Far-flung

BOOKS

action

This month, a voyage back into the world of fiction, with a selection of books that can whisk us away to far-off places Shutterstock

A Lady’s Guide to Fortune Hunting Sophie Irwin (12 May) A Lady’s Guide to Fortune Hunting is a smart tome from Sophie Irwin – a debut novel from the London-based author that combines intelligence with craft.

Book Lovers Emily Henry (3 May) Book Lovers comes from the pen of New York Times bestselling author Emily Henry, and follows the tale of Nora Stephens, who has a life ensconced in books. She has read them all, but the only people Nora is a heroine for are her clients and beloved little sister Libby. That’s why she agrees to go to Sunshine Falls for the month of August when Libby begs her for a sisters’ trip away. With visions of a small-town transformation for Nora, who she’s convinced needs to become the heroine in her own story, she encounters not picnics in meadows, but Charlie Lastra, a bookish brooding editor from back in the city. It would be a meetcute if not for the fact that they’ve met many times and it’s never been cute.

In the plot, lead character Kitty Talbot needs a fortune. Or rather, she needs a husband who has a fortune. This is 1818 after all, and only men have the privilege of seeking their own riches. With only 12 weeks until the bailiffs call, launching herself into London society is the only avenue open to her, and Kitty must use every ounce of cunning and ingenuity she possesses to climb the ranks. Can she secure a fortune and save her sisters from poverty? There is not a day to lose and no one – not even a lord – will stand in her way...

the imagination of the bookreading public, but screenplay writers as well, and is already being adapted into a movie. “After spending most of my teenage years buried in romance novels, I always wanted to write one myself,” Emezi told Entertainment Weekly in a recent interview. “You Made a Fool of Death with Your Beauty is a love letter to the brave choices we make in the name of love, the costs we pay for it, and the glory of the reward at the end.”

You Made a Fool of Death with Your Beauty Akwaeke Emezi (2 June) Akwaeke Emezi’s You Made a Fool of Death with Your Beauty is a deeply heartfelt romance novel about a woman named Feyi who eases back into the dating scene after an accident killed the love of her life five years prior. Exams: Less Stress

EDUCATION

Why addressing exam stress, as a household, can help everyone involved.

Shutterstock

We all know the pressure our youngsters will be under over the coming weeks and months as the tension rises ahead of end-of-year exams, whatever the level. While revision schedules are great for the student involved, sometimes the stress can permeate throughout a household, whereby parents can often feel like the ones going through the process, albeit accompanied with a greater feeling of helplessness. Thankfully, there are a number of things guardians can help with so that the tension temperature of exam season is kept to a level where brilliant brains can achieve the best grades possible.

1. Monitor sleep Sleep is arguably the most important factor where exam revision is concerned, not just in the sense of getting an early night and plenty of rest, but in the statistic that 80 per cent of teens lose between 2-4 hours of sleep each night due to work worries. This can be a case of failing to fall asleep, experiencing broken sleep, or waking early and not being able to go back to sleep. Monitoring your student’s sleeping pattern means laying a platform for effective study.

Shutterstock

2. Distractions Social media has become the biggest distraction for students in revision phase. Inadvertently, increased time spent on devices for learning can often translate into more time spent on social networks, with this ‘self-medicating’ ultimately becoming counterproductive. If you feel the distractions are too great, and want to take

a firmer hand on things, you might consider installing parental controls so that certain websites – Twitter, Instagram and Facebook, for example – can be blocked, although do this in a consultative way rather than imposing a raft of restrictions that your son or daughter will probably only resent you for doing.

3. Share an interest From simple investment in the project such as knowing an exam timetable or suggesting different revision techniques or study guides, your youngster will appreciate the fact they aren’t alone in the process, while not feeling that your presence is adding extra stress and burden to what is potentially already a time of fraught nerves.

4. Be the calm one Staying cool, calm and collected is going to be the most reassuring thing that a parent can do for their child. Rehearse a set of calming lines, ideas and examples of how things almost always work out well. Remind them there are tens of thousands of other students going through the exact same process and emotions, and point out that exams aren’t the be all and end all there are always alternative routes to the end goal.

Pear & Almond Cake

BAKING

Shutterstock

Hugh Fearnley-Whittingtall’s

This soft, dense, almondy cake can be served warm for pudding with lashings of cream, or cold with a cup of tea or coffee. Firm Conference pears should work a treat here.

Ingredients

1

Preheat the oven to 170°C/325°F/gas mark 3. Grease a 20cm diameter, springform cake tin and line the base with baking parchment.

