Salmon Patties Crush up saltine crackers. Use a rolling pin or whatever works. Drain salmon. Mix all ingredients. Allow just a few minutes for the cracker crumbs to soak up flavor and get soggy. Form salmon patties by hand. Fry them in hot oil for 4-5 minutes. salmon (1 can – 14 oz) saltine crackers (1/4 of box) egg (1) oil (4 tbs), for frying patties

PLUS: Add more eggs and more crackers if you have a large group. You can substitute mackerel. Enjoy with creamed potatoes and green vegetables.
