DAY 3 Taste of the Meadows

You will arrive to the town of Yaremche – the famous Carpathian resort area. Start your tour with a stop at the Ecotourism Visitor Center 26 of the Carpathian National Nature Park. The center serves as informational, interpretation, promotional facility for this locality. Learn here about all ecological walks through Chornogora range, interesting facts about the Eastern Carpathian flora and fauna, get acquainted with the Hutsul day-to-day life and plan your Carpathian vacations!

In the morning, the spectacular journey to the village Kryvopillya near the ancient village of Verkhovyna 29 is to be enjoyed. After check-in the farmhouse ‘Dil meadow’ 28 you will be guided up to the mountain pastures. Here in the sheep’s ‘Coshara’ (a traditional barn), milk and cheeses are produced in the old fashioned way. Here you can observe the production process, try to make cheese by your own hand and buy local foods from the farmers. We then journey higher into the mountains to the eco-farm on Berchyska meadow 30 This extreme trail is the real hunting for new experiences! Meadow Berchyska is a little visited location providing views across to the highest peaks of the Ukrainian and Romanian Carpathians. The host of the meadow will personally guide you around. You will learn the technology of the ecological production of dairy from sheep’s and cow’s milk and will visit a mini-mineral water plant. A unique feature of this farm is its location at the altitude over 1600 meters that is 300 meters above the height of the mountain meadows in Alps. The guesthouse ‘At Lesya’s’ invites you for a traditional Hutsul meal with a glass of liqueur, black bread, bacon and pickles all homemade. During the meal, it is traditional for Hutsuls (local people) pass toasts in a circular motion around the table accompanied by short and witty poems - ‘kolomyiky’. The first master-class of the tour will teach you to cook traditional borsch soup flavoured with thyme. Your next stop is the picturesque mountain village of Tatariv. Traditional breakfast in the local guesthouses are completely different from the usual B&B offer. In order to fully enjoy a delicious breakfast you should cook it first! The town of Kosiv is well known for its talented artists and artisans, and open-air souvenir market. You will experience the unique wood carving technique of local craftsmen and acquire sophisticated hand carved wooden plates and decorative axes. Henceforth you are entering the Carpathian plain area - Pokuttya. We promise, this region will captivate you! Stop in Tuchapy village for a visit of the House-museum. Visit the farm ‘Magura’ with dozens of rare fruit trees, berry bushes, nuts and crop plants grown at the farmstead plots. The host will treat you with fruits and tell the stories about the Pokuttya region. In the apiary you will witness the preparation of honey and if you find the courage (if you are not afraid of bee sting) – you can try to take honey from the honeycomb yourself and get the experience of beekeeping. Here, you can also buy unique natural antioxidants - honey, wax and beeglue (propolis). Option 1. The next stop is the camping ground Starytsya located near the Prut river. Here in the quiet backwaters you can learn how to fish in the river, enjoy and relax in the hayloft. Starytsya is the home to hundreds of species of plants and animals (yellow and white water lilies, tortoise and many others). In sunny season, the hosts will serve meals cooked in your presence on an open fire: fish soup, baked fish or meat with vegetables, baked potatoes and glass of house wine. Option 2. The route begins with a steep and winding ascent into the mountains covered with forest. At the top of the Gutâi Pass the picturesque landscape opens up before you. The road then continues its winding journey down the rolling countryside on the way to Deseşti.

Wandering around the town of Satu Mare offers the active travelers a taste of living historic and cultural authenticity. Walk around the Freedom square and admire the beautiful buildings with exquisite architecture. Visit the Art Museum 18 of the 19th century, formally known as ‘Vécsey House’ with its unique collection of paintings and see the beautiful Bishop’s palace built in 19th century under the initiative of the Bishop Ham Janos, decorated with sculptural images and impressive paintings and frescos. Then enter the History Museum to see artifacts from times before. Climb to the top of the Administrative Palace, the highest civil building in Romania, and also the Firemen tower built in 1904, known as the Eiffel Tower of Satu Mare to see the panorama of beautiful buildings, and, if you are lucky, the Oas Mountains.