2

Put a saucepan over a medium heat and add 25g of the butter. When it’s sizzling, add a tablespoon of sugar and stir until it dissolves. Add the pear quarters and fry in the buttery caramel for five to ten minutes, until they start to brown and soften (the time taken will vary greatly, depending on how ripe the pears are). Put to one side to cool a little.

3

Put the remaining butter and sugar in a mixing bowl and cream together until light and fluffy. Beat in the two eggs, one at a time.

(serves 6)

• 175g unsalted butter, softened

• 125g caster sugar, plus 1 tbsp

• 3 pears, firm but not too hard, peeled, cored and quartered

• 2 eggs

Whizz the whole blanched almonds (if using) in a food processor for about a minute, to grind them. Tip them into the cake batter (or add the ready-ground almonds), then sift in the self-raising flour and fold in gently. Scrape the mixture into the prepared tin. Arrange the pieces of pear on top of the cake.

• 75g whole blanched almonds or ground almonds flour

4

Bake for about 45 minutes, or until a knife pushed into the centre comes out clean. Place the tin on a wire rack to cool. Serve warm or cold. Shutterstock

• 75g self-raising

THE WEST HORSLEY WHEEL OF CARE BACK IN FULL SWING AFTER THE PANDEMIC!

The Wheel of Care, set up in July 2000, is a “Good Neighbour” scheme meeting the needs of West Horsley residents of all ages and enabling them to lead independent, fuller and richer lives and preventing social isolation. The majority of their work involves transporting West Horsley residents to a variety of appointments – medical, dental, opticians, hairdressers etc. They assist with shopping rotas, relieving carers for a couple of hours and other small jobs. They also currently run three clubs, all open to residents of West Horsley and neighbouring villages – a weekly Scrabble Club, a weekly Seated Exercise class and a monthly Film Club. Volunteering for the Wheel of Care is a wonderful way to get involved in our community. Volunteers tell us that they really enjoy the interaction with the clients, most of whom have lived here for many

During the Pandemic, The Wheel of Care’s work slowed down considerably. Now they are back and as busy as ever, driving the residents of West Horsley to appointments or for shopping, and running three regular clubs for residents of the Horsleys and beyond. years and have interesting stories to tell! If you are looking for some flexible, straightforward and rewarding voluntary work, then do get in touch! For details and further information go to www. westhorsleywheelofcare.co.uk or call the Wheel of Care on 01483 281703 (Mon-Fri 10am to noon). These strange times are very difficult for some and where they can, The Wheel tries to help to ease some of those stresses. If you know of someone who could do with some support and help please give the Duty Officer a call.

The Wheel hosts three regular clubs. Weekly Scrabble and Seated Exercise Clubs and a monthly Film Club.

ST MARTIN’S CHURCH EAST HORSLEY KT24 6RL

PART OF THE HORSLEY, OCKHAM & DOWNSIDE GROUP MINISTRY

Jesus said ‘Truly I tell you, whatever you did for one of the least of these brothers and sisters of mine, you did for me.’ (MATTHEW 24:40) The UK public response to the war in Ukraine and the resulting influx of refugees has been heart-warming. I know many people locally who have offered support both in terms of financial aid and offering accommodation. This has been extended to those refugees living in local temporary accommodation. As I write, the war in Ukraine continues. Whatever the course of the war the humanitarian consequences will continue for a long-time and I am sure we

We were delighted to welcome Terry Waite CBE to St Martin’s and raised significant funds for Hostage International and Emmaus UK

will all do whatever we can to help. One way in which churches have supported those in need is by what we call our ‘outward giving’. Here at St Martin’s we give a percentage of our annual general income to a number of charities. The details of who we are supporting are on our website. One charity which has benefited from local giving is Christian Aid. In the past this was done by volunteers delivering donation envelopes door to door across the parish and asking for them to be returned. Since the beginning of COVID we have had to look for alternative ways and this year we encourage everyone to make a donation during Christian Aid Week (15th to 21st May), online at https://cafdonate.cafonline.org/20178 or via our website. You can read about the work of Christian Aid at www.christianaid.org.uk. I take this opportunity to thank you on behalf of many charities for your generous giving which says something very special about the character of folk in the Horsleys.

With every blessing

Simple and effective ways in which you can make your home more eco-friendly and save money on expensive energy bills at the same time. Where energy saving lightbulbs and rechargeable batteries set the trend in previous decades, the new range of products and initiatives flooding the market will take your breath away, whilst potentially saving you money in the process!

Recycled pens

Attachable showerheads can come in at under a tenner, but reduce water usage by up to 75%, whilst still enabling a relaxing, reviving experience. These can save you up to £200 a year, meaning you’ll have earned your money back in the first month!

