Lost Silver Of The Salt River by Cody Drake, Arizona Treasure Hunter. facebook.com/AZTreasureHunter In the year 1876, a prospector named Charlie McMillen and his partner Theodore Haris discovered a rich silver outcropping about 28 miles from Globe. While McMillen dismounted his horse being to hung over from drinking to continue on, he decided to rest. To his amazement he was resting right on top of rich silver! Charlie McMillen later filed the Stonewall Jackson mine on the site which the name was later changed to McMillenville. McMillenville in it's prime was home to 1,000 souls. Prospectors, miners, criminals, Brothel's, Saloons and settlers from every background as could be found in every mining town called McMillenville home. The Apache were very commonly seen near the town and often came to trade with families. It was in 1880 that one Apache came to the home of a Mr. Charles M. Clark. Clark noticed that the Apache warrior was a strong and farce looking figure of a man and that his intention was to trade and not to fight. When Clark had seen what the Apache was offering to trade with his eyes were astonished. It was rich silver ore, even expressed how the silver appeared greater than some of the samples coming out of the local mines. When he asked the Apache where the silver had come from the reply was that it was a ledge along the Salt River within a three day's journey in rough rugged terrain. That it was easily removed and in great abundance. After Clark and the Apache had finished their trading, the Apache slowly rode his horse away as calmly as he had come. As soon as the Apache was gone, Clark rode into town and hired a tracker to pick up the trail of the Apache and possibly follow him all the way back to this silver ledge. Clark and the tracker made excellent progress in picking up the Apache's trail well before sundown of that very day, but the warrior knew he was being

GREETINGS TO ALL ADOBE MEMBERS AND FRIENDS “The people have the right to truth as they have a right to life, liberty and the pursuit of happiness”…. Epictetus The First Amendment to the United States Constitution protects the Rights of citizens to peaceably assemble and address the government, and in parallel, the Declaration of Independence declares the Rights of citizens to pursue, life, liberty, and happiness. ADOBE was formed in 1989 on these principals of freedom, and ADOBE stands firm in 2021, still solid on these same truths. In August 2021, the issues facing Gold Canyon are many, coming from various perspectives and views specific to: (1) Those who state that the Gold Canyon Bypass, which was officially approved in and around 2003, is passé, and therefore Gold Canyon really doesn’t need a Bypass because “someone in government” has determined otherwise. This begs the question for Gold Canyon citizens (approximately 5000 strong thus far), “Is this truly citizen freedom to address their government on an issue that concerns them?”, and (2) a governmental entity recently decided to place up for auction a piece of land that is located in the heart of Gold Canyon while proposing a new classification of that land use for Employment. This means – possibly - that auctioned land can become an industrial park, or maybe acres of solar panels, or whatever. The citizens affected by this proposed auction were blindsided with only a few days to prepare for a governmental meeting where the concept was to be explained. This begs another question, “Did this process allow adequate time for the citizenry to address their government in one’s pursuit of life, liberty and happiness?” As an aside, but as a matter of record, ADOBE strongly supports a new Gold Canyon Community Group, the “Gold Canyon Home Owners Alliance,” who are attempting to address these issues from the perspective of an en masse Gold Canyon citizenry view. Be assured, ADOBE will always stand strong with Gold Canyon citizens in their mission to keep the public informed in matters that relate to them, within the perspective of ensuring a Better Environment. These are in fact our Inalienable Rights to peaceably assemble and address the government as we pursue - right here in our Beautiful Community of Gold Canyon - life, liberty, and happiness. Glenn A. LOST SILVER OF THE SALT RIVER followed. After sunrise of the following day it appears that the warrior had enough and managed to elude Clark and his tracker in the Salt River Canyon. Word of the Apache's silver soon spread like wild fire and numerous prospectors searched for it. Charles Clark searched on several occasions for the Silver Ledge but like the others who searched, it was never located. Searches were violently halted not long after the story of the Apache's Silver had began to spread as Apache raids began to happen more frequently around globe and especially McMillenville. It seems that all major efforts for the silver ledge halted after the battle of McMillenville. The Battle- On July 2nd 1882, Apache's were after anything of value to help their fight against the soldiers and settlers. Around six prospectors were killed in the hills distant from town and several ranches were raided almost simultaneously. The raiding Apache after hitting the small homesteads soon joined together and swooped down on to the small town. Women and children who could make it ran for the mine were they sought shelter with several miners protecting them with pistols and repeating rifles, some women even re loaded the weapons for the men and even took part in the fighting. The Apache warriors soon came upon a small makeshift fortification in the town from where the remaining miners and settlers sought safety. The Apache, armed with pistols, rifles, bows and arrows were eventually beaten back by the defending settlers. Several buildings were damaged and set on fire. The towns people had very few casualties but suffered a great loss of personal property. The battle was a victory for the settlers but the town was abandoned just a few years later. After McMillenville was abandoned the search for the Salt River Silver Ledge didn't resume again until modern times. It is still out there and waiting to be found!!! If while on your adventures this weekend you find yourself near the Salt River maybe keep your eyes open, your never know what you might find! (Please be aware and follow State, Federal laws and private property. If you are confused or unsure just ask permission. Also don't forget to drink plenty of water and always tell someone where you are going!)