After breakfast: we start our daily program with the perhaps most beautiful, anyway the most well-known churches of Tákos 10 , Csaroda 11 and Márokpapi 12 , villages, a must for anyone interested in folk art and local culture. Sometimes referred to as the ‘barefooted Notre Dame’, the church of Tákos is hardly bigger than a peasant house, but it has a richly painted ceiling and furnishings. The church in Csaroda with its flower decoration is 700 years old. It is famous for its medieval frescoes representing smiling saints. You will find grandmothers on chairs out front cross-stitching away, their work displayed on the fence behind them. Visit a local farm and taste artisan goat cheese with herbs and get experience about traditional Hungarian pastry baking. Tarpa lies 16 km from Csaroda. It’s known for it’s plum products, but one of Hungary’s last examples of a working, horse-driven, 19th century mill. Nearby is a decorated Calvinist church. Shop for homemade plum jam and having Hungarian goulash and a hollow, cylinder shaped pastry fried in open fire and coated with ground walnut or cinnamon, sipping local wine. After lunch short walking excursion, Tarpa hill offers excellent panoramic view of the Carpathian range. Head to Nagyar, visit the historical rose garden of Luby Castle 13 and try the rose tart and rose lemonade.

Visiting the Teahouse for tea tasting in Bioinstitute in the city center of Kosice. The Teahouse is actually located at the very famous street for traditional crafts. It is a traditional artistic district where old, traditional craftsmen sell their products in little shops.

The story of Maramures doesn’t come full circle until the visitor has experienced the Mara River Valley. As the namesake for the entire region, this valley reveals not only pristine beauty, glorious pastoral landscapes, and total immersion into the centuries old way of life of its people; the Mara Valley delivers old world wisdom to those travelers who pass through slowly. The villagers of the Mara Valley go about their daily chores, seemingly oblivious to the outside world. Yet their warm hearts open to welcome the visitor once they become comfortable.

The guide will explain the demonstration site as well as the biodiversity values occurring from the management of mixed forest and grasslands ecosystems by natural grazing.

You will visit the ‘Happy Fish’ trout fishery and restaurant in Mara village; taste the traditional breakfast in an authentic wooden restaurant complex, enjoying the freshness of nearby forests, the beauty of Mara River and the trout fishery located inside the restaurant complex. In the old capital of historical Maramures Sighetu Marmatiei 24 (the first reminder is recorded in the documents in 1326). You will get acquainted with the remnants of an ancient fortress of Thracian and Dacian period, traditional markets - Piata Agroalimentara and unique open-air village Museum that includes the antique church and traditional homesteads around (the oldest ones dating since 16th century). Accommodation: Iurca Guesthouse. Casa Iurca de Călineşti is located in Sighetu Marmaţiei, right in the heart of Maramureş Land, a place loaded with history and legends. Inside the inn you can see wonderful carves in wood realized by inhabitants of those ancient places. The staff from Casa Iurca de Călineşti is dressed in traditional costumes and they try to pour in the traveler’s heart a drop from the essence of Maramures.

A special attraction of the tour is the largest archaeological complex in Eastern Europe, the ancient Dacian pottery ovens in Mediesu Aurit. They date back to the 2-4 century AD and are impressive by their size (2 meters in diameter) and by the number: 104 ovens, used to produce ceramic pots that were across the Roman Empire, have been reconstructed. Go to see the ruins of Lonyai castle, remembering bygone times. Enjoy again the well-known and world-famous Romanian traditional alcoholic drink, palinca. It is produced here, by Zetea family using double or triple distillation in traditional boilers with direct heating by fire. Eat lunch which includes a master class from the producer, completed by a tasting the famous alcoholic drinks. It is the time to go to Bixad, at 5 km from Negresti-Oas, situated on afforested hills. It has natural resources of mineral water springs, but also a famous monastery 20, founded at the end of the 17th century by an ex Greek orthodox monk from mount Athos, with the richest library from the East-European area. In Bixad you can also taste one of the best pălinca from ‘Oas country’, at Ciocan Gheorghe company: apple and cherry palinca, accompanied with dried fruits of plums, apples and pears, traditional home made sausage, ham, and corn bread.

Back on your road enter in Vama, 22 where you will again gain historical experience and know ancient crafts - you will get acquired with Byzantine in local ceramics and pottery. Your road takes you to the Ethnographic Museum of Oas Country, in Negresti Oas, on the banks of the Tur, this is a picturesque hilly area. Here you have the unique opportunity to witness past life: many buildings in the area are representative monuments of peasant architecture from the XVII – XX Centuries Camarzana and Racsa houses, sheep winter stables, a natural still working “valtoare”- whirlpool, a traditional stone cereals mill, a palinсa distillery, and last but not the least the Lechinţa wooden church dating back to 1604. Take back with you a souvenir doll, dressed in traditional hand –made costume showing the smallest details and elements of authentic costumes of the Oaş region, now famous all over the world, as well as the local necklaces and the small embroidered huts for men. Your day ends in Valea Măriei recreation area, a resort situated in the middle of a forest, located at 6 km from Negresti-Oas. The place is renowned for its mineral springs. Relax after a busy day, as the resort offers indoor and outdoor pools, sauna, high standard accommodation and traditional meals throughout the year. If you are lucky, you can be invited at a traditional Oas Country wedding party, an experience of a life-time. Your tour ends - but we are sure that you will stay some more time- for skiing in Luna Ses area, relaxing in one of the numerous thermal water resorts, visit the countless charming villages and meeting the ancient village inhabitants who will invite you to taste their traditional recipes… Satu Mare is a hidden treasure, after coming once, you will be back again and again!

