To prevent a peeled potato from breaking during cooking, soak it in cold salt water for 10 to 15 minutes before cooking. Add a little lemon juice or a teaspoon of vinegar to the water when cooking the potatoes to prevent them from fading.

 Ingredients used in Aloo Makhana sabzi: 

Potato (chopped) - 1 cup.

Onion cubes - 1 cup.

Tomato cubes - 1 cup.

Water - as required. Caraway seeds - 1 teaspoon.

Phool makhana (fox seeds) - 1 cup. Coconut oil - 1 tablespoon. Kasuri methi - 1 Ginger powder - 1 teaspoon.

Coriander powder - 1 tablespoon.

Turmeric powder - 1/2 teaspoon.

Red chili powder - 1 teaspoon.

Cumin powder - 1 teaspoon.

Fennel powder - 1 teaspoon.

Cashew nut powder - 1 teaspoon.

Salt - to taste.
