WHAT WILL IT

The year of 2018 has just been born. It's new, still in diapers, needing nurture and direction. What will it become when it's full grown? Will it be beautiful or a monster? Should we look forward with hope or in fear? Let's look beyond our usual New Year's resolutions. Losing weight is great after the month-long dietary crime scene we call December, but my heart burns with questions, not calories. What kind of world do we want to create this year? "Create?" my skeptical side interjects. "But the world is already here! You need to figure out how to survive, then how to get ahead, not waste your time on this "creating the world' nonsense." But as the years fly by, I'm wisening up to the fact that even my smallest actions lead to reactions that work together, making the world a better or worse place, for me and everyone else. So then, let's return to the question at hand. What kind of world do we want to create this year? Do we want a world of peace or tension? Love or indifference? Goodwill or hatred? Take a moment to think about the kind of world you want to live in.

For the list-oriented among us, here's a four-step process for designing a great year.:

Next, consider the smallest possible steps you could take to make the world just a little bit more like that. For example, do you want to make the world a friendlier place? Start with a smile, eye contact, and saying hello to one person at a time. Don't make grandiose plans just yet. A thousand little gestures carry more weight than a few spectacular events. Once you find something that's working, keep doing it. The magic in the little things is that repetition turns them into habits, and your habits become your character. By training yourself to perform, for example, loving acts, you become a more loving person (and if our world needs anything this year, it is more loving people). Don't forget to examine the results you're getting once in a while. Learn from what's working and change what's not.

Think - What impact would you like to have?

Act - Do something to make that happen.

3.

Examine - Check your results and make changes as necessary.

4.

Repeat - Continue until actions become habits.

So what will 2018 look like when it is all grown up? We decide, every day, through our actions. None of us can single-handedly eradicate world poverty or war, but we can do something to help one person at a time, from one moment to the next. REPEAT, REPEAT, THEN DELETE

odern digital photography makes it easy to take multiple shots of the same subject without added cost. There are several reasons to always take several photos if possible. First, one of the photos may be out of focus or you may have cut off an important element. Second, especially with more than one person in the photo, someone may have closed eyes, be looking elsewhere or be unflattering in some other way. For example, in Photo 1 one brother has closed eyes and in Photo 2 the other has downcast eyes. In Photo 3, both have their eyes open and engaged with the camera. That one was selected for the cover! Third, you may wish to take multiple shots to include more or less background, with a view to editing later. Fourth, especially with action photography, you will have an opportunity to select the best image. Photos 4 and 5 were taken exactly 1 second apart. Finally, once you have selected the best image to work with, DELETE the rest. It will make it easier to find your best photo in your collection and will not waste the storage memory of your smartphone or computer.

Beginning Saturday, December 16th, the Rotary Club of Guelph had their annual Sparkles in the Park at Riverside Park. Until December 31st, Sparkles in the Park, showcased spectacular displays of Christmas lights all around the park. Afterwards, families could ride the carousel for free. On December 31st, at 8:00pm, there were fantastic fireworks on display for all to enjoy. 02

Probably a little slower than most to jump on the bandwagon as a fan of Australian wine, however, my latest discovery was a delicious Shiraz. It came from a biodynamic winery called Paxton and the wine was Paxton MV Shiraz. Can you tell me a little about this winery and how being biodynamic affects the taste of a wine? I am familiar with organic wines but not with biodynamic. - Jeremy

THE WINE LADIES Q&A Dear Jeremy, Absolutely, we’d be happy to. It’s never too late, or better late than never to enjoy and discover new wines. PAXTON, located in McLaren Vale South Australia, is a family owned winery founded in 1979 by David Paxton. Mr. Paxton is recognized as one of Australia’s most highly respected viticulturists, growing grapes of exceptional quality for over thirty years, all biodynamical. The company owns and manages their own vineyards exclusively which are spread across various sites and soil types in the region. Their goal is to showcase the exceptional quality of the fruit, the expression and natural diversity of the grapes, with a particular emphasis on Shiraz, which is well regarded as the region’s top performing variety.

THE PAXTON MV SHIRAZ YOU ENJOYED IS MADE WITH GRAPES from four of the six biodynamic properties they own and manage. MV ‘McLaren Vale’ or ‘Multiple Vineyard’ “was developed to highlight optimum fruit flavours” says David Paxton. You stand in great company as a fan of this wine, as James Halliday, guru critic of Australian wine rated the 2015 MV Shiraz 92 points. David Paxton best describes how a wine may be impacted by biodynamic practices. “Biodynamic is the most advanced form of organic farming. We use natural preparations and composts to bring the soil and vines into balance, resulting in wines that truly showcase our McLaren Vale vineyards.” A few examples of this is the incorporation of bee hives in the vineyards which improves grape pollination, and the use of cow manure as a compost that comes

exclusively from Paxton’s own small herd of cows. Why? Because manure tainted with chemical intestinal worm treatments make poor compost and their own cows will ensure the integrity of the compost.

GENERAL TSO’S

CHICKEN WITH BROWN RICE, BROCCOLI & ENOKI MUSHROOMS sually General Tso’s Chicken is deep fried and loaded with unhealthy sodium, sugar and fat. This is a clean version that you can feel good about serving to your family.

Serves: 2-4

INGREDIENTS • 1 cup Brown Rice • 2 cloves Garlic, chopped • 1 head Broccoli, broken into small florets • 1 package of Enoki Mushrooms, bottom removed and mushrooms broken apart a little

F OR THE C H ICKE N • 2-3 Chicken Breasts, cut into 2" cubes • 3 tbsp Soy Free Coconut Aminos or Low Sodium Tamari • Pinch of Red Pepper Flakes, optional • 1 tsp Dark Sesame Oil • 1 tbsp Maple Syrup • 5 tbsp Cornstarch

DIRECTIONS STEP 0 1 Cook the brown rice according to the package or your rice cooker instructions.

STEP 0 2 FOR THE CHICKEN: In a medium size bowl mix together the cut up chicken with the coconut aminos, red pepper flakes, sesame oil and maple syrup. Marinate for 1 hour at room temp or all day (even overnight) in the fridge. Bring to room temp for 1 hour before cooking.

STEP 0 3 FOR THE SAUCE: Using a whisk, mix all the sauce ingredients in a bowl or measuring cup. Leave the whisk in there, you will need to stir up the cornstarch again before using it.

• 3-4 tbsp Grapeseed Oil, divided

• 1 bunch of Green Onions, cut into 3-4" segments

Drain the chicken, put it in a zip top bag and toss the cornstarch into it, make sure all the pieces are coated evenly, shale off excess. Heat a wok or heavy fry pan over high heat. Add about 3 tbsp of the grapeseed oil, let heat until shimmering. Add the chicken to the hot oil, toss and let the chicken brown on the first side, toss again and continue to let the chicken brown all over, this will take about 6-7 minutes, remove from the pan.

STEP 0 5 Add a little more grapeseed oil, add the green onion and whole chillies, toss until the green onions have darkened in spots. Add the sauce, let it bubble, add the chicken back to the pan, toss for 1-2 minutes, remove the chicken and green onions/chilies to a serving dish.

Add a last little bit of oil to the pan then add the garlic, cook for a minute or so. Add the broccoli to the pan, toss, add about 1/4 cup water, tossing continuously for about 3-4 minutes, the pan will dry out a little. Add the enoki mushrooms, toss with the broccoli and break them up while tossing. Cook until the mushrooms have wilted. Add the veggies to the serving dish with the chicken and serve with brown rice.