Staff Picks Of The Month

The Devil’s Hand by Jack Carr, recommended by Dennis A new, young president with a secret, a former Navy SEAL with a special assignment, and the Supreme Leader with an unfulfilled desire to destroy the "Great Satan" and her European Allies collide in this thrilling story. Since September 11th, the Supreme Leader has waited patiently to implement his plan to defeat the most powerful nation on earth. He uses a second generation agent with access to high level bioweapons, but the president’s secret, the former Navy SEAL’s assignment and the plot to destroy the nation clash as it all converges in an explosive finale. Fact and fiction are expertly woven together in this thoroughly enjoyable tale of revenge.

Ocean Prey by John Sandford, recommended by Tracie After chasing yet another dead end, the Feds call in Lucas to help solve the killings of three Coast Guardsmen off the Florida shoreline. Lucas enlists Virgil, who goes undercover to infiltrate the crime organization responsible for fouling up the waterways, but soon discovers he might end up fish bait. Boats, drugs, south Florida parties, undercover schemes, rattling cages and poking where the FBI can’t solves the puzzle for these Minnesota cops. Sandford is at his best with his signature snappy dialog and nonstop action. The Other Mrs. by Mary Kubica, recommended by Diana Sadie and Will Foust and their two children move from Chicago to a small town in Maine after Will's sister leaves him her house — along with custody of his 16-year-old niece. Shortly after they move, their neighbor is found dead in her home. The murder rocks the tiny coastal island, but no one is more shaken than Sadie. This addictive thriller kept me reading way into the night hoping I would finish before my conclusions about the ending changed again. With every twist and turn I believed I had it figured out. I did not! I thoroughly enjoyed this mystery and have added Mary Kubica to my list of favorite authors. A definite must read! 8 | Superstition Living

FROM APACHE JUNCTION PUBLIC LIBRARY

Big Time by Jen Spyra, recommended by Megan I’d never heard of Jen Spyra before picking up this book, but now I know I’ve been missing out. She’s written for The Onion and The Late Show with Stephen Colbert, but this is a collection of fictional short stories. They’re all biting and funny, with a sense of humor that takes some time to adjust to but remains fresh and absurd – in a good way – throughout the anthology. I found it’s best to go in without being spoiled for the twist in each story, so avoid the jacket copy! Legacy by Nora Roberts, recommended by Sandy A good story of relationships between generations, and coming to understand people and family — and loving them “where they’re at.” Some intense drama and loss. The detailed description of exercise classes and the benefits of them made me want to jump up and “get moving!” Well, almost…Great summer read! A Very Punchable Face: A Memoir by Colin Jost, recommended by Vicki You know what’s ahead when you pick up a book by a Saturday Night Live cast member or alum, and this memoir is funny, but also full of heart and humility — including a wrenching chapter about Jost’s mother, the chief medical officer for the New York Fire Department, and her race to save fire fighters during 9/11. In chapters such as, “You’re gonna need stitches,” and “The time Jimmy Buffett saved my life,” Jost delivers with his signature humor and wry observations seen through the lens of his grandfather’s immortal words, “People are crazy!” A remarkable memoir from a Staten Island kid who didn’t talk until aged four. “A Very Punchable Face” is available in audio from Greater Phoenix Digital Library and in print and e-book. Listening lends an additional nuance —Jost’s imitation of Charles Barkley is so spot-on, I laughed for two blocks — but the book has pictures! Your choice. Either way you can’t miss.

