History Although the estate has a recorded history of over 900 years, it was John Penn (1760-1834), a soldier, scholar and poet, who was responsible for most of what can still be seen at the estate today. James Wyatt, architect to George III, worked on the development of The Mansion and monuments from 1790 to 1813. In 1791, Humphry Repton was commissioned to upgrade the Lancelot ‘Capability’ Brown landscaping of the grounds. The estate was used as a private residence until 1908. Nick ‘Pa’ Lane Jackson, founder of The Corinthians, purchased the estate and created Stoke Park, Britain’s first Country Club. One of his first objectives was to commission the famous amateur golfer and course architect Harry Colt to design the golf course. The first President was His Highness Prince Albert of Schleswig-Holstein and the first Vice-President was the Right Honourable Earl Howe. In his 1910 book, The Golf Courses of the British Isles, Bernard Darwin wrote:

Stoke Park is a beautiful estate, and there is very good golf to be played there. There are plenty of things to do besides playing golf. We may get very hot at lawn tennis or keep comparatively cool at bowls or croquet, or, coolest of all, we may sit on the terrace or in the garden and give ourselves wholly and solely to loafing.” With such highly acclaimed names associated with the estate, each of the Mansion rooms have been titled after the historical figures. We have our Lancelot Suite, named after Lancelot ‘Capability’ Brown, who designed our beautiful landscape, and our fantastic Coke Suite, which is named after Sir Edward Coke, a former owner of Stoke Park and a prosecutor of Guy Fawkes. When staying in our rooms, guests can enjoy being a part of the spectacular history here at Stoke Park. Dining Stoke Park boasts beautiful restaurants that allow each guest to dine on a wide variety of award-winning food. His impressive culinary background includes the role of Group Head Chef and right-hand man to renowned French Chef, Jean Christophe Novelli. With Novelli, Chris worked in various Michelin-star restaurants and in 2005, Novelli invited Chris to appear with him on TV’s Hell’s Kitchen. In 2014 Chris appeared on both BBC1's Saturday Kitchen and Channel 4's Sunday Brunch. Most recently in September 2016, Chris made his debut on BBC2’s Great British Menu. Chris has been delighting guests with his innovative take on modern British cuisine with European influences, always using quality ingredients which are local, fresh and seasonal. Chris was awarded the prestigious Hotel Chef of the Year Award at the Hotel Cateys, then in 2017 Chris was appointed the UK Ambassador for the Quality Standard Mark Beef and Lamb Scheme. www.braxtons.co.uk 13

In the movies Stoke Park has always had a close relationship with Pinewood Studios (5 miles away) and the British film industry. Two James Bond movies; Goldfinger (1964) and Tomorrow Never Dies (1997), were filmed here at Stoke Park. The epic duel between James Bond and Auric Goldfinger is still considered to be the most famous game of golf in cinematic history. The famous ‘mini-break’ and rowing scenes from Bridget Jones’s Diary (2001) were filmed in the Great Hall, the Pennsylvania Suite and on the lakes with Hugh Grant, Renee Zellweger and Colin Firth. In 2004, three movies were released all featuring Stoke Park: Wimbledon, Bride & Prejudice and Matthew Vaughn’s Layer Cake. Stoke Park features in many of Layer Cake’s scenes including the dramatic ending with Daniel Craig and Sienna Miller, filmed on the Mansion’s front steps. Guy Ritchie’s 2008 movie RocknRolla features the grass tennis courts and the 21st green. In 2010, we welcomed Madonna to Stoke Park to film scenes of her Wallace Simpson biopic, W.E and in 2012, Cameron Diaz and Oscar winner, Javier Bardem, shot scenes on the golf course for Ridley Scott's movie, The Counselor.