Pilot’s B2P pens are made from old water bottles, with 80% of the company’s range comprised of recycled plastic parts. They’re also making a big push on replacing ink cartridges rather than the entire pen, meaning even your shopping list itself can be environmentally friendly.

Coffee pod conflict

Cotton pads for flannels

Most of us have coffee down as one of life’s necessities, yet the flavour, texture and sheer caffeine power of coffee pod technology in the home means a huge amount of plastic thrown into regular waste.

Here’s a simple swap that will hold back the non-organic cotton farming industry, which represents a major source of environmental pollution.

The solution is to recycle pods – most coffee brands will have recycling bags that washedout pods can be sent off in – or better still, go back to ‘ground’ level by swapping your pod dispenser for a cafetiere.

Steel straws

Shutterstock

Forget dated plastic or horribly flimsy paper versions, only a steel straw will really do when it comes to proper drinks. Reusable thousands of times and across many years, just ensure you clean it out properly afterwards with a wire brush and hot water.

Instead of using cotton pads to remove make-up at the end of each day, simply use a dedicated, soft flannel, which can be washed and reused again and again.

Energy-saving power switches It’s a little-known fact, but even turnedoff appliances still draw energy from the plug when they’re switched to ‘off’. The phenomenon is known as ‘phantom load’ or ‘vampire energy’. The biggest culprits are TVs, games consoles and music systems, swiftly followed by home office equipment, kitchen appliances, and the plethora of phone chargers we have around the house. Last year, the US Department of Energy said that 75 per cent of the energy used to power home electronics and appliances is consumed when the products are turned off! The way around this is either to unplug them completely, or install an energy-saving power switch, which will eliminate the pull.

RECIPE

Beef Wellington This beef wellington looks impressive, but it’s actually a lot easier to do than it might appear. Using a mix of simple ingredients, like puff pastry and prime beef fillet, this wellington can be used to replace the traditional main in a Sunday roast, or for any special occasion.

1

Put the mushrooms into a food processor with some seasoning and pulse to a rough paste. Scrape the paste into a pan and cook over a high heat for about 10 mins, tossing frequently, to cook out the moisture from the mushrooms. Spread out on a plate to cool.

2

Heat a frying pan and add a little olive oil. Season the beef and sear in the hot pan for 30 secs only on each side. (You don’t want to cook it at this stage, just colour it). Remove the beef from the pan and leave to cool, then brush all over with the mustard.

3

Lay a sheet of cling film on a work surface and arrange the Parma ham slices on it, in slightly overlapping rows. With a palette knife, spread the mushroom paste over the ham, then place the seared beef fillet in the middle. Keeping a tight hold of the cling film from the edge, neatly roll the Parma ham and mushrooms around the beef to form a tight barrel shape. Twist the ends of the cling film to secure. Chill for 15-20 mins to allow the beef to set and keep its shape.

4

5

Roll out the puff pastry on a floured surface to a large rectangle, the thickness of a £1 coin. Remove the cling film from the beef, then lay in the centre. Brush the surrounding pastry with egg yolk. Fold the ends over, then wrap the pastry around the beef, cutting off any excess. Turn over so the seam is underneath, and place on a baking sheet. Brush over all the pastry with egg and chill for about 15 mins to let the pastry rest. Heat the oven to 200°C, 400°F, gas mark 6. Lightly score the pastry at 1cm intervals and glaze again with beaten egg yolk. Bake for 20 minutes, then lower the oven setting to 180°C, 350°F, gas mark 4 and cook for another 15 mins. Allow to rest for 10-15 mins before slicing and serving with the side dishes of your choice. The beef should still be pink in the centre when you serve it.

Top Tips

Shutterstock

Served alongside sautéed potatoes and wilted baby gem lettuce – with classic mustard vinaigrette making a great dressing – this is a hearty, rustic dish that the whole family can tuck into.

Ingredients (serves 4) • 400g flat cap

mushrooms, roughly chopped • sea salt and freshly

ground black pepper • olive oil, for cooking • 750g piece of prime

beef fillet • 1-2tbsp English

mustard • 6-8 slices of

Parma ham • 500g ready-made

puff pastry • flour, to dust • 2 egg yolks, beaten

To keep the pastry light and crisp, wrap the beef and mushrooms in a layer of Parma ham to shield the pastry from moisture and prevent it from becoming soggy. Carving at the table can bring everyone together, and it’s hard to go wrong with tender beef, juicy mushrooms and mustard. To advertise email sales@thehorsleydirectory.co.uk or call 01483 338 288

Martin Lewis

Money on my mind... The UK’s leading money saving expert, journalist and presenter who has kept millions of pounds in people’s pockets as well as lifting the lid on the threats and dangers we need to be aware of as consumers. Martin Lewis looks at food waste in these post-pandemic days. I noted to a friend the other day that, in wake of food shortages during the first lockdown, I have seen much greater understanding and willingness of people to feed their families more responsibly.