Tips & Hints ON LANDSCAPING TOMMCDONALD OWNER - SMILING DOG LANDSCAPES

RAIN SAGE AND DROUGHT

There is a plant that does well in the lowlands of the Sonoran Desert whose sporadic bloom cycle is a reliable indicator of an increase of humidity, and a good sign of rain to come or the blessing of rain delivered. This tough, drought and cold tolerant genus may have been one of the first native desert plants to have been used in designed Southwest landscapes. The Leucophyllum genus, also called the Barometer bush, Texas sage, or Rain sage, brings these wonderful qualities to your landscape. • Likes sandy soil and has a high salt tolerance. • Is cold and heat tolerant. • Bursts into a beautiful but shortlived flower show from spring to fall. These events are triggered by high humidity. Flowers, depending on species, can be from deep purple to light blue. • Lends itself well to pruning but please do not over do it! A light trim by hand would be best, leave the hedgers in the garage. If you have to hedge a lot to keep control, you have the wrong species of Leucophyllum. There are many choices in size (three foot to eight feet) and color (mainly shades in the blue spectrum).

• Makes good ‘border’ hedges. • Very drought tolerant, a great xeriscape plant. So how does the Leucophyllum tie in with drought? If the Leucophyllum bloom events happen because humidity is rising above normal and our monsoons need humidity as well as heat to produce rain, it stands to reason that the more bloom events the greater our chances of rain.

More importantly, it is a plant that is native to the Sonoran Desert. If our climate continues to heat up, arid land horticulturists will continue to utilize more and more local cultivars who are tough enough and beautiful enough for the new normal. In the meantime, I’m celebrating every time I see the Rain sage Bloom.

Financial Focus REVIEW YOUR IRA, 401(K)

BENEFICIARIES

MATTRUPPERT If you’ve had an IRA and a 401(k) for many years, you may occasionally ask yourself some questions: “Am I contributing enough?” “Am I still funding these accounts with the right mix of investments for my goals and risk tolerance?” But here’s one inquiry you might be overlooking: “Have I used the correct beneficiary designations?” And the answer you get is important.

documents, do you have to worry about the old beneficiary designations? You might be surprised to learn that these previous designations can supersede what’s in your updated will and other documents. The end result could be an “accidental” inheritance in which your retirement accounts and insurance proceeds could end up going to someone who is no longer in your life.

It wouldn’t be surprising if you haven’t thought much about the beneficiary designation – after all, it was just something you once signed, possibly a long time ago. Is it really that big a deal?

Furthermore, your retirement plans and insurance policy may not just require a single beneficiary – you may also be asked to name a contingent beneficiary, to whom assets will pass if the primary beneficiary has already died. As you can imagine, the situation could become quite muddled if stepchildren are involved in a remarriage.

It could be. For one thing, what if your family circumstances have changed since you named a beneficiary? If you’ve remarried, you may not want your former spouse to receive your IRA and 401(k) assets or the proceeds of your life insurance policy, for which you also named a beneficiary. However, upon remarrying, many people do review their estate plans, including their wills, living trusts, durable powers of attorney and health care directives. If you’ve revised these