Golf Set within the 300 acre estate, the famous 27 hole Championship golf course is undisputedly one of the finest parkland courses in the country. The course itself has seen many impressive rounds in its prestigious history, including the first PGA Matchplay tournament in 1910 and James Bond's epic golfing duel in the 1964 classic 007 movie Goldfinger. The golf course was designed in 1908 by the acclaimed golf course architect, Harry Colt. It was opened in July 1909 and received immediate acclaim. “If there were no palatial clubhouse and no beautiful gardens and grounds, the course itself would take a great deal of beating anywhere. Colt, to whom belongs the credit of designing it, has scored a great success and his reputation as a green architect, already high, will be greatly enhanced by this the latest of his works.” Golf Illustrated, 1909. “It does have Colt’s finest single hole, the seventh, which was the inspiration for Augusta National’s notorious sixteenth.” Today’s Golfer, 1992. Brie-filled mini seaweed scones MAKES ABOUT 18 (SERVES 6) 135g ‘type 55’ plain white flour, plus extra for dusting 25g butter, softened 20g caster sugar 12g baking powder 1.5g fine sea salt, plus a pinch for the glaze 15g dried seaweed (sea lettuce or dulse), rinsed in cold water, patted dry and finely chopped 35ml milk 40g double cream Eggwash (1 egg yolk mixed with 2 tsp milk), to glaze 200g well-ripened Brie, rind removed

These little scones have a mild briny flavour, reminiscent of the sea, and make a novel amuse-bouche. Many countries and regions outside France – from Australia to England – now make excellent Brie. You could, however, use another soft rind cheese that is flavoursome without being too strong. To make the scones, put the flour, butter, sugar, baking powder and salt into the bowl of a stand mixer and mix on a low speed to a rough dough. Add the chopped seaweed and mix for 30 seconds, then add the milk and cream and mix again, still on a low speed, for about 3–4 minutes to a homogeneous dough. Bring the dough back into the middle of the bowl and then mix for another minute. Shape into a ball, wrap in cling film and refrigerate for at least 30 minutes. Line a baking sheet with baking parchment. Roll out the chilled dough on a lightly floured surface to a 1cm thickness and cut out rounds, using a 3cm plain pastry cutter. Turn the rounds over onto the lined baking sheet, arranging them in staggered rows.

TO SERVE 180g dried seaweed (a mixture of sea lettuce and Japanese red algae), rinsed in cold water, patted dry and cut into pieces 2 tbsp light olive oil Juice of 1 lemon Freshly ground pepper

Add a pinch of salt to the egg glaze and brush over the top of the scones. Leave to stand at warm room temperature (20–24°C) for 20 minutes. Meanwhile, preheat the oven to 180°C/Gas 4. Bake the scones in the oven for 7–8 minutes, until risen and lightly golden on top. Transfer to a wire rack and leave to cool. Using a serrated knife, cut each scone horizontally through the middle, about three-quarters of the way across. Place about 10g Brie inside each scone and close the tops. To serve, toss the seaweed with the olive oil, lemon juice and some pepper (don’t add salt as seaweed is already salty). Allow 3 scones per person and serve the seaweed in a bowl on the side.

Farandole of sweet and savoury spoonfuls SERVES 4 For the semi-confit cherry tomatoes and Greek yoghurt A little olive oil 24 small cherry tomatoes 140g Greek yoghurt Thyme and/or snipped tarragon leaves, to finish For the green olive tapenade and goat’s cheese 140g green olive tapenade 60g fresh goat’s cheese, cut into small dice or crumbled Extra virgin olive oil, to drizzle Oregano sprigs, to finish For the fig, prosciutto and mascarpone 2 very ripe figs, ideally red, cut into small dice 40g prosciutto, cut into very fine slivers

This canapé is a visual delight as well as a gastronomic one, with each spoon offering a distinctive flavour sensation. You could create your own spoons, including your favourite cheese, fruit or vegetables, and varying them according to the season. I like to serve two of each spoon to each guest. Assemble them just before serving. For the cherry tomato and yoghurt spoons, heat the oil in a small pan, add the cherry tomatoes and cook gently for 5 minutes to semi-confit. Transfer to a plate and leave to cool. Divide the yoghurt between 8 spoons and top each with 3 semi-confit tomatoes. Sprinkle with the herb(s) and grind over some salt and pepper. For the olive tapenade spoons, divide the tapenade between 8 spoons, top with the goat’s cheese and drizzle over a little extra virgin olive oil. Garnish with oregano sprigs and sprinkle with a little pepper. For the fig, prosciutto and mascarpone spoons, cut the figs into small dice and the prosciutto into very fine slivers. Divide the mascarpone between 8 spoons and top with the figs and prosciutto. For the melon and cherry spoons, scoop the melon into small spheres, using a melon baller, or cut into small cubes. Combine with the cherry preserve and cheese shavings and divide between 8 spoons. Simply arrange the spoons on individual plates or a large platter to serve.