DAY 2 Saints and Spirits. Érpatak - Máriapócs Nyírbátor - Baktalórántháza - Vásárosnamény Érpatak: visit a traditional distillery, cold plate based on local recipes and fruit brandy tasting. Máriapócs: 7 the most famous, beloved spiritual centre and the mostly visited place of worship in Hungary. In the City of the Dragon (Nyírbátor) you will have chance to taste a traditional local pastry, visit a mysterious castle and walk on the historical “Dragon path” 8 .

Lazy lunch at the Fenyves Business Hotel and Restaurant where you can walk into the modern, 21st century techniques kitchen based on the local food and recipes. Vásárosnamény: visit local Bereg Museum 9 or go for a short canoe ride on the river Tisza. For dinner head to the guesthouse to enjoy local, freshly made food.

Szatmárcseke. The cemetery is a unique sight worth visiting, famous for 2 m high boat-shaped grave markers, each of them facing to the West. Afternoon: local Szatmar cooking course and dinner: recipes vary according to the season, utilizing only the freshest ingredients available and providing you with a deeply individual foodie experience. In group of 4-12 persons we learn how to prepare a balanced, traditional 4 course menu. Featuring regional specialities and home-cooking favorites, which we than enjoy for dinner. The best part is the conclusion: enjoy the fruits of your labor - one of life’s true pleasures!

Leaving the town and heading to the nearby pleasant suburban village Mala Ida for a short visit of the company KUK FUK - the domestic producer of 6-egg pasta. The present production program focuses on seven kinds of pasta in a total volume of 3.5 tons per day.

Lunch is served in a restaurant ‘Straw House’ (Slamený dom), which is offering year-round accommodation but also very famous Slovak culinary specialties, as duck breast, mutton stew with homemade dumplings, mountain dumplings with mutton meat, sheep cheese dumplings and pies. The tour continues to the nearby climatic Spa Štós 1 (established in 1883), which is located in the picturesque part of southeastern Slovakia and surrounded by breathtaking natural scenery full of fir and pine trees on the boundary of Spišské mountain range and the Slovak Karst. According to the respective Swiss classification, the spa has a healing climate with stimulation rated as level 1 and includes typical features of mountain landscape. The tour brings you to the Hutsul Folk Art Museum - the only Ukrainian museum included into the Encyclopaedia Britannica as one of the world masterpiece museums. The museum collection includes almost 50 000 artifacts from the period of Trupillian culture to the present days. Among the exhibits: wood, ceramics, textiles, leather, wool, nonferrous metals, and glass and sea corals.

Budeşti – example of wooden architecture 25 (wooden gates, wooden houses, wooden church - UNESCO heritage monument). People from Maramureş have always been faithful to wood, carving it into all kinds of shapes: the plate they ate from, the shelter above their head, the church in which they prayed. Time didn’t stand still and many things are made today of more modern materials. Still, where it smells like wood, people from Maramures feel home and safe, while visitors stop in front of the old houses, gates and churches and admire them. The wooden gates from Maramureş are elements of architecture that convey an undeniable local identity to this region. Rich in symbols (twisted rope, the sun, tree of life) wooden gates are protectors of the houses and of families. Visiting Sârbi village – you will experience horinca and traditional pie tasting in a peasant technical installations’ complex. By the side of the main road in the village center is a centuries old water wheel that powers a number of important machines and processes in the life of the village. After the spa treatments, a light lunch in the open air and a relaxing walk to take in the charm of the place, supper will be served at a traditional restaurant. The taste of Tysmenytsya is its famous ‘stuffing’ (bread pudding with whipped eggs, cooked in the oven with roasted meat and flavored sauce). It is believed that this wonderful meal was brought to Tysmenytsia by old German craftsmen. It is very caloric meal unlike the usual Galician meals from potatoes, mushrooms and grains. The recipe of stuffing is complicated (up to two pages). However, the long cooking process will be rewarded by the perfect taste. It deserves to be the main dish of the finest banquet. Its recipe you will get as a gift from the hostess.