To avoid these potential problems, make sure to review the beneficiary designations on all of your accounts at some point – and especially after a significant change in your family situation. If you see something that is outdated or incorrect, contact your retirement account administrator – or your insurance representative, in the case of life insurance – to request a change-of-beneficiary form. And if you really want to be on the safe side, you may want to enlist a legal professional to help you with this review to make sure the beneficiary designations reflect your current family situation and are consistent with what’s in your estate plans. In fact, if you’re already working with an experienced estate planning attorney – and you should – you might also pick up some other suggestions for dealing with beneficiaries. Just to name one, it’s generally not a good idea to name minor children as beneficiaries. Because children can’t control the assets until they become adults, a court would likely have to name a guardian – one that you might not have wanted. Instead, you could either name your own custodian to manage the assets designated to the minor or establish a trust for the benefit of the minor, which can distribute the money in several disbursements over a period of years – which is often a good move, since young adults aren’t always the best at managing large lump sums.

If you’re like many people, you have a strong desire to leave something behind. But you’ll want to do it in the right way. ZAP THOSE THOUGHTS THAT AREN’T SERVING YOU! In last month’s column (“What Was I Thinking?”), I talked about the importance of being aware of our thoughts. Holding onto and becoming identified with negative thinking can definitely affect our quality of life, both mentally and physically.

For instance, keeping a gratitude journal and actually writing down all the things I’m grateful for helps me focus on the positive. I also love using positive affirmations to help me keep my mind centered on the life I want to create for myself.

This month I’d like to offer some additional tools to help you release those thoughts and beliefs that aren’t serving you well and replace them with a more positive mindset that promotes health and well-being.

The more I dwell on the Light within me, the less I need to consciously control “negative” thinking!

Have you ever seen a bug zapper? You probably know what I mean—one of those lights you hang in the back yard that has an electrified screen around it. When I was meditating one day, that’s the image I got concerning controlling the negative thoughts that try to sneak into our minds. And the great thing about this tool is that it takes almost no effort! Let me explain. As I fill my mind with thoughts of light and love, the light shines brighter and brighter in my mind. How do I do that? By consciously choosing to think and act on positive ideas and thoughts.

As the “bugs” of words/thoughts/ beliefs/emotions that don’t benefit me enter my field of light and love, they are zapped before I’m really even aware that they’re there: *“I’ll never be able to accomplish that…” ZAPPED by the positive affirmations I regularly practice that remind me that I am enough and that the divine universe works with me to achieve my desires. *“That person is to blame for my problems…” ZAPPED by my continuing acceptance that how I live my life is my choice and my responsibility.

*“I’m worried about this situation of…” ZAPPED by my understanding that every problem has a solution and that that solution will be revealed as I calmly and quietly trust in the divine flow within me. *“I’m angry with that person because…” ZAPPED as I routinely seek to connect with the divine in every person and send loving thoughts their way, even when they may be acting in ways I disagree with. Get the idea? When you fill your mind with light and love, there is less and less work involved with controlling those thoughts and feelings that don’t serve you—they simply dissolve before you begin to dwell on them. As I experience the transformation of my mind and become increasingly aware of these things, I realize that the flow of the Divine in my life becomes more natural for me each day. I am filled with gratitude and good thoughts because God is good and life is good!

Self-care is unique to each individual and should consist of a variety of options depending on your lifestyle and needs. It may be the opportunity to find a moment or two to rest, to engage in creative activity, to exercise, to nap, to visit a friend, or to get positively involved in your community. The important aspect is to enjoy whatever creates a sense of self love and self-care that reenergizes you.

by Sue Schaffer What is self-care and why is it important to you? Self-care describes any activity individuals initiate deliberately to help with their physical, emotional, and mental health and wellbeing. In our busy lives we often overlook the importance and the basic aspects of self-care. Without positive self-care there is no balance between rest and activity, and physical and emotional functioning becomes impaired. Self-care will improve mood, reduce anxiety, help you deal with frustration and provide energy. Dorothea Orem’s (1914-2007), a leading theorist of nursing practice and education was a pioneer in understanding the importance and necessity of self-care. Orem’s theory focuses on the activities which an individual initiates and performs on their own behalf in maintaining life, health, and well-being. At its core level self-care is essential to maintaining the physical body. Universal basic needs also include access to air, food, water, and safety. Once these needs are met people will seek out a balance between rest and activity, solitude and social interaction, or work and play. Too often people neglect themselves and impair both physical and mental functioning. It takes self-responsibility and planning to ensure optimal health and fitness by expanding self-care. 14 | Superstition Living

