RECIPES One Skillet Greek Meatballs and Lemon Butter Orzo Recipe from Half Baked Harvest Ingredients
• 1 pound ground chicken • 1 small shallot, finely chopped • 2 cloves garlic, minced or grated • 1 tablespoon chopped fresh oregano (or 2 teaspoons dried) • 1 teaspoon smoked paprika • kosher salt and black pepper • 1 pinch crushed red pepper flakes • 2 tablespoons extra-virgin olive oil • 1 lemon, sliced, plus 3-4 tbs lemon juice • 2 tablespoons salted butter • 1 cup dry orzo pasta • 1/2 cup pitted green olives • 2 tablespoons chopped fresh dill, plus more for serving • 1/2 cup oil packed sun-dried tomatoes, chopped, and reserve the oil • 2 tablespoons balsamic vinegar • arugula and fresh herbs, for serving For the whipped feta: • 8 ounces feta cheese • 1/4 cup plain greek yogurt • 2 tablespoons extra virgin olive oil
Directions
1. Add the chicken, shallot, 1 clove
garlic, oregano, paprika, and a pinch of red pepper, salt, and pepper to a bowl. Mix until just combined. Coat your hands with a bit of oil, roll the meat into tablespoon-size balls (will make 14-15 meatballs). 2. Heat a large skillet or dutch oven over medium-high heat and add 2 tablespoons oil. When the oil shimmers, add the meatballs and sear until crisp and cooked through, about 8-10 minutes, turning them 2-3 times. Transfer to a plate. 3. To the same skillet, add the butter and lemon slices. Sear the lemon until
golden on each side, about 1 minute. Remove the lemon from the pan and add to the plate with the meatballs. To the same skillet, add 1 clove garlic and the orzo. Cook until the garlic is fragrant and the orzo toasted, about 2-3 minutes. Add the 2 1/2 cups water and 1-2 tablespoons juice from 1 lemon. Bring to a boil over high heat and cook, stirring often, until al dente, about 7-8 minutes. Stir in the olives and dill. Slide the meatballs back into the skillet and cook until warmed through. 4. Meanwhile, make the sun-dried tomato vinaigrette. In a bowl, whisk together 1/4 cup of the reserved sundried tomato oil, 2 tablespoons lemon juice, and the balsamic vinegar until combined. Stir in the sun-dried tomatoes, 1 tablespoon dill, and season with salt, pepper, and red pepper flakes. 5. To make the whipped feta. Combine all ingredients in a food processor and pulse until smooth and creamy. The feta can be kept in the fridge for up to 3 days. 6. To serve, spread the feta onto plates and drizzle with the vinaigrette. Add the orzo, seared lemons, and meatballs. Sprinkle on some greens and herbs. Enjoy!
Stuffed Mediterranean Burgers + Easy Lemon Potatoes Recipe from Gathered Nutrition Ingredients
For the potatoes: • 4–5 gold potatoes, sliced into wedges • 2 tbsp olive oil • 1 tsp Italian seasoning • Salt and pepper, to taste • Juice of 1 lemon • Fresh parsley, for topping
For the burgers: • 1 lb ground chicken (or turkey) • 1/2 cup chopped baby spinach • 1/2 bell pepper, diced • 1/4 cup roughly chopped fresh parsley • 1/4 heaping cup crumbled feta • 1/4 cup Kalamata olives, chopped (optional) • 1–2 tbsp red onion, finely diced • 1 tsp Italian seasoning • 1/2 tsp sea salt • 1/4 tsp black pepper • 1/4 tsp garlic powder • Pinch of red pepper flakes
Directions
1. Start by making the potatoes. Preheat oven to 425°F and line a large baking sheet with parchment paper. 2. Toss the potatoes in the olive oil, salt, and pepper. Lay flat on the baking sheet and roast for 40 minutes, tossing halfway through. 3. While the potatoes are roasting, start on the burgers. Mix all burger ingredients together in a large bowl until well-combined. Form into 5-6 burger patties. 4. Heat a large skillet or a griddle over medium heat and spray with avocado oil. Cook burgers for 5-7 minutes on each side, until browned and cooked through. 5. When potatoes are done roasting, squeeze lemon juice over the potatoes and sprinkle with fresh parsley.

Classic Pumpkin Roll Recipe from Real Housemoms Ingredients
For pumpkin roll: • ¾ tsp baking soda • ¾ cup flour • 3 eggs • ½ cup dark brown sugar • ½ cup white sugar • ¼ tsp kosher salt • cup pumpkin puree NOT pumpkin pie filling • 1 tbsp vanilla extract • 1 tsp cinnamon • ¼ tsp cloves • ⅛ tsp ground nutmeg For the cream cheese frosting: • 8 oz cream cheese softened • 2 tbsp unsalted butter softened • ½ tsp kosher salt • 1 ¼ cup powdered sugar • 2 tsp vanilla extract • Extra confectioner’s sugar to dust on top
Directions
Pumpkin Roll: 1. Preheat the oven to 350°F. Line a jelly roll pan (10 x 15 inch) with parchment paper. 2. Use butter to make sure the parchment sticks to the jelly roll pan. Make sure that there is about a 2-inch overhang over the cake pan, as well as the long edge of the pan. Do not butter the parchment paper itself, set aside until ready to use. 3. Sift the baking soda and flour together into a bowl. Set aside. 4. In a larger bowl, whisk the eggs, brown sugar, white sugar, and salt together until frothy. 5. Stir in the pumpkin puree, vanilla, cinnamon, cloves, and nutmeg until nice and smooth. 6. Add the flour and baking soda mix and stir until the batter is smooth. 7. Evenly spread the batter in the pre-

