CANADIAN MEAL CANADA I50 TO CELEBRATE

Canada's 150th birthday is a time to celebrate all things Canadian. Being Canadian brings on thoughts of salmon swimming upstream to spawn, peameal bacon sizzling in a pan, beavertails on Ottawa's Rideau Canal, and tapping maple trees for fresh syrup when the cold winter starts to break. Sifto is celebrating its 150th anniversary along with Canada's milestone birthday. Sifto commissioned leading Canadian gastro chef Mike Shedden to create a perfect Canadian dish of salt-cured maple Canadian Atlantic salmon. This dish is best served cold on top of a dill crème fraîche with fried capers on French bread.

SESQUICENTENNIAL

DIRECTIONS

MAPLE SALMON

Mix all dry ingredients together in a mixing bowl until completely combined.

SALT CURED

Coat salmon in cure, and reserve 40% of mixture.

Serves: 25 1oz slices

INGREDIENTS

Lay salmon skin side down on a baking sheet with half of remaining cure underneath.

• 1 kg Atlantic Salmon, skin on • 1 kg Sifto Table Salt • 1/2 kg Granulated Sugar • 2 Oranges, zested • 250 g Cracked and Roasted Black Pepper • 1/4 cup Smoked Paprika • 3/4 cup Real Maple Syrup Best served on French bread with dill crème fraîche and fried capers.

Mix in maple syrup to remaining cure and coat exposed salmon in wet cure. STE P 05

Wrap tightly in cellophane and leave in refrigerator for three days. STE P 06

Flip salmon once every 24 hours for best results. STE P 07

SASHBEAR WALK RAISES MONEY TO PROVIDE LIFE SKILLS COURSE THAT CAN PREVENT YOUTH SUICIDE

Jovanna Kalaba knew Sasha Menu Courey who died by suicide while struggling with Borderline Personality Disorder. They were on the same swim team and both had aspirations. Now years later, Sasha’s memory is honoured by the annual Sashbear Walk, which occurred May 28th along Sunnyside Beach’s Boardwalk, near to her lakeside viewing bench that is dedicated to all of those who are lost by suicide. Jovanna coordinates events at the mental health transitional home, George Herman House, of which I, your author, am a volunteered board member.

Borderline Personality Disorder is a complex mental health problem. People with BDP have difficulty regulating or handling their emotions or controlling their impulses. They are highly sensitive and reactive; intense grief, terror, panic, abandonment, betrayal, agony or humiliation. They experience emptiness associated with loneliness and neediness. They may have paranoid thoughts, impulsive and harmful behaviours such as substance abuse, overeating, gambling or high risk sexual behaviours. But most importantly, they are chronically suicidal and many resort to self harm.

BPD actually affects more people than Bipolar or schizophrenia — and comes in episodic moments. Those impacted don’t understand why they can’t regulate their emotions. With assistance, those who can access therapy can live happy and productive lives. 1 in 5 seek help, 4 of 5 benefit from treatment. Roncesvalles resident Karen Black turned to The SashBear Organization when she herself needed support. She and husband Herb Forrest have learned that a loving support system is integral to maintaining a supportive relationship with their child. In appreciation, Karen volunteers her skills and time to the SashBear organization and Herb is qualified to teach coping skills classes to other parents, through the 12 week program that the SashBear Walk raises funds for.

Sara Downing, who runs the Village Healing Centre in Roncy, also had the opportunity to teach the coping skills program at CAMH and recognizes the need to provide such classes to families who lovingly stand by their family members. This year’s supporters who rallied to raise funds and create awareness was a wonderful mix of families, concerned citizens, compassionate well wishers, local politicians, Olympic Swimmers Heather & Brittany MacLean (who knew Sasha from their Swim Club Days), distinguished Psychologists, Professors & Doctors at the forefront of research, training and the treating of BPD youth and also the recipient of Sasha’s heart, gifted through the organ donor program. www.sashbear.org

Long time merged, with a linage of 175 years of combined efforts T.P. Hort recently held a plant sale at Roncesvalles United and attracted many eager shoppers on May 13th. The Free admission event focused on pollinators, native and hard to get plants. A Hort Cafe was set up as well as a Garden Flea area with retail vendors and arts and crafts.

“REDDY” FOR THIS? INSIGHTFUL, HUMOROUS, DIVERSE

oving to a new country, even one with a stellar reputation as Canada, is often not what immigrants expect. This is the main theme of Pratap Reddy’s debut collection of short stories Weather Permitting & Other Stories, published by Guernica Editions in 2016. This collection examines the lives of South Asian men and women who come to Canada for a better life only to experience the realities of winter, the difficulties of finding a job, and the changes and stressors that immigrating brings to their personal lives. “As an immigrant one must learn to not just eat but feast on humble pie.” Reddy is a talented, insightful writer who brings to life the contemporary landscape of our home: Mississauga, Toronto and Brampton, with astute descriptions. “...it snows for the first time. It starts off gently like a shower of jasmine petals but soon turns into an uproarious maelstrom... In the afternoon, the sky clears as if by magic and sunlight spills like molten gold on the landscape.” Set in the Greater Toronto Area with landmark features such as The Path, Square One, Bombay Bhel, this modern work captures our now, and Reddy’s characters are impossible to forget. They are vulnerable, sometimes misguided yet determined and strong as they struggle to find their place in a land vastly different from the one from which they came. at times, humourous: “When the airplane banked, Toronto’s sprawl swung into view and I had my first glimpse of the CN Tower, rising like an upended middle-finger.” One character, Kumar, known for giving unsolicited advice but is indecisive and can’t get his life together, tells another immigrant: “I advise you to take the road test in Burlington or St. Catherine’s you can get licenses faster there.” “What about Brampton?” I asked. “If I were you, I’d avoid it like the plague.”

As with many short stories, the denouement is sometimes ambiguous. I was left thinking, “not yet. I want to live in this character’s life longer.” But that tends to be the nature of literature and the short story. Reddy resolves this by weaving some of the characters into each other’s stories. They reappear as an old friend might in one’s life. The new Canadian literature is as diverse as its people. Reddy’s collection proves that good literature is easy to read and hard to put down. He uses common, everyday language with perception and insight. Reddy, who immigrated to Canada from India, is a writer to read and follow. As a child, he thought writers were magicians, the most wonderful artists. Weather Permitting & Other Stories is magical and a most wonderful and engaging read.

The event is hosted by the Foundation’s Ladies Auxiliary who — to date, have proudly raised a million dollars for the Roncesvalles Village facility. CEO Catharine Kowalnko actively chipped in alongside volunteers, board of directors members and staff of the Not for Profit Senior’s residence & long term care centre. Since the 1970’s Copernicus Lodge has been committed to fostering a caring Christian, Polish environment for the area’s aging population.

With proceeds going to Sick Kid’s Diabetic Clinic, Cadillac Lounge owner Sam Grosso and his wife Lia Lyons - Grosso hosted a fundraising benefit on May 13th. Their son Francesco who lives with Type 1 Diabetes, is the inspiration behind the annual event, now in it’s seventh year. Bluesy jazz singer Tia Brazada performed to a full house crowd and an amazing time was had by all.
