Fabulous Freezer Meals

Short on time each day when it comes to making dinner? Consider using your freezer to cut your preparation time. Whenever you make a meal, make extra to freeze for later. You will save time by doing all your chopping, preparing, and cooking at once. You can also make a whole day or two of it. Choose a weekend when you are not doing other things and make several meals at once. By freezing them ahead of time, you will have ready to heat and eat meals any day of the week. When preparing your foods for freezing, use the smallest possible containers you can. They freeze faster and take less time to reheat. For example, if you assemble a large casserole, freeze it in several small containers. When it is time for dinner, simply take one or two containers out, reheat, and dinner is served. If you are freezing individual items such as meatballs or stuffed pasta shells, donâ&#x20AC;&#x2122;t pile them into a container and freeze all together. Place the individual items on a wax paper lined cookie sheet, place in your freeze until frozen, and then place the items in a freezer bag. You can then take out as many as you need at one time. If you are short on casserole dishes, this trick is perfect for you. Spray your casserole dish with cooking spray, line with foil, and spray the foil with cooking spray. Assemble your casserole in the foil-lined dish and freeze. When it is frozen, remove the filled dish from the freezer, dip the bottom of the dish in hot water and your frozen casserole will pop right out. Wrap the frozen casserole well in foil and return to the freezer. When it is time to cook your meal, unwrap the frozen casserole, remove all the foil and return it to the dish it was initially frozen in.