pared jelly roll pan. 8. Bake the cake in the oven for about 15 minutes until the cake is cooked through. A toothpick inserted into the cake layer should come clean when it’s done. 9. Remove the cake pan from the oven. 10. While the cake is hot, lift up the parchment paper (with the cake), and place it on a flat surface that’s heat-proof. 11. Carefully roll up the cake, starting from one of the short ends. Make sure you roll up the cake WITH the parchment paper - this will prevent the cake from sticking to itself. 12. Wrap the rolled up cake with a cloth napkin and set aside on a wire rack to cool completely. 13. While the cake is cooling, make the frosting. OR you can allow the cake to cool overnight (wrapped in a cloth napkin), and make the frosting the following day. Cream Cheese Frosting: 1. Place the room temperature cream cheese, butter, and salt in a bowl. Whisk until nice and smooth and creamy. 2. Add the confectioner’s sugar and vanilla and whisk until the frosting is creamy and smooth. If the frosting is too runny, refrigerate for a few minutes to chill. Assembling the Pumpkin Roll: 1. When the cake has completely cooled, remove the cloth napkin from the rolled up cake, and unroll the cake very carefully. Remove the parchment paper and place the cake on a tray or clean flat surface. 2. Apply an even layer of the cream cheese frosting on the inside surface of the cake, leaving about a 1-inch border at the end. The thickness of the frosting level should be less than the height of the cake (about ½ of the thickness). 3. Carefully roll up the cake again, making sure it rolls up evenly and not too tightly. Place the cake on a serving tray or platter, with the seam side down. 4. Refrigerate for at least 1 - 2 hours. 5. Dust the surface of the cake with extra confectioner’s sugar and cut into ½ inch thick slices and serve.
Creamy Italian Sausage Gnocchi Soup Recipe from Skinny Spatula Ingredients
• 1 tablespoon olive oil • 1 pound Italian sausage (any flavor, I usually get hot) • 1 medium onion, finely diced • 1 medium carrot, diced • 2 celery sticks, diced • 2 large garlic cloves, minced • 1 teaspoon Italian seasoning • ¼ teaspoon red chili flakes (more if you like spice) • 1/3 cup dry white wine • 4 cups chicken stock • ¾ cup heavy cream • 1 pound gnocchi • Handful baby spinach • ¼ cup freshly grated parmesan
Directions
1. Heat the olive oil in a heavy-bottomed pot and fry the sausage for 4-5 minutes over medium-high heat until slightly browned, crumbling it with your spoon as it cooks. 2. Add the onion, carrot and celery and continue to cook for 2-3 minutes. Stir in the garlic, Italian seasoning, and red chilli flakes and continue to cook for another minute until fragrant. 3. Stir in the white wine and cook for a minute, stirring often, until the alcohol evaporates almost completely. Add the chicken stock, bring to a boil, then lower the heat and simmer for 10 minutes. 4. Stir in the heavy cream, then add the gnocchi and cook for 2-3 minutes or as specified on the instructions on the package. 5. Next, stir in the baby spinach and grated Parmesan, season to taste and serve immediately.

Window treatments are an excellent way to enhance the aesthetics of your home while providing many practical benefits. The options available are vast and varied, and getting started can be daunting. We created a guide to help you find your way, and included our designer’s expert advice.

Opt for neutral colors if you prefer a timeless look or go bold with patterns and textures to add a focal point. You can find ready-made options or go through a seamstress or drapery shop. If choosing ready-made, be sure to measure your windows accurately to ensure a proper fit. Don’t shy away from mixing and matching different types of window treatments for a unique and layered look. Think in layers; if budget is a factor, perhaps doing just a shade to offer privacy or room darkening to begin with is the starting point. Then you can add softness in the form of draperies when budget allows. Drapery hardware can be a great compliment to lighting fixture finishes, door and cabinet hardware, and can be a great way to tie a room together. Neutral tones with texture can offer softness without being too dominant in a room. Conversely bold patterns that coordinate with furnishings become the added layer to elevate a room to something more dramatic.
Things to consider: • Do your window coverings need to function in providing privacy and protection from the sun or are they merely decorative? • Are there rooms that need room darkening? • Consider how the house looks from the front; does it make sense to have consistency when looking from the outside in? • Consider the overall decor and style of your home when choosing window treatments to ensure they complement the existing design.

FALL WINE PAIRINGS Andy Miller
O
f all the wonderful things that the Autumn season brings, for me, cooler weather is a welcomed change. With that, transitioning from the whimsy and care-free nature of white and rose wines to a more balanced and steady style of wine is a nice change of pace. Classics are Pinot Noir, Cabernet Sauvignon and even the occasional glass of Chardonnay, but if you’re looking for a few off-the-beaten path options, here are a few of my favorite go-to’s that are sure to please. Beaujolais – a light red with mild tannins, low acidity and brighter notes. Great for one of those late fall warm days when you’re not looking for white. Enjoy a glass on a fall picnic taking in the changing color of the leaves. A cheerful red that won’t disappoint. Gamay – a gem of a wine. A relative of Beaujolais, located in the southern sub-region
of Burgundy (France) is a wine that is light in body, dry, vibrant and can stand on it’s own featuring flavors of raspberry, cranberry, currant and cherry. It’s a great wine that can take you right up to Thanksgiving. A very food friendly wine. Viognier – a grape that hails from the Rhone Valley in France, makes for a wonderful Fall white option. Late summer notes of honeysuckle, rose and tropical fruit combined with the body of a Chardonnay makes this a winner, plus it sounds fancy, right? Truth be told, Fall is a great time to try different wines and their varietals. Whether it’s a floral white to savor a fleeting warm afternoon or a spicier red to help take off the chill around a bonfire on a crisp night - sip, savor and enjoy all that is Fall. Salut!
