s told by the famous self-help series, “Chicken Soup for the Soul,” chicken soup is not just great for your body, but it is a remedy for your mind as well. Whether to recover from a nasty cold, an emotional "moment", or simply a miserable winter day, there is no misery that a bowl of chicken soup can’t fix, or at least make a little warmer. I was raised with a similar idea; that chicken soup is the ‘Jewish penicillin.’ I’m sure other culture’s and their respective chicken soups have the same belief, and for a good reason. Generally speaking, chicken soup is wonderful for you. The warm broth fills your stomach, healing sore throats along the way. Nutrient-rich ingredients such as poached chicken and veggies give you energy, while the savoury fla-
vour ignites your appetite. Some might say that this passed-down version of chicken soup is just perfect. While I don’t completely disagree, there are a few additions that can elevate the healing properties of this classic dish. By making it with ginger, turmeric and mushrooms, chicken soup can become a truly a powerful medicine for your gut and overall health. The combination of these superfoods makes chicken soup an extremely effective medicine for the whole digestive tract. If you are suffering from inflammation in the gut, or simply need to keep an eye on symptoms, this recipe should be your go-to.

DIRECTIONS STEP ONE: Place the shitake mushrooms in 1 1/2 cups of boiling water, let them soak while you prepare the rest of the ingredients. STEP T WO: Rinse and dry the chicken thighs. STEP THREE: Heat the oil in a medium size soup pot over med-low heat. When the oil is hot, add the chicken and cover the pot. Cook for 10 minutes, turning once or twice. The object is to steam the chicken not to brown it; you want to get rid of the pink colour. STEP FOUR: In the meantime, strain the mushrooms, reserve the liquid and slice the mushrooms into thin slices (getting rid of the woody stems). STEP FIVE: Stir in the leeks, ginger, turmeric and sliced mushrooms to the soup pot with the chicken. Cover the pot and cook until the leeks begin to soften, about 5 minutes.

INGREDIENTS STEP SIX: Add the bone broth, water, mushroom liquid, coconut aminos, and apple cider vinegar. Bring to a vigorous simmer over high heat. Lower the heat, maintain a gentle simmer and cook uncovered for 45 minutes. The chicken should be very tender and falling off the bone. Remove the chicken and set it aside.

STEP SEVEN: In the meantime, bring a large pot of salted water to a boil and cook the noodles according to package directions, rinse in cold water, set aside.

STEP EIGHT: Remove the chicken meat from the bones, chop it up and put it back in the pot with the soup. Taste for salt and pepper.

As a designer, I know that the finishing touches are what elevate a space from good to great. These are the small details that are often overlooked. Whether it be a hard element like cabinet knobs or soft finishings like pillows and mirrors, these are the small seemingly insignificant items that will truly give your space that designer look. Once the reno is complete and the hard finishes are executed seamlessly, it’s those added decorated touches that will finish it all off and pull the design together.
HERE ARE A FEW WAYS THAT WE LIKE TO ADD THESE EXTRA FINISHING TOUCHES. DR AWERS & DR APES You may not think too much about it but taking a standard nightstand and switching out the cabinet knob will add unique impact to your space. We often take a storebought wood night stand and replace the standard knob with a new shiny polished nickel pull. If you’re looking to crank up your home’s #trending factor, hardware is a great upgrade. Choose impactful knobs and pulls to transform minimal cabinet fronts and drawers. When it comes to drapery hardware, look for quality handmade European drapery finials, from companies like Deco & Deco, which offer a vast array of finishes and styles to add a unique touch to existing and new cabinetry and window rods throughout your home.
FLOATING SHELVES Adding floating shelves to a feature wall can provide added function and visual interest. This pebble wall was pretty, but adding the live edge wood shelves enhances the beachy feel and adds a place to set your book and a glass of wine! â–š
WHEN IN DOUBT, ADD MIRRORS IN A ROOM FOR EXTRA GLAMOUR LIKE WE DID ABOVE THIS FRESHLY PAINTED DRESSER. MIRRORS Groups of three or odd numbers are always a goto. They add great visual interest and enlarge the space for any room.
CUSHIONS Always look to adding in unique textural toss cushions. Throw pillows that are 18” or less can read store bought. We often add custom pillows in our designs, but if you are looking for ready-made, search for larger pillow sizes. They will make the whole look of your living room more luxurious. As an Interior Designer, I always start any renovation project with big picture planning and then round out the design with these tiny last details. Creating a beautiful home is all about those finishing touches. It’s these final elements that pull the space together and help turn a house into a home. So, whether you’re planning a small scale reno this year or a small re-decorating project, don’t forget the little finishing touches that will personalize any space you call home. ◆
