Andy doesn’t only carve cute owls and grizzly bears but contemporary designs and corporate commissions are part of his growing portfolio. Nando’s restaurant chain display 70 of his installations. In spite of lockdown restrictions he continues to work on numerous projects. He obviously impressed Alan Titchmarsh on his Sunday morning programme (ITV 25th Oct) and earlier this year he took part in Home is where the Art is. My favourite public sculpture is the Soldier outside Victory Hall, Mobberley. Moving and memorable. WALKING AT TOFT

t’s is a well-trodden path accessed at one end to the right of the School House on the A50 at Toft. A notice pinned to a tree announces ‘Please be aware that Jessica lives here …’. Beyond a stile is the land of Toft Hall Farm, once the park of Toft Hall, which still features some of the 18th and 19th century landscaping commissioned by the Leycester family. In 1707, Ralph Leycester planted a series of allées, ‘triple rows of ancient elms’, which in the 19th century were superseded by avenues of trees, one of which extends beyond the School House - a double row of mixed oak, ash and sycamore. However, it was a later Ralph Leycester’s fortune, made in India, which funded major change, from the naturallooking landscaping of earlier times to more formal, controlled planting. Beyond the trees, in the woods to the left, is the last remaining hut, one of about 50, which housed Italian and German POWs between 1946 – 48. It is just visible through the trees and means that the present woodland can be no more than 70 years old. What appears to be an overgrown ditch where the path crosses into another field is in fact the silted up end of a long, narrow lake which in the 1800s ran in front of the Hall, ending not too far from the Seven Sisters’ road junction. To the left in this open field one of the white towers of the Hall emerges above the

tree line while, straight ahead, Beeston’s escarpment dominates the horizon on a clear day. The old stack yard with its impressive cart shed is a tangle of old and modern but lining the path to the left is the high brick wall of the Hall’s former kitchen gardens. From an arched gateway, it is possible to work out the original layout with the help of old plans, despite the area now being pasture. Modern farm buildings stand on the site of once extensive 19th century glasshouses but, beyond two kissing gates, the timber yard survives, dilapidated but still in use. Further on, and heading towards the park, a brick wall hides what remains of a Victorian pleasure garden: once a 7 acre, landscaped woodland walk with meandering paths, a pond, mature trees and shrubs – an area where the Leycesters and their guests might stroll and enjoy Nature tamed. A second stile leads to a large field behind the Hall; here, a sunken fence performs much the same function as a ha-ha in that it allows for uninterrupted sight lines. Other surviving features include coverts for shooting, deliberately positioned stands of trees on raised ground, Scots pines in hedges bordering Bexton Hall and a crescent of limes marking the boundary between pleasure garden and park. www.knutsfordheritage.co.uk

Before long, Tomas is learning all about his new pet, from the fact it loves broccoli to the unfortunate fact that dragon poo is highly explosive. Flavour – Yotam Ottolenghi and Ixta Belfrage If you’re buying for someone who loves nothing more than spending a couple of hours in the kitchen cooking up a storm, this is the gift for them. It is not, however, a cookery book for beginners or those wanting to whip up a quick and easy dish. The ingredients aren’t always easy to come by and most of the recipes are experimental to say the least. The dishes are not always vegetarian, but fruit, vegetables or fungi are the star ingredients, and often used in rather surprising ways. Lime and Coconut Potato Gratin anyone? My Garden World – Monty Don Wildlife fans will adore My Garden World, which is basically Monty Don’s personal homage to the birds, insects and other creatures that share his garden. The book is packed with interesting nuggets of information about British wildlife and is a real pleasure to read (particularly when sat in the garden with a cuppa). If you want to really earn some brownie points, team it with a few packets of wildflower seeds and a pair of binoculars.

Sweet Recipe Christmas Mincemeat Slice This delicious festive slice can be served warm as a pud with custard, thick cream or brandy butter or simply cool completely and serve instead of mince pies.

Ingredients: • 225g plain flour • 165g unsalted butter, chilled and diced • 1 egg yolk blended with 1 tbsp cold water • 75g caster sugar • 300g good quality mincemeat • 50g ground almonds

fingertips until the mixture resembles very fine breadcrumbs (alternatively pulse in a food processor until fine breadcrumbs).

2. Remove 100g of the breadcrumb mixture and cover and chill in

the fridge. Stir 25g of the sugar into the remaining mixture, then stir in the egg and water and mix to a firm dough (adding a little more water if needed). Knead lightly then wrap in cling film and chill for 30 minutes.

3. Preheat the oven to 200C/180C fan/gas mark 6. Roll out the

dough on a lightly floured surface and use to line a 23cm square tart tin. Prick the pastry all over with a fork. Line the pastry case with baking paper and baking beans and bake for 10 minutes. Remove the lining paper and beans and bake for a further 5-7 minutes until the pastry is crisp and pale golden. Cool slightly. Reduce the oven temperature to 180C/160C fan/gas mark 4.

