with Dauphinoise Potatoes and Fresh Seasonal Vegetables
You will need: 1 x chicken breast 1 x slice of bacon 40g smoked cheese 10 large potatoes 1/2 white onion 3 cloves of garlic (pureed) 3 large sprinkles of salt and pepper 3/4 pint double cream A little grated nutmeg (optional)
Method Firstly prepare the chicken breast by making a pocket in the side and then stuff it with smoked cheese. Wrap the bacon around the chicken. For the dauphinoise, start by thinly slicing the potatoes and onion. Mix together the double cream, pureed garlic, seasoning and nutmeg. Press the potatoes onto a tray with the onions and pour over the mixture. Bake slowly until golden brown. Serve with fresh seasonal vegetables and a rich gravy. Superb new venue for Leckhampton The Wheatsheaf in Leckhampton’s Old Bath Road is now under new management and has been transformed into an excellent facility to serve the whole community. The conversion undertaken by new landlord Matt Birch renders this historic inn much more than a great ‘gastro pub’ – not only does it now cater for all ages enjoying high quality cuisine throughout the week, it also provides a wonderful environment and atmosphere for people’s entertainment in a variety of ways. Customers simply wishing to meet friends for a daytime coffee or a few drinks in the evening; those looking to soak up the rays while socialising in the huge, family-friendly garden; people interested in live sport can watch any one of three screens in the excellent function room and cheer their favourites on without disturbing the softer ambience of the dining areas. As well as being great for parties and events for up to 150 people, the function room also serves the local business community well. Free WiFi is available and the ability to section off part of the room make it ideal for meetings, staff training, conferences or seminars. Like any customers, companies can also take advantage of the spacious garden with its ‘builtin’ barbecues and decking area. The venue will also be used by the pub itself to deliver nights of music and entertainment with a monthly jazz night from September and Howlers comedy nights starting in October. How do we know it’s a great prize? – we’ve already tasted the wonderful food, service and atmosphere on offer from Matt and his team. Two of us indulged in a delicious three-course meal and, apart from being most impressed with the cuisine, it was the general atmosphere and excellent service that made our experience all the more enjoyable. My colleague opted for the freshly-made Tomato & Basil Soup for her starter, followed by Pan Seared Fillet of Seabass served with roasted baby tomatoes and courgettes, Parmetier potatoes and drizzled with pesto and lemon oil. She rounded her meal off with Rhubarb Crumble & Custard. I made a mistake when ordering my starter – not noticing that the Baked Camembert was intended for sharing by two people! It was served with a Rosemary, garlic and fruit jam plus warm ciabatta, and would definitely be an ample starter for two. The 10oz Ribeye Steak with wild mushrooms, wilted spinach, red wine sauce and thick cut chips was my main course choice, followed by Cre`me Brûlée. We both agreed (trying each other’s dishes as we went along) the food was of a great standard – obviously freshly prepared, flavoursome and well presented. We’ll be dining at The Wheatsheaf again soon! Global Dance and Music Festival 2011 Visit the Brewery on Saturday 16th July for a spectacular family show of dance and live music, influenced from cultures from around the world. A variety of bands, musicians and dancers will perform throughout the day, including Latin American dancing such as Cuban Salsa, Rueda and Bachata, plus African Samba, Indian Bhangra, Eastern Belly Dance, Portuguese Kizomba and the very popular Zumba. There will be live Brazilian music with Bex and Franks, Ceroc music with South Yorks Sax Orcs, Spanish guitarist Javier Moreno, Indian drumming with Vijay Patel and Pravin, plus African drumming with Bristol group African Sambistas – to name but a few. Not only will there be performances but there is also the opportunity for people to take part in dance workshops throughout the day. Children are most welcome too, with workshops for kids plus a free bouncy castle. Throughout the day a collection will be made for two family charities, Make-a-Wish Foundation® UK and Winston’s Wish. Live music at the Brewery with a variety of talented young bands from Cheltenham, all aged 9-16 years. They will perform a range of popular hits from Queen to Lady Gaga plus a few of their own tracks. This is their fourth visit to the Brewery, with one of the previous bands The Dirty Tricks having gone on to be finalists for a national Live and Unsigned competition to perform at the O2 arena.

Magic shows with Wizard Trelawney Plus a chance to win cinema tickets if kids come dressed as their favourite Harry Potter character at the 12pm show! To celebrate the first week of the summer holidays and the launch of the final instalment of Harry Potter (showing at Cineworld from 15th July), the Brewery has invited a local Wizard to perform four magic shows throughout the day on Thursday 28th. Trelawney is 365 years old and is from an ancient line of Cornish wizards. He has travelled far and wide collecting strange items for his magical shows. His speciality is care of magical creatures, so wherever you find Trelawney his dragon is not far behind! He will tell you some secrets of dragon training along with some of the other strange creatures he has in his care. He also has some tricks up his sleeve (and he has very big sleeves) to entertain and amuse kids of all ages. Each magic show lasts twenty minutes and will be performed on the hour from 12pm-3pm. Children are invited to come along dressed as their favourite Harry Potter character at the 12pm show for a chance to win cinema tickets. Wizard Trelawney will choose the winner!

1 Edgeworth Manor was originally built in the 17th century but was enlarged in the 19th century. It is said to occupy the site of a Roman villa.
C Go over the stile and head downhill turning right at the iron fence. Cross the stream and then walk along the flat valley floor to the footbridge over the River Frome. Head towards the gate by the road. Turn left along the road until it bears sharp left. D Take the bridleway ahead towards Edgeworth Mill Farm. Bear right following the driveway across in front of the house then take the track on the right alongside the river. Cross the bridge and head straight up the hill then turn left behind the house at the corner of the orchard. E Follow the bridleway with the fence to your left.