Self-care should result in refueling you instead of draining energy. Experts say self-care should not be forced and needs to be an enjoyable activity rather than another chore. Taking time to selfcare is not a selfish act but a necessity in taking care of your self and others. In our daily busy lives, we may not seek out or recognize that we are offbalance, we find ourselves working hard, busy with distractions of family or community issues and feeling drained of energy and time. The often-heard voices of “I don’t have time to take care of myself” or “I don’t deserve this” are usually the reasons that one does not seek out opportunities for self-care.

The Live it Well Place offers a variety of ‘self-care’ options. Make an appointment for relaxation and health: Massage Therapy, Reflexology, BioMat with Sound Healing, and Private Visual Meditation. Sign up for a creative workshop: Intuitive Painting or Seeing with Heart Photography workshops. Attend an educational workshop on nutrition or health. Drop in and try a mindful movement class, where the emphasis is on you and your needs. Check out the retail shopping opportunities in the spacious lobby, check out a book at the Lending with Love Library, or just stop in for a cup of tea. Any opportunity you can take to allow yourself to recharge, renew and revitalize yourself is important for your life, your health and wellbeing. It's the time of your life..so learn to live it well.

There is only one corner of universe you can be certain of improving and that's your own self.

REAL ESTATE FOR YOU LORIBLANK BROKER/OWNER LORI BLANK & ASSOCIATES, LLC

SELLING YOUR HOME?

HERE’S WHY YOU’LL WANT TO INVEST IN PROFESSIONAL PHOTOGRAPHY that. It’s a proven fact that people are most often lured in by façade photos when searching for homes online, and it’s these the right photographer will be able to perfect. By using a professional who understands what size of lens to use to compliment your home, your photos will easily optimize the way your home looks. Diving Into The Details With Expertise

With all of the time and money that can go into moving, spending money on one more thing can seem like a bank account drain. However, when it comes to selling your home, investing in a professional photographer can mean the difference between getting a buyer and making a sale you’ll be proud of. If you want to get the deal your house deserves, you might want to consider the skills of a professional who will make your house look like someone’s dream home. “Lighting” Up Your House If you’ve ever noticed how dull a room can look when it’s cloudy outside,

you’ll quickly realize how important the right lighting can be in complimenting the appearance of your house. A professional photographer will be able to determine what hours and what types of flash will work to highlight the rooms in your house the best. Not only that, they will go above and beyond what your smart phone can do to correct the issues that can impact a potentially perfect picture. Capturing The Perfect Panorama In the right light, it’s possible that you’ll be able to get some great pictures of your house on your own, but a photographer will be able to go beyond

Doing Business In Arizona Since 2008!

Beyond the panorama shots that might convince a potential buyer into considering your house for their next home, a professional photographer may be able to hone in on details that differentiate your house from the rest. With their keen, curious eye, they’ll not only notice intricate details, they’ll be able to highlight them in a way that makes them look interesting, expert and one-of-a-kind. They’ll also be able to beautifully capture the special features that you love about your home! It can be tempting to be cost effective when it comes to showcasing your home, but just like wedding photographs, you don’t want to skimp on real estate images. If you’re interested in learning more about positive ways you can highlight your home, you should contact me at 480-221-7922