Here the local tavern ‘Vysokyi Pereval’ hosts an original ‘traditional Hutsul wedding’ celebration, which features local traditional music, lively performances of wedding ceremonies, songs and the very best of Hutsul dancing. You will have the chance to learn ‘kolomyika’ – an ancient Hutsul dance. The tavern welcomes guests for its authentic Hutsul entertainments twice a week during dinnertime. The gothic St. Elisabeth’s Cathedral (Dóm sv. Alžbety) 2 built from 1378-1508. The St. Michael’s Chapel (Kaplnka sv. Michala) is a single-nave Gothic edifice from the 14th century. Originally a cemetery chapel, it is the city’s second oldest building. The State Theatre of Kosice (Štátne divadlo v Košiciach) was built in a neo-baroque style during the years 1879-1899. The Forgach Palace, an Empire style, 2 story palace, built for the nobility in the early 19th Century, currently houses the State Science Library. The Eastern-Slovakia Museum, a majestic neo-Renaissance structure built in 1899. It exhibits numismatic collections and the Gold Treasure of Kosice - hoard of golden coins and other golden objects. park (650 meters above sea level) is Slovakia’s national cultural monument with over 200 tree and flower species and complemented by streams with cascades and a fountain. The effect of the spa’s climatic therapy is multiplied by speleotherapy. There is also an opportunity to visit Jasov village lying in the southwestern part of the Kosice Basin, the area dominated by limestone rocks. The settlement dates back to the Paleolithic period thanks to the Jasovska cave 3 which is situated in the limestone cliff and was used in later prehistoric times as a dwelling. The Premonstratensian order has built their monastery nearby; since then it became an important European cultural monument. Jasov cave is located in the Medzev Upland. The cave became the first show cave in Slovakia in 1846, however the upper parts have been known as early as the 13th century. The Jasov cave belongs to the most important caves in the Slovak Karst National Park; being also inscribed on the world’s heritage list. It is known by the presence of rich calcite flowstone fill, remarkable rocky shapes and development of underground spaces, with abundant bat types, several archeological findings and interesting history. Dinner in the restaurant ‘Old mill’ (Starý mlyn). The image of the modern era milling in the 20th century can be presented by this mill, whose owner is a Brostl family. The driving force of the mill was water; the mill itself was built of stone. Currently it is a restaurant decorated by hand-painted paintings.

No one knows the ins and outs of food like the people who grow it, so get answers straight from the experts by asking the really important questions. Find out exactly where your food comes from by asking where the farm is located, how far it is from the market, and if it’s organic. Most farmers are proud of their products and

don’t mind detailing exactly how their food is grown and what to do with it. To avoid plastic bags please bring your own canvas bags or baskets. Stop by the local cooperative for a printed walking map of the village. Then spend the day wandering around Panyola’s untouched natural beauty. If the season is right, the Panyolafeszt may be in full swing, offering a chance to witness the region’s harvest with area local chefs stocking up for their regional kitchen. The enthusiasts can also take part in various activities: ride in a horse-drawn carriage, canoe trips or take part in various activities for children.

Year-round the ranch offers various activities like horseback riding lessons for beginners, accommodation, tasting of farm products (eggs, poultry meat, rabbit meat, pork, lamb), activities for children, primary school, family leisure, festivals, markets, or shows of different types.

DAY 4 Along the plum road. Kisar - Túristvándi Tiszakóród - Fülesd - Panyola longer used as a mill, visitors may see the wheels and the millstones at work. It was built in a folk style, the roof is covered by wooden tiles. The building has a magnificent view of the area and the river.

Veľká Třňa – Tokaj Region 5 is geographically a closed area of winemaking and viticulture in basin of river Bodrog. This area is historical and territorial part of vast region of Tokaj, which has its major part spread in Hungary approximately 5 000 ha in comparison with Slovakia, where only 907 ha are determined by law. Although it is the smallest viticulture territory, it is also one of the most specific and unique areas within the country. Only here you can find stony hillsides of an old volcano, which is warmed up by a lovely warm breeze from the Hungarian puszta and only here you can find a noble fungi Botrytis cinerea, the basis of Tokaj selections. The wine cellars are protected by oak barrels, in which the wine of kings rests and gains bread taste. A walk in the vineyard of JaJ Ostrožovič with a small wine tasting, tour of the production hall, cellar tour with an expert interpretation about the Tokaj region and tasting 15 kinds of wine plus BONUS gift (vintage wine) will make your memories special.
