A GASTRONOMIC CHILDHOOD A BUTTERFLY BECAME HIS DESTINY

Summerbird Organic was founded by chocolatier Mikael Grønlykke. Mikael is the son of Sven and Lene Grønlykke, who have played a major role in the development of Denmark's gastronomy for more than forty years. Together, they are considered one of the most influential families in the Danish culinary scene today. Not only have they founded a number of renowned restaurants across the country, such as Falsled Kro in the South Funen and Kong Han's kælder in Copenhagen, but they have also introduced French cuisine to Denmark, and brought the country its first ever Michelin star.

30 YEARS IN THE MIDDLE OF THE BEAUTIFUL SOUTH FUNEN NATURE In 1986 Mikael decided to take up working with chocolate. Ensconced in the back room of his family's dairy in the bucolic pastures of South Funen, he laboured carefully to create his first marzipan butterfly - or 'summer bird' as it was known in Danish. Hence the name 'Summerbird', a playful and literal translation of the Danish word fur butterfly. The recipe was simple: Uncompromised quality, attention to detail and craftsmanship! The foundation stones of Summerbird were laid. Summerbird chocolates quickly became well known for their fine taste and exquisite detail, and not just for the chocolates themselves, but for their beautiful packaging as well. In 2000 Summerbird moved from the back room of the family dairy and into a modern chocolate factory in the nearby town of Assens.

Mikael’s vision is and always has been to elevate chocolate to the level of other gastronomic heavyweights, such as champagne, oysters and Perigord truffles. He wants to ensure that chocolate is regarded for what it truly is: the most sophisticated and nuanced food product on the market. It is with consideration, care and passion for chocolate that Summerbird creates products from the best that nature has to offer. They use only the best coca beans, grown in the perfect terroir and cultivated with careful attention to fermentation and drying processes on the plantation. These beans then undergo highly elaborated and sophisticated roasting and refinement processes, before they are added to other ingredients which harmonise together in order to create the perfect finished product. The whole process of bean to bar production takes place at the Summerbrid chocolate factory in Assens - so the whole processes can be be traced from start to finish, and the highest possibly quality can be ensured. As a result of such care and attention to all of these elements, Summerbird has won several gold medals at International Chocolate Awards.

Our milk chocolate is made from organic milk collected only during the grazing period between April and October. This gives the chocolate a fresh and clean taste, - which we boost even more by later adding Indian vanilla.

Candied almonds and hazelnuts are a part of Summerbird’s identity. We carefully select almonds and hazelnuts of the highest possible quality. We source our almonds in Spain and our Hazlenuts in Italy. These organic almonds and hazelnuts are then lightly toasted, which leaves them nice and crisp and gives them a bit of a bite. They are then coated in a thin layer of praline or nougat, a second layer of dark, milk or white chocolate, and then finally they are rolled in a granulate of sun ripened fruits.

CONCERNING ALLERGENS All of our products may contain traces of other ingredients, milk, egg, hazelnuts, almonds or soy lecithin. Our entire production is gluten free, and no gluten products are used at any stage. There is lactose in the milk powder that we use in our chocolates. The glucose that is used in the cream puffs is made from rice flour. The invert sugar in the marzipan is made from wheat. Allergens are marked in bold on all ingredient lists on the packaging.


A shipping fee of 25 euro is charged unless other indicated. Goods are only sold in whole and unbroken packages unless otherwise stated. Any freight damages must be reported to the carrier upon receipt. Always remember to check that the package is in tact upon receipt before signing for it. Any product claims or incorrect orders must be reported to Summerbird (salg@summerbird.dk) by no later than 2 days after receipt. Payment terms: 14 days net cash unless otherwise stated. We recommend that goods are stored between 10-18 degrees. Reservations are made for printing errors and goods that are sold out. All prices are stated as recommended retail prices. Prices are applicable from 1 August 2016.