New App to Keep up with AJUSD By Scott Bordow Life these days is lived on the cell phone. No matter where you go, no matter what you’re doing, your cell phone is with you or somewhere nearby. You use it for calls and text messages. You use it to check your email, transfer money on a cash app, or play the card game you’ve downloaded. You can’t imagine what life was like without it. Now, you can use your cell phone to stay updated with everything going on in the Apache Junction Unified School District with our Mobile App, which is part of the contract AJUSD has with Blackboard for its website and messaging system. Before we get into what’s on the App, here’s how to get it: Go into the app store on your phone and search for Bb District by Blackboard. Download the App. Then, in the search bar, type in Apache Junction. Our App will come up. After a couple of easy-to-follow instructions you’ll be ready to go. What’s on the App? Well, hopefully everything you’ll need to keep abreast of what’s happening in AJUSD. Our Facebook and Twitter feeds link directly to the App, and you’ll be able to watch governing board meetings on our YouTube button. The App will include a district calendar for the 2021-2022 school year as well as an events calendar. Other options include ParentVue, where parents and students can access their accounts, updated lunch menus, a staff directory and a messaging system. If, for example, Cactus Canyon Junior High School discovers a nest of hornets and students need to leave early parents will get that message sent to them immediately in the “Notifications” button on the App. (FYI: Hornets are not buzzing around Cactus Canyon. We’re just saying.) Our hope is that the App will become a convenient way for you to keep up with our schools. Here’s another for instance: You’re at lunch with a friend and you can’t recall if it’s an early release day for your child’s school. Grab your phone, click on the “calendar” button and the information will be at your fingertips. Do you have to download the App? No, you don’t. Any information on the App also can be found at AJUSD’s website, ajusd.org. The App is just another convenient option for parents, students and community members to experience everything going on in the Apache Junction Unified School District. Any questions about the App should be directed to Scott Bordow, AJUSD’s Director of Communications and Community Engagement. He can be reached at scott.bordow@goaj.org.

Lookin’ Out My Backdoor By Marcia Nelson

Lookin’ out my back door… and what do I see? Factories and parking lots lookin’ back at me! This Gold Canyon icon of pristine mountain views is set to disappear. Now who can we accuse? Big business promoters that surely have a mind to trade our desert vistas for gold of a different kind. I fear this new venture will leave the landscape stark. It will become nothing more than another business park. We chose to live out here in a quiet desert setting. But now it seems we have no choice in who controls the vetting. This land was meant for housing, not for factories and the like. So maybe we can tell these folks they are welcome to TAKE A HIKE!

Relatively Reading The Lincoln Conspiracy: The secret plot to kill America’s 16th President- and Why it failed Author: Brad Meltzer and Josh Mensch

By Julie Pless While it comes as no surprise to anyone who has finished 5th grade history that Abraham Lincoln was the 16th president of the United States and his policies were pivotal to the outcome of the Civil War, it might come as a shock to know he almost didn’t live long enough to get the job! Before his assassination in 1865 there were plots afoot by several factions to derail Lincoln’s candidacy and ultimately end his life. These sinister machinations were designed to stop the joining of abolitionists and moderates together to demand a cohesive anti-slavery plank in national mandates. Meltzer and Mench have put together a thoughtfully detailed and insightful collection of historical perspectives of these machinations in The Lincoln Conspiracy which invite readers behind the bullet point history we all remember and into the layers of a genuine political intrigue which fundamentally shaped our nation. More than the broad strokes of typical academic retrospection, The Lincoln Conspiracy fills in the family photo album of our history with snapshots and candid outtakes. The authors are generous with colorful claims and details, but support each entry with meticulous research. Casual history readers will enjoy the human context each revelation provides. Fans of more academic prose will appreciate the multi pronged presentation of the facts. Source materials are varied and beautifully footnoted: The Pinkerton Papers, Lincoln family and related diaries and contemporaneous news outlets are referenced among many others. Sometimes in a conversational tone- other times more explicitly- reports are shared with an implied sense of invitation that leads a reader to expect more with every page. The writing is well paced, but the bulk of the action is presented in a nonlinear fashion as the authors’ narrative jumps backward and forward through time. The chapters are short and most have a sharp point without being abrupt. Crafting a dense support to an ending we all know is coming, the writing provides gentle insights and harsh realities in a rhythm that builds and maintains momentum through the climax we all expect. Humanity in its ugliest and most noble outlets are all detailed in The Lincoln Conspiracy. There is life and death, plot and counterplot, as well as good an evil all playing parts in unwrapping the layers of who and what made Abraham Lincoln such an integral part of our American history.

