pick the best cuts of meat To prepare the best dishes, you need to start with the right cuts of meat.
Always look for pieces that have some marbling to them. Fat serves two purposes, adding both flavour and moisture to the meat.
As it melts, fat moisturizes the meats. When the drippings hit the hot coals underneath, you add a different level of flavour. Pork and chicken can be wet-brined for a couple of hours in a simple brine of 4 liters of cold water, 3/4 cup of kosher salt and 2/3 cup of sugar. To increase flavour, add herbs and spices. >>>

aking fish in parchment allows for the flavours to really concentrate. The steam helps to make a perfect sauce and the cleanup is minimal! I often make this when I need an easy dinner for 2 or 4.
Ingredients 3/4 pound of skinless rainbow trout or salmon, one piece 2 zucchinis, spiralized or 2 cups prespiralized zucchini
Directions Step ONE On the work surface, lay the sheet of parchment paper lengthwise. The piece of parchment should be about 4 times the length of the fish. Step TWO Using the lower half of the parchment paper, lay down the spiralized zucchini (this will be the â€œbedâ€? for the fish). Tuck about half the tomatoes slices and half the red chili rounds in the zucchini noodles. Drizzle with 1 tbsp of the oil, about 1 tsp of the balsamic, sprinkle with salt and pepper.
1/2 of a fresh long red chilli, sliced in rounds 6 campari tomatoes, each sliced into 3-4 rounds 1/2 bunch of asparagus, ends removed and stalks cut in half 1 tsp sea salt, divided Freshly ground black pepper to taste 2-3 tbsp extra virgin olive oil 1 tbsp aged balsamic vinegar
Step THREE Lay the fish fillet on top of the spiralized zucchini and tomato bed. Step FOUR Drizzle a small amount of the oil on the fish and season with salt and pepper.
Serving Suggestion: I like to serve this over a bed of brown rice, quinoa, or millet.
Distribute the remainder of tomatoes, red chili rounds and all the asparagus spears on top of the fish. Step SIX Drizzle the contents of the package with the remainder of the oil, balsamic vinegar, salt and pepper. Step SEVEN Fold the upper half of the parchment paper over the vegetable/fish mound (you should leave enough space around the food to allow the air to expand and circulate). Starting from one corner, make a fold in the parchment, staple that fold together. Make very tight, closely overlapping little folds starting from one corner and work your way around, towards the opposite corner. Fold the last fold over itself and staple this fold to itself and then a few of the folds along the parchment paper. Place the package on a cookie sheet and bake for 20-25 minutes. Step EIGHT Cut the package open and either slide the contents onto a plate or serve directly from the open parchment (you can cut away the top flap and staples).

MORTGAGE? There's so much to think about when renegotiating your mortgage. You may be shopping around for the best rate, you may have to pay fees to switch lenders, and your bank will likely offer you a readvanceable mortgage.
Some banks bundle other financial products, like car loans or credit cards, together under a readvanceable mortgage — a term mortgage combined with a home equity line of credit. This is typically offered at an attractive interest rate. While a readvanceable mortgage has its benefits, be aware of the fees that apply and the risks of tying different credit products together before signing on the dotted line. HELOC debt is different than other forms of debt. Unlike a credit card or unsecured line of credit, a HELOC is secured by using your home as collateral. While HELOC interest rates are often lower than other forms of credit, they are variable. At any time, banks can demand that you repay your HELOC or increase your interest rate. If you can't pay back the money you owe, you may lose your home or have no choice but to sell it.
Compared to a home equity loan — a lump sum loan with a fixed interest rate, term and repayment schedule — a HELOC works more like a credit card. Your available balance decreases as you borrow and increases as you pay it back, up to a certain credit limit. Some HELOC credit limits increase automatically as you pay down your mortgage. To switch lenders the next time your mortgage is up for renewal, you may first need to repay all credit products tied together under your readvanceable mortgage. And there are additional legal fees you wouldn't incur when moving a traditional mortgage. When deciding your strategy, think longterm. Are you planning to use your home's equity to fund your retirement? How long do you plan on staying in your home? How will you use your HELOC — for renovations, to invest, to consolidate higher interest debt, for emergencies, for a second home, for a vacation? How would interest rate hikes, job loss or illness impact your ability to repay your debt? Would a HELOC tempt you to use your home like an ATM?
