Inspired by the Tomato Florentine Soup served at his restaurant Field of Greens (909 S. Kansas Ave.), Chris Schultz created the Simply Spicy Tomato Soup for a quick fix at home when time is limited. The Simply Spicy Tomato Soup can be prepared in 15 to 20 minutes.

Simply Spicy Tomato Soup Ingredients

3 tablespoons extra-virgin olive oil 2 carrots, peeled and chopped 1 small onion, chopped 1 clove of garlic, minced 1 26-ounce jar marinara sauce 2 14-ounce cans chicken broth ½ teaspoon red pepper flakes 1 cup wide egg noodles ½ teaspoon salt ½ teaspoon fresh ground pepper

Warm the olive oil in a large soup pot over medium-high heat. Add the carrots, onion and garlic and sauté until soft. Add remaining ingredients and simmer for 10 minutes or until pasta is cooked to desired tenderness. Ladle into bowls and serve. Makes 4 to 6 servings. Serving suggestion: Serve with a fresh mozzarella panini.
