Message from the Past President Spring and summer are wonderful times at Suntree. The fairways on both the Challenge and the Classic courses begin to fill in the dry areas from our winter season, tennis members are playing every day, and soon the pool and its surroundings will be full of members enjoying our outdoor areas more frequently. The 2019 Strategic Facilities Master Plan was approved by membership at the March 25, 2019 Annual Meeting, over the next months the Board and staff will begin planning for the implementation of the Plan. The Plan will not be without some disruption to the normal routines and logistics around the club and we will do our best to minimize your inconvenience during the re-purposing of the building. This temporary inconvenience will eventually give way to the enhanced facilities for all members to enjoy. Membership will be kept informed through all phases of the Plan.
PA S T C L U B P R E S I D E N T
In the meantime, enjoy the spring and summer and thank you for your support and continued commitment to our Club.

As we head into the second quarter of the year, our Club remains very active with many events planned. Our past events such as Valentine ’s Day dance, bus trips, and golf events, have filled up to capacity. Our managers are working hard to produce new events for their department and which plays a huge part of enjoying your member experience at the Club. Our number one challenge moving forward is to better service our members with a downstairs kitchen that will provide many menu choices and offer you a better experience at our downstairs bar. Our member surveys in the past few months spell out a clear direction of what you have told us. Chambers group has worked very hard with our strategic planning committee to listen to our members and provide a long-range vision plan for the Club. Our membership numbers are still growing and I want to thank all members for referring their friends and family to this Club. The Club has been fighting attrition with aging members not being able to use the Club and eventually resigning. We have been very fortunate to exceed these resignations with new members and our goal is to provide great course conditions and modernizing facilities to attract new members.

Our departmental managers have been working together as a team to provide events on our website so you will be able to plan accordingly. The hub of our communication is found on our website Suntree.com. We provide a list of events one month out and encourage you all to use this information. Last year we renovated two tennis courts which has received many great comments. This year our big project will be the start phase 1 of our Challenge course irrigation system. We will have a new pump installed and begin the connection to our existing system on holes 6 and 7 on the Challenge course.

Golf Course News Factors leading to inconsistencies in bunker playability during the day. The most influential factor in a bunkers’ playability is the moisture content of the sand. Building a sand castle on the beach you need sand that has just the right amount of moisture in it. Too wet or too dry the castle does not hold its form, whereas just the right amount of moisture content the castle holds its shape. If the tide comes in the waves wreck the castle because the sand becomes over saturated, if the tide goes out the sand becomes too dry and the castle collapses.
DIRECTOR OF GOLF C O U R SE M A I N T E NA N C E
Moisture acts as a binder that holds sand particles together. Higher moisture content in sand will increase the bounce of your club and vice-versa. If you tee off at 10 a.m. chances are that the sand will be more firm on the early holes than the last few holes you play between 1 and 2 o’clock because of the sun and wind’s drying effects. This is obviously greatly affected by recent weather conditions and the orientation of the bunkers. Rainfall and irrigation play an important factor in bunker sand playability. The firmness or softness of bunker sand can change quickly during the day. Pay attention to how the sand feels when you walk into a bunker and begin to address the ball. Are you walking at the beginning of the beach far from the water where the sand is very soft, or are you walking close to the water’s edge where the beach sand is very firm?? As we approach our rainy season in the next few months keep in mind that rainfall in excess of one half inch will produce very firm bunker conditions until drainage and environmental factors allow drying of the top few inches of sand. In the mean time we will take measures to help decrease the drying time of the bunkers via scarifying with our equipment.
Our teaching professionals can educate you on how to change your shot making when dealing with these different conditions. It could easily lead to taking 2-3 strokes off of your score!!

Dining News The new quarter has started. Just a quick recap over what we accomplished in the previous quarter: we started with a new wine list in the middle of January, receiving lots of positive attention. February, we had a great Valentine’s day party. March 9th, we had a “Spanish Fiesta”, March 17th we celebrated “ St. Patrick Day” and finished off the month with “ Ladies Member & Guest” golf tournament. The employee “ Training Program” has gotten off to an enthusiastic start. Team members are enjoying learning how to better serve members around the Club and as they dine. We continue to maintain a high level of event and dinner attendance and highly recommend making reservations early. We are preparing many new and exciting special events at the Club. Just a few new special events by months: In April we are having the 2nd Hungarian Night and at the end of the month a Wine Tasting. In May we are having “Ladies Night in Pink” and a Gentleman’s Night. In June we will be having a “ Sommer Soiree Hawaii”, Beer Festival and Sommer Wine Tasting. We hope to keep you excited about the new events at your Club.
DIRECTOR OF F O O D & B EV E R AG E
Also, we are continuing the Friday evenings “ Grill by the Pool” event with “Live Entertainment”. We are excited about the new BBQ pit and we have great ideas on how to use it in order for you and your family to have a wonderful experience. Positive and constructive feedback is always welcome, to ensure we keep your Club a place where you want to spend your time.

Through the Double Doors I often get asked about recipes and cooking techniques that we use here at Suntree Country Club. Questions regarding all kinds of topics such as grilling vegetables, smoking meats, special ingredients etc. I’ve had quite a few member’s comment and ask about the Kung Pao Chicken entrée we made for the Four Corners dinner back in January. As with all things cooking related, I love sharing and teaching new ideas with our members and would like to share this easy recipe with you.
Kung Pao Chicken
DIRECTIONS 1. Begin by mixing the sauce ingredients together: Combine the soy
INGREDIENTS 1/4 cup soy sauce 2 tbsp. brown sugar 2 tbsp. minced ginger 1 tbsp. sherry 1 tbsp. sriracha 1 tbsp. cornstarch mixed with 3 tbsp. water 2 tsp. rice wine vinegar 2 cloves garlic, minced 2 tbsp. peanut oil
8 dried Asian chile peppers, snipped into small pieces 6 boneless, skinless chicken thighs, diced small 2 stalks celery, very finely sliced 1 large red bell pepper, cut into large chunks 1/2 cup unsalted peanuts Cooked lo mein or chow mein noodles, for serving 2 green onions, slice
sauce, brown sugar, ginger, sherry, sriracha, cornstarch slurry, rice wine vinegar and garlic in a bowl.
2. Heat the peanut oil over high heat in a large skillet. Drop in the
chiles and cook, stirring, for 30 seconds to release the heat. Add the chicken and fry until cooked through, 5 to 6 minutes. Remove the chicken from the skillet. Add the peanuts and toss together.
3. Serve over noodles and garnish with sliced green onions.