Shutterstock

The average food waste bill in the UK still stands at around £750 per year, and that’s horrendous. Remember the difference between Use By and Best Before, and it will save you hundreds each year.

If you have any packaging that has a date on it, if it’s after that date, lots of people just sling the food. Well, let’s remember – Use By is a health notice to you. If something is beyond its Use By date, you need to chuck it in the bin. Best Before is the manufacturer’s guide to optimum quality. All it means is that the item will be in its best possible condition before this date. The day after a Best Before, it’s still perfectly legitimate to eat. With some canned goods, it’s still perfectly okay to eat them three or four years after the Best Before date. So, use your nose to smell it, use your eyes to look at it, use your senses to decide whether it’s right for you.

The Horsley Sunflower Challenge 2022 As summer approaches, everyone is warmly invited to fill Horsley with sunflowers - planting seeds at home or joining in with a community sunflower field in the grounds of West Horsley Place.

In May sunflower seeds can be planted directly into the soil outside. If you do this at home, consider planting them in the front of your house for all to see; residents, community groups and local businesses are all invited to join in.

We will be gathering pictures each step of the way from little seedlings to garden giants. There will be plenty of prizes for the tallest, the biggest head and the finest photo - and other categories along the way. Look out for more news about the Horsley Sunflower Challenge soon. Final entries 1st September 2022. Winners will be announced at a Village Garden Party at West Horsley Place on Saturday 10th September 2022 when we celebrate our efforts and delight in the sunflower together.

This much loved flower blooming from summer into autumn is easy to grow from seed, taking 11-18 weeks to flower from sowing. They produce long-lasting flowers that look fantastic at the back of a border, standing tall in pots or as a cut flower in a vase.

Todd Trapani @unsplash

The last few years continue to take a toll for many in our community. The mental health charity Mind is an advocate for community outdoor projects “Spending time in green space or bringing nature into your everyday life can benefit both your mental and physical wellbeing”. Join with neighbours at West Horsley Place as we plant, weed, water and care for seeds together in the community sunflower field.

Aaron Burden @unsplash

The sunflower is packed with meaning. Whilst our idea was sown long before recent world events, its symbolism as the national flower of Ukraine is all the more poignant. It is also the emblem of hidden disabilities.

VISIT WEST HORSLEY PLACE THIS SPRING

FEATURE ARTICLE

West Horsley Place reopens to visitors this spring with a programme of special events, guided tours and open days. On 12 May (7pm), award-winning author and classicist, Daisy Dunn, will give a talk about her latest book, Not far from Brideshead. Recognised as one of the UK’s leading women historians, Daisy Dunn lives locally and this will be her first event at West Horsley Place. Set in the world that Evelyn Waugh immortalised in Brideshead Revisited, Daisy’s new book tells the true and often funny story of the thriving of knowledge and spirit of fun and foreboding that characterised Oxford between the two world wars. The first West Horsley Place BioBlitz takes place on 14 May, a free wildlife festival and community nature survey that focuses on finding and identifying as many species as possible on the estate across a 24 hour period. We’ll have activities for all age groups, including guided walks, conservation and wildlife recording with Surrey Wildlife Trust and local experts. We’ll start early with a dawn chorus walk, and end with an evening bat walk. Following their sell-out event last summer, the Three Inch Fools return on 28 May to entertain all with The Gunpowder Plot – whose most notorious ‘plotter’, Guy Fawkes, was a footman at West Horsley Place. The performance promises fun for all the family and will be staged outside in Home Paddock. Gates open at 5pm and the show’s at 6pm – bring a picnic!

the main rooms of the house, with volunteer stewards in each room to provide information and answer questions. Visitors can enjoy the walled gardens, where there will be a pop-up café to buy refreshments, and also see the GladRags display. In June we’re holding our next ‘Breathing Spaces’ course, in partnership with Woking Mind, a chance to explore mindfulness and wellbeing in a natural setting. The free course is designed to benefit people experiencing mild to moderate anxiety and/or depression, with sessions in the wonderful natural setting of our estate. For further information and to book go to westhorsleyplace.org.uk

Available on dates throughout May and June, the Nooks and Crannies Tour takes visitors to every corner of the house, including areas not previously seen by the public. Guided by one of the charity’s expert volunteer guides, the Tour is an opportunity for visitors to learn about the history and heritage of West Horsley Place and to discover stories from its 600 year past. In addition there will be an Open Day, on 15 May. Visitors will be able to walk through To advertise email sales@thehorsleydirectory.co.uk or call 01483 338 288
