Beyond Taste is an 8-piece series of tableware from stoneware. Each piece focusses on one or two sensory cues other than taste, always linked with either the origin or the preparation of the food.

BEYOND TASTE — An Interplay Of All Senses

Beyond Taste is based on the findings of a rather new scientific field called Gastrophysics. The idea behind it is simple: Eating is not just about the taste, but about the interplay of all senses. Gastrophysics is an interdisciplinary science that applies principles from neuroscience, physics and chemistry to understand the connection between the worlds of gastronomy and cooking. One aim of Gastrophysics is to unravel the sensory response while eating. And what was discovered, is that there is much more interplay between our senses than previously thought. We cannot consider one sense without considering the other senses too. All our senses are interconnected. We do not only react to the food we taste but also to what we see, hear, smell and touch. The so-called multisensory experience forms the basis of the project. Beyond Taste uses design as a tool to make the theories of gastrophysics more tangible. The project explores the synergy of food and design and investigates more unique ways to convey creativity – from the kitchen to the table – focusing on how dining pieces of various shapes, colors, textures and other sensory stimulations can influence our eating experience.

— The Future Of Tableware

Although food is one of the most satisfying pleasures of our life it is also the biggest struggle. But the satisfaction and the struggle are not just about food – the problem really lies in the way we consume it. In our everyday life, we have lost our connection to food. This is partly because more and more people are living in an urban environment and are not in contact with the origin of food or food production processes. We have created many barriers between our sensory perception and the world around us. The growing global trend to create eating experiences can be explained by the search for a balance to our fast-paced, digitized and abstract world. Through the synchronization of all senses, we can break through these barriers and food can be experienced more intensively.

TERESA BERGER

Teresa Berger is an interdisciplinary designer based in Vienna where she is working with clay as a primary medium. She is intrigued by the long tradition and history of ceramics with its possibility of adapting to our contemporary requirements and needs. Believing in an awareness of the past and re-examining what already exists, Teresa explores rites and traditions seeking their functionality in the here and now. Her work is characterized by creating functional objects, where material, form, color and construction form a harmonious entity. Her designs and ideas are marked by clarity, simplicity and functionality.

SMOKE DOME The Smoke Dome increases the flavors of smoked dishes by making the smoke visible and physically present at the table. A silicone dome filled with oak wood smoke acts as a stage for food. When lifting food off the dome, smoke is escaping through small holes and immediately engulfs the diner in fumes of woody smoke.

LANDSCAPE PLATE The Landscape Plate is inspired by a soft hilly landscape and offers a playful stage for various dishes. This plate is the perfect fit for classic beef tartar as well as a more challenging game of maneuvering a raw egg yolk through the hills to collect the remaining ingredients.

CAVIAR BOWL The feel of the hands is equally important as what the mouth feels. Touch is the largest and earliest developing of our senses and a direct tool for knowledge. The Caviar Bowl focuses particularly on this tactile experience: In a black bowl caviar, lentils, bubble tea and other dishes with a similar texture, can be served. The structure on the outside of the bowl resembles the structure of the food served – so the dish can be experienced with mouth, tongue and hands at the same time.

SEABED PLATE This piece of the series resembles the bottom of the sea and encourages the diner to use the fingers and experience the rock-like surface.

DRIPPING DISH The Dripping Dish consists of two parts. The top part acts as a strainer slowly releasing liquid into the bowl underneath.

ORGANIC MOTION Organic Motion is the ideal plate for any saucy dish. It is inspired by the Italian ritual of Âťfare la scarpettaÂŤ referring to the small piece of bread used to mop up the last bit of sauce on the plate.

DANCING BOWL The Dancing Bowl is a very soft silicone bowl resting in a dent on a plate. When touched with a spoon the bowl starts to wiggle in front of the diners' eyes.

SOUND DONUT The Sound Donut is a donut-shaped object which a mini-Bluetooth-speaker hidden inside. The speaker, paired with a smartphone, tablet or computer, plays spherical sounds that make chocolate taste sweeter or enhance bitterness.