APPLEBEE’S FIESTA LIME CHICKEN If you have ever eaten at an Applebee’s Restaurant and had their Fiesta Lime Chicken, this recipe is for you!! It is a favorite on their menu! Ingredients • 1 cup water • 1/3 cup teriyaki sauce • ½ cup lime juice • 3 garlic cloves, minced • 1 teaspoon Tequila • 1 teaspoon liquid smoke • ½ teaspoon salt • ¼ teaspoon ground ginger • *1 pound boneless, skinless chicken breast Sauce • ¼ cup mayonnaise • ¼ cup sour cream

• 2 tablespoons chunky and spicy salsa • 1 tablespoon milk • 1 teaspoon Cajun blackened spice mix • ¼ teaspoon dried parsley • ¼ teaspoon hot sauce • **1/8 teaspoon dried dill weed Topping • 1 cup shredded Colby-Monterey Jack cheese • 2 cups corn chips, strips or broken into pieces

Directions In a large bowl, combine the water, teriyaki sauce, lime juice, garlic cloves, Tequila, liquid smoke, salt and ginger. Add the chicken breast into the bowl and coat them with the mixture. (I put the chicken in a large Ziplock bag and poured the marinate in it). Let the chicken marinate in the sauce for at least 2 hours. Meanwhile, stir together the mayonnaise, sour cream, salsa, milk, spice mix, parsley, hot sauce and dill weed in a bowl. Cover and refrigerate. Preheat the grill to 375-450 degrees. Grill the chicken breasts about 3-5 minutes per side, or until they are cooked through. To test for doneness, insert a meat thermometer into the center of the chicken. The temperature should read 165 degrees. Slather the chicken with the dressing, and top with cheese. Broil the chicken until the cheese is melted. Place the corn chips on a serving plate and top with the chicken breast. Add a little more sauce on top. Let chicken rest 5 minutes before slicing. ENJOY!! *Give the chicken a good pounding to get even slices to yield evenly cooked meat. It also helps make the chicken super tender! Place the chicken inside a freezer-safe bag, and pound with a mallet. **The recipe called for 1/8 teaspoon dried dill weed in the sauce. I did not care for it in this recipe, even though I like dill. Seemed a little overpowering. I think I might add a little more of the chunky spicey salsa and leave out the dill the next time I make it. You decide! 3 Layer No Bake Cookie Cake Ingredients • 1 package of Chips Ahoy Chocolate Chip Cookies • 1 large container of Cool Whip • 1 bag of Mounds candy bars – chopped into small pieces – Divided into thirds • 1 bottle of International Delight Almond Joy Coffee Creamer • Hershey’s Chocolate Syrup - optional • 9” Springform Pan Take a medium size low and wide bowl and pour some of the Almond Joy creamer into it. Take about 4 chocolate chip cookies at a time and put into the creamer for 10 seconds, flipping over after 5 seconds. Shake off cookies and start lining the bottom of the springform pan. Break cookies as needed to fill in any gaps and press down gently. Sprinkle one-third of the chopped Mounds candy on top of the cookie layer. Spoon some of the Cool Whip on top of the candies and smooth to the edges. Then add another layer of cookies, press down lightly, sprinkle with Mounds candy then spread another layer of Cool Whip. For the third layer, put the cookies, then Cool Whip and finally sprinkle the rest of the Mounds on top. Cover with plastic wrap and put in the freezer for about 2 hours. When ready to serve, take out of freezer, take off the outside of the springform pan and place on a plate or cake stand. Drizzle edge of cake with chocolate syrup and over the top if desired. Let stand about 5 minutes, then cut and serve! Store leftovers in the freezer. Try using other cookies and candy, like peanut butter cookies and Reese Peanut Butter Cups; Oreo Cookies and Andes Chocolate Mints, or your favorite cookie and candy! Just switch out the Almond Joy Coffee Creamer for another flavor that goes well with the cookies and candy. Or, maybe try regular cream and add a flavored extract! So many possibilities!! Have fun with it! **I found this recipe being demonstrated on Facebook. A cool dessert for the hot summer months and is fast and easy to make!