4. Spread the mincemeat in the pastry case. Mix the rest of the

sugar and the ground almonds into the reserved pastry crumb mixture and scatter over the mincemeat to cover completely.

5. Return the tin to the oven and bake for a further 25-30 minutes

We help you to make the most of your festive centrepiece. Some prefer a real Christmas tree while others argue for artificial. We offer some arboreal insights. Which type of real tree? The Norway Spruce is the classic choice but can be spikey and shed needles. The very popular Nordmann Fir has an even shape, soft foliage and glossy, dark green needles that don’t drop much. The Scots Pine retains its needles and has a lovely, fresh smell, while the Fraser Fir has silvery-green foliage and soft, low-shed needles with a citrusy aroma. The Noble Fir features blueish needles with well-spaced foliage while the unusual Lodgepole Pine has bushy, upward-pointing branches and the best needle-retention of all. Cut or container? Freshly cut Christmas trees provide a problem when it comes to disposal, so a great alternative is a tree purpose-grown in a pot. After Christmas the tree can be moved outside until next year. It will grow but can be kept for up to three years. Preparing for your tree-shopping trip Measure the height and width of the space available for your tree and take a tape measure with you. Pack a pair of heavy gloves and an old blanket to catch pine needles that fall off in the boot of your car. If transporting your tree on your car’s roof, take a rope and perhaps a tarpaulin to wrap around the tree. Picking out the best tree Look for a symmetrical tree with evenly distributed branches. Fresh trees will boast shiny, green needles that don’t drop if you gently pull a branch. Avoid trees with dry or brown needles. Buying direct from a local grower is best. What about artificial trees? Modern artificial trees are incredibly realistic, though usually without the natural appearance or smell that real trees offer. An artificial can be used again and again, but consider how easily it can be stored.

Which artificial tree? There is a huge variety of shapes and sizes on offer, and with a choice of PVC needles or PE (polyethylene) needles. Many artificial trees are pre-lit, too and some are ‘frosted’ with a dusting of artificial snow. Caring for your real tree • If you want it to look good right through until Twelfth Night, try to buy your tree as late as possible. • Ask the seller to saw a small slice off the bottom of the trunk (alternatively, do this yourself as soon as you get home). This will help it to absorb water. • Stand the tree in a bucket of water in a cool place until you are ready to position and decorate it. • If possible, place the tree in a cool spot, away from fires or radiators. Even a sunny window can hasten the tree’s decline. Secure it in a correctly sized, sturdy stand and adjust it so it is level. Fill the reservoir with water and check this regularly, topping up as necessary.

o here we are, nearly at the end of 2020. An extraordinary year for all the wrong reasons. For everyone at the market hall, January 2020 feels like an age ago (we are sure you must feel the same) and we only had just under three months of trading before everything changed. However, we and you rose to the challenge in Knutsford and our key traders carried on working throughout Lockdown. We managed to deliver the essentials to you with the help of some of our lovely customers and volunteers from the wider community. So out of 2020 came some great stories of collaboration and kindness. Thank you and a BIG thanks, to all who nominated us in the Business Award category in the Knutsford Town Awards. Our traders were very humbled and proud when they won. This Christmas, although we can’t run the events we normally do (Breakfast with Father Christmas is postponed to next year!) we would like to remind everyone who shopped with us over Lockdown to remember us at Christmas. A new Audiologist to take care of you at

KNUTSFORD HEARING CENTRE

Roger Lewin, BSc., MSc., FSHAA, a hearing aid dispenser with more than 30 years’ experience as an audiologist and hearing professional, has recently taken over the Knutsford Hearing Centre. With audiology and hearing care designated by the government as an ‘Essential’ service, Knutsford Hearing Centre remains open during any lockdown. The hearing centre is a Covid safe centre that follows audiology professional body guidance and government instructions. On arrival hand sanitiser is available, as well as a QR code for you to scan if you are using the check and trace NHS COVID-19 app. The front of house area is cleaned and sanitised between visitors, and two metre social distancing is in place. Our clinic room is sanitised after each appointment and appropriate PPE is worn, according to the Audiology & Otology Joint Guidance. Roger is continuing to support existing patients of the hearing care centre, who had been looked after very well by Jackie before her retirement.

Roger is also welcoming new people to the practice keen to seek help with their hearing. However, for those people unable to come into the clinic, home visits can be arranged. The Knutsford Hearing Centre cares for all your hearing care needs. At our hearing centre on Princess Street, we conduct complete hearing assessments, provide impartial advice on hearing solutions, as well as offering an ear wax removal service, custom protection products and swim moulds.
