Dear The Wine Ladies, With the holidays around the corner we are looking forward to enjoying at least two, possibly three turkey dinners! We are up for the challenge this year and have offered to host one of the dinners.

We were wondering what might be a couple of wines that would pair well with the big bird, and our homemade cranberry sauce! We’d like to offer a couple of red and white wine choices. - Selena
THE WINE LADIES Q&A Dear Selena,
One of the great things about this season’s favourite bird is its ability to pair well with an array of different wines. Because the bird is fairly neutral in flavour, it can act like a chameleon, adjusting to how it partners with a wine, depending on how it is prepared, and with what it is served. Our go-to wines are fruit forward with good acidity for the whites, and fruit forward with ample acidity for the reds, along with slightly softer tannins. The big tannic reds that pucker your lips and dry out your palate are best left for the juicy red meat dishes. Specifically to your homemade cranberry sauce, a staple at our dinner table as well, you can never go wrong with a fruity delicious ZINFANDEL or a SHIRAZ. We’ve also been on a “Rhone Valley” kick in the last little while enjoying fabulous, juicy reds such as Chateauneuf-du-Pape and Gigondas, or blended wines that include the grape Grenache, becoming increasingly more popular every day. When it comes to the preparation of the bird, while still on the reds, if simply roasted with less powerful or strong tasting spices and stuffing, you could opt for another of our favourites, a lighter bodied PINOT NOIR, juicy with good acid and delectable flavors of cherries and cranberries, or a CRU BEAUJOLAIS, also bright and fruit forward. For your white wines, whether simply prepared or more elaborate, think crisp and fruity with possibly a hint of sweetness.

Our very own cool climate RIESLINGS, with refreshing acidity, either dry or off-dry, spot on, for something a little different Austria’s Gruener Veltliner or an Alsatian Gewurztraminer would work. If you are going to go with the tried and true CHARDONNAY, best stay away from too much oak. SAUVIGNON BLANC is simply a crowd pleaser, definitely aromatic, crisp and dry, surely it too will find a partner dish on the table and most certainly multiple fans of this ever-popular varietal. One final remark, in our humble opinion, a real star, that will bring the party to life and elevate the cornucopia of flavours, is a SPARKLING WINE, elegant and versatile, the perfect partner for this festive holiday meal.

FREEDOM On November 11th, the Blessed Trinity Catholic School Community stood in solidarity to commemorate the achievements and sacrifices of the Canadian men and women who have served and continue to serve in our military. Special guests included Director of Education John Crocco, Member of Parliament Dean Allison, Mayor Bob Bentley of Grimsby, Mayor Douglas Joyner of West Lincoln, and Councillor Joanne Johnston of Grimsby. The ceremony featured the Royal Canadian Air Cadets, prayer, reflection, video, drama, lyrical dance and music from our amazing and talented choir and our very own Mrs. Biega on the violin. The entire service was presented and lead by Blessed Trinity students under the direction of teachers from the Social Sciences and Arts Department. Principal Joseph Zaroda concluded the ceremony by emphasizing the importance of student, staff and community involvement in Remembrance Day activities. Many thanks to the dedication of our staff and students to the Remembrance Day Ceremony and also the members of the school community who participated in this very special event. Lest We Forget. The 2016 Grimsby Santa Claus Parade was held on Saturday, December 3rd. Families lined the streets to enjoy the festivities and to catch a glimpse of Santa Claus. Parents and children were encouraged to bring food donations and letters to Santa.

This parade is about our community coming together to celebrate the holidays and give to our neighbours through donations to Community Care Thorold. The Thorold Santa Claus Parade is Thorold’s largest winter event. The parade has been a great success thanks to the support of the many businesses and organizations that participate each year. This year, the parade was held on November 26th.

