Bruno Rocca modernized the family business through a radical change in the management of the vineyards and work in the cellars. All their work was to be centered on producing wines with distinctive character, unique for their unmistakable expression of an extraordinary territory. Barbaresco DOCG “Rabajà” of Bruno Rocca is a red wine produced with grapes coming from the Cru Rabajà at Barbaresco. This wine vinified in steel for about 20-25 days, then sharpened for 12 months in barriques and for further 12 months in great barrels. Floral (rosehips and violet) signs, buttery and fruit notes (raspberry, cherry, black cherry)

2014 Gaja, Barolo DOCG Dagromis The Gaja winery was founded in 1859 by Giovanni Gaja. Gaja is one of the most famous wineries in Piedmont and in Italy. His story is well represented on Wikipedia. In 1988 Gaja returned to Barolo with the acquisition of 70 acres (28 ha) of property. Barolo DOCG Dagromis of Gaja is a red wine produced with grapes cultivated in the vineyards of La Morra. This wine sharpened for about 12 months in barriques and for further 12 months in traditional great oak barrels. Fruity and spicy aromatic notes, liquorice, herbs, rose flowers and balmy elements

2011 Vinchio-Vaglio Serra, Barbera d’Asti SuperioreDOCG Vigne vecchie 50° 12 The Winery has been founded on February 26, 1959 by 19 vine-growers from Vinchio and Vaglio Serra. It counts now 180 members, that are owners and tenants of about 320 hectares of vineyard. These vineyards are concentrated for the most part in Vinchio and Vaglio Serra. Barbera d’Asti DOCG Vigne vecchie 50° of Vinchio-Vaglio Serra is a limited edition red wine that sharpened in small French oak barrels. The time of permanence is definite by the year and the characteristics of wine. Orange and spicy aromatic notes and slightly boisè. 4


2013 Produttori Nebbiolo di Carema, Carema DOCG “Etichetta bianca”

The “Cantina dei Produttori Nebbiolo di Carema” (Carema’s Nebbiolo Producer’s Wine Cellar) was founded in 1960 by a group of 10 resident winegrowers and producers. At present, in the year 2015, the cooperative association has 101 members of which 71 contribute their grapes; they are all part-time producers with an average age of 55. The village of Carema lies in a beautiful sunny valley north west of Piedmont and marks the divide between Piedmont and the Aosta Valley. Carema is a Slow Food presidium since 2014. Carema DOCG "Etichetta Bianca" of Carema's producers is a structured red wine, aged for 2 years in large barrels. Fruity and spicy aromatic notes, with aromas of rose, coffee and berries, intense and elegant texture

2014 Vigneti Massa, Derthona Sterpi Derthona Sterpi of Vigneti Massa is a white wine that borned thanks to the visionary genius of Walter Massa. This wine sharpened in steel for 10 months and then for 6 months in bottle. Floral notes of acacia and citrus fruit, mature fruit and honey aromas.

The modern versions of the beverage were first produced in the mid to late 18th century in Turin, Italy. While vermouth was traditionally used for medicinal purposes, its true claim to fame is as an aperitif, with fashionable cafes in Turin serving it to guests around the clock. Vermouth is produced by starting with a base of a neutral grape wine or unfermented wine must. Each manufacturer adds additional alcohol and a proprietary mixture of dry ingredients, consisting of aromatic herbs, roots, and barks, to the base wine, base wine plus spirit or spirit only – which may be redistilled before adding to the wine or unfermented wine must. After the wine is aromatized and fortified, the vermouth is sweetened with either cane sugar or caramelized sugar, depending on the style.

Barolo Chinato Cocchi

Old Barolo wine is used to make an after-dinner digestif known as Barolo Chinato. The bark from the South American cinchona tree is steeped in Barolo and then flavored with a variety of ingredients, depending on the producer's unique recipe. Some common ingredients of Barolo Chinato include cinnamon, coriander, iris flowers, mint and vanilla. The resulting beverage is very aromatic and smooth.

Is the result of an idea shared by Slow Food and Baldin, which is committed to only buying the kola of the Kenema Food Foundation for biodiversity projects in Sierra Leone by assigning them a percentage of in sale. A natural recipe, full of great ingredients: the citrus aromas come from oranges from Gargano, lemons from the Amalfi Coast citrus myrtifolia (chinotto) from Savona. The very complex spicy notes come mainly from Kenema cola nuts, as well as cinnamon, coriander, cardamom, nutmeg and other secret spices…. water, white cane and sugar.

Spuma nera or “Dark Spuma” as it was once called, may be considered the “mother” of chinotto. The traditional recipe: citrus myrtifolia, the red part of rhubarb roots, vanilla and an orange zest infusion.
