COURSE OF STUDY
In this program, you will take 30 credits of hands-on culinary arts courses over two semesters (a total of 30 weeks). You will:
• Learn the culinary fundamentals, from knife skills to sauces to palate development.
• Develop your understanding of ingredient function and flavor dynamics.
• Prepare the cuisines of Asia, the Americas, and the Mediterranean.
• Explore baking and pastry, fabricate proteins, and master plate presentation.

Contemporary Topics in Culinary Arts
Think of this as your culinary sandbox. Through an experimental kitchen approach, you’ll explore taste and flavor; plant- and protein-based diets; food and wine pairing; healthy cooking techniques; and the flavors of the global kitchen.
Introduction to à la Carte Cooking

ELIGIBILITY
CIA’s ACAP is an accelerated program designed for individuals who possess a bachelor’s degree and have a serious interest in advancing their culinary knowledge.

Your application must include a 300- to 500word personal statement that describes your purpose for undertaking or continuing your study of culinary arts, your reasons for wanting to study at The Culinary Institute of America, and your professional plans and career goals. You may also explain any special circumstances applicable to your background and elaborate on relevant academic and/or professional achievements.

AFFORDABILITY AND FINANCIAL AID
When it comes to your career, you can’t afford not to jump on this opportunity. Fortunately, the CIA is committed to making your education as affordable as possible. You’ll find that our costs are comparable to those of similar colleges, and more than 90% of CIA students receive financial assistance in the form of state or federal aid, low-interest loans, college Work-Study, and/or grants and scholarships.
Scholarships specifically for this program include the ACAP Alumni Referral Scholarship (also available to international students), ACAP Merit-based Scholarship, and Vi Endowed Scholarship. The college also accepts the Post-9/11 GI Bill and participates in the Yellow Ribbon Program, making a CIA education very accessible to veterans who are eligible for these benefits. The transferability of credits you earn at The Culinary Institute of America is at the complete discretion of an institution to which you may seek to transfer. Acceptance of the degree or certificate you earn from the CIA is also at the complete discretion of the institution to which you seek to transfer. If the degree or certificate you earn at the CIA is not accepted at the institution to which you seek to transfer, you may be required to repeat some or all of your coursework at that institution. For this reason, you should make certain that your attendance at the CIA will meet your educational goals. This may include contacting an institution to which you may seek to transfer after attending the CIA to determine if your credits, degree, or certificate will transfer.
