On the other hand, you can choose to add a milk substitute instead of regular milk. Several options exist, such as soy milk, almond milk, rice milk, and coconut milk. Theyre all great substitutes and are wonderful options for homemade ice cream. However, since dairy milk is on the thick side, you will want to choose a substitute that somewhat reflects the texture of milk. Coconut milk can be a thicker liquid in comparison to some of the other options. Regular milk is also fairly sweet, so unless you dont mind a change in taste, you should choose a milk substitute that is also sweet in taste. Almond milk will give your ice cream a slight almond taste and coconut milk will give your ice cream a slight coconut taste. To remove more of the lactose in homemade ice cream, you will also have to substitute something for the cream in the ice cream. Ice cream is about twenty-five to sixty-six percent milk, and the rest is made up of cream, fruit, etc. Several options exist for substituting the cream. You can purchase a non-dairy whipped topping, for example. Using whipped topping in your homemade ice cream recipe will add the volume, texture, and flavor of quality ice cream. Ice cream typically contains about 6 grams of lactose for each half of a cup, which is almost half of the amount that is in about 8 ounces of reduced-fat cows milk. Many people who suffer with the inability to properly digest lactose can handle a small amount of lactose in their meals. Consuming a small amount of lactose with each meal can help to increase the amount of lactose a person can consume without symptoms. Several recipes can be found for homemade ice cream that is lactose free. Or you can always find a recipe for a typical homemade ice cream and then substitute the milk products with products that are lactose free. Remember to always check the labels of store-bought products to ensure that they are truly lactose free or dairy free.