DISCOVER A TWIST ON A
TRADITIONAL CHEESECAKE
Try something new, with this creamy and delicious no-bake cheesecake recipe. This tropically-inspired spin on a traditional cheesecake features a richly flavoured toasted coconut crust, topped with a creamy avocado and zesty lime cream cheese blend.
“It's a gorgeous shade of lime green that contrasts beautifully with the garnish of red raspberries,” says Tom Filippou, executive chef for President's Choice cooking school. “This velvety dessert has the perfect amount of texture and will leave guests stunned once they learn the key ingredient.”
AVOCADO LIME + COCONUT NO-BAKE
CHEESECAKE Makes: 12 Servings
INGREDIENTS • 3/4 cup (175 mL) shredded sweetened coconut • 3/4 cup (175 mL) graham cracker crumbs

Line bottom and sides of 9-inch (2.5 L) spring-form pan with parchment paper. STE P 02
Toast coconut in dry frying pan over low heat 5 to 7 minutes, stirring frequently until golden and fragrant. Set aside to cool. STE P 03
Stir together coconut, graham crumbs, and butter. Press onto bottom of prepared pan. Chill 15 minutes.

Meanwhile, place sugar and lime zest in food processor; pulse on and off until well-mixed. Add cream cheese; process until smooth. Add avocado and lime juice; process until completely smooth.

Bring cauliflower from white tablecloth restaurants to your decorated table this holiday season. This rich comfort dish is perfect for entertaining and you can find all the ingredients you'll need to make it at your local Walmart Supercentre.
CAULIFLOWER GRATIN Serves: 8
INGREDIENTS • 1 large cauliflower, cut into florets (about 8 cups) • 1/4 cup plus 1 tbsp (75 mL) butter, divided • 2 cloves garlic, minced • 1/4 cup (60 mL) flour • 1 tsp (5 mL) mustard powder • 2 cups (500 mL) milk • 1 cup (250 mL) Swiss cheese, grated • 1/2 tsp (2 mL) salt • Pepper to taste • 1/3 cup (80 mL) panko breadcrumbs

Preheat oven to 350°F (175°C). STE P 02
Boil cauliflower in a large pot of salted water until tender-crisp, about 5 to 6 minutes. Drain and set aside. STE P 03
Melt 1/4 cup (60mL) butter in skillet over medium. Add garlic and cook 2 minutes. Whisk in flour and mustard powder and cook 1 minute. Whisk in milk and cook until thickened, about 5 minutes. Stir in cheese and salt and cook until melted, about 1 minute. Season with fresh pepper. Add cauliflower and toss to coat. STE P 04
Pour skillet contents into 2 L baking dish and bake, covered, until the cheese mixture is bubbling at the sides of the dish; about 40 minutes. STE P 05

FANTASY OF TREES @ THE GRIMSBY MUSEUM
From November 25th to December 11th, the Grimsby Museum was the setting for the 17th Annual Fantasy of Trees, hosted by the Rotary of Grimsby. Over 40 beautifully decorated and brightly lit Christmas trees were on display, alongside festive wreaths. All the trees and wreaths were raffled off on the last day, where the lucky winners got to take home the tree and everything under it. All proceeds went towards helping local community charities.

On Saturday, November 26th, Shalom Manor & Gardens held their annual bazaar and invited the community for some food, fun and fellowship. There was lots of fresh baked goods, Croquettes, holiday plants and fresh flowers, farm fresh items and more to purchase and take home. There was a lucky draw to enter, vendor marketplace, boerenkool lunch, pictures with Sinterklaas and an Honour Tree. Outside Jackie and Calvin were making delicious Poffertjes.

On Friday, November 18th, Smile Town Dental Group welcomed Grimsby kids and parents into their offices to kick off the holiday season with a fun ornament painting event, thanks to Crock A Doodle in Grimsby. After painting their ornaments, the children had a “picnic” with many treats, the biggest hit being the two-bite brownies with a Santa Hat - so festive and delicious. After the picnic, the children were treated to a tour of the offices and rides on the chair. The children could hardly contain themselves as they waited for their present, which were opened to ohhs and ahhs.