Bear slightly right up towards the wood where there is a waymark. F Enter the wood and follow the path. Where it forks after about 50 to 60yds (50m) take the left hand path. Follow this path through broken woodland for about ½ mile (800m) as far as a waymarked post. G At this post you will see a faint path angled back left down towards the river where you will find a footbridge. Cross the bridge then bear right then left through the first gate. Cross the field, with the river to your left to a five-bar gate at the far side. Go through the gate and continue across the next field beside the river bearing right to another five-bar gate by Valley Farm driveway. H Turn left, following the farm drive for about ¼ mile (500m) until it meets the public road. I Turn right up the hill and follow this road back to the car.

Encourage new shoots
Now is a good time to prune early summer flowering shrubs like Philadelphus, Deutzia, Wiegela, and Rubus as they have finished flowering. Pruning will encourage new shoots to spring up from the base, and if you cut out about 1 in 3 of the thickest old branches at the bottom these new ones will take their place and ensure the flowering doesnʼt decrease. As with all shrubs when you have pruned, lightly fork in some pelleted chicken manure or balanced fertiliser like Gromore around the base, water well and mulch with some compost or well rotted manure to give the plant a real boost (donʼt touch the stems with the mulch or they could start to rot).
Keep the weeding going
Removing weeds when they have just appeared is so much easier – so little and often is the key. Deadheading must be done before the seed sets as this will stop the plant making flower buds. It is very therapeutic to wander round the garden in an evening and snap off the old rose heads – just the thing to unwind after a hectic day!

If you have grown early potatoes they should be ready to lift now. Keep sowing ʻcut and come againʼ varieties of lettuce in small batches in old mushroom boxes, etc. They need to be placed out of the hot sun and kept moist (not soaking). These can be kept by the kitchen door and snipped at for sandwich fillings and salads. Do the same with peas as pea shoots are really tasty in salads and grow easily in containers.
Try your hand at taking cuttings from perennial herbs like Lavender, Rosemary and sage. Take the cuttings early in the day. Choose non-flowering side-shoots that are soft at the tip and woody at the base about 10cms long. Pull away from the main stem gently leaving a little bit of the bark still attached (these are called ʻheelʼ cuttings). Take off the lower 5cm of leaves from the stem, dip the end into hormone rooting powder (garden centres have this) and then insert several of these cuttings into a small pot of gritty compost. Firm them in and water well then cover the whole pot with a plastic bag (ensuring it doesnʼt touch any of the leaves), label and place somewhere warm but out of direct sunlight. The cuttings should have rooted by late August.

Cheltenham’s coach network
MANY Cheltenham residents will drive down St. Margaret’s Road today not remembering, or not knowing, that the large open space that is currently a car park used to make Cheltenham the hub of Britain’s coach network. This was the case for almost 60 years until 1985 when the Black & White Coach Company was taken over by the Cheltenham and Gloucester Omnibus Company. The following year the gigantic coach station on St. Margaret’s Road closed, replaced by interchanges at Bristol and Birmingham. At its peak the station employed over 300 employees and during its peak season over 300 coaches would leave the site at 2pm to destinations near and far. The company even held a service to Paris. For this service, however, the drivers would have to change uniforms. When the service first started it received complaints that the uniforms worn by the drivers were too similar to those that the SS wore during the Nazi occupation of Paris. The uniforms were promptly changed for these services. Founded in 1926 by Mr G. Readings the company and its services quickly became popular and they soon expanded. Mr Readings was to say of Cheltenham, when asked why he chose it as the main hub for the company “it struck me at the time rather poorly served in the matter of long distance services, a very likely spot for touring, and a suitable distance from London for a road service.” For me, born after the site closed, it seems almost surreal that Cheltenham would have been such a hive of coach activity, or that you could hop on a coach to Paris if you wanted to. Cheltenham has changed a lot through the years, unlike the site at St. Margaret’s Road which, despite its prime location and several rumours, remains a car park.

Running the Olympics
I was in Bulgaria with a mate of mine when the news broke that London had been awarded the 2012 Olympics. It was ‘high fives’ time when London was chosen, but I remember asking my colleague at the time whether this was a blessing or a poisoned chalice in terms of finance. The 2004 Athens Olympics was a disaster financially and six years later the Greek economy is a complete shambles, with their government begging for foreign aid. What are the prospects therefore for the UK in 2018? The Greek fiasco started with a significant overrun on building costs and continued with a failure to make the most of the tourist and sponsorship opportunities available in the run up to and during the Games. As a result, first the Greek taxpayer and then the rest of Europe had to bail them out. So will the UK make the same mistakes in 2012? Well the building costs are already forecast to be between 2 and 3 times the original estimates submitted when we won the bid, a figure running to billions of pounds. No lesson learned there, but that’s no surprise given our recent history with Wembley and the Millennium Dome (as was). But maybe the recent activity with ticket sales is a more positive sign? We were made to apply fifteen months in advance. Full payment was taken, including booking fees, from those lucky enough to be successful with their applications, without telling us what tickets we’ve been awarded! This might not sound good for us as individuals, but maybe it will be good for us as a country. We can only hope that the money will be channelled correctly and that we all end up remembering the London Olympics of 2012 for the right reasons, not counting the cost years later. A phone call away Dear All, I have some good news. I know I have been banging on about locking your doors and telling us if something looks a bit suspicious – well its working. I can give you two recent examples of how your actions have helped us to help you – our community. The first where a burglar broke into a house and wasn’t allowed the ease of an open door and as a Tim Waterhouse consequence managed to cut Cheltenham South LPT. Inspector himself leaving us a definitive clue. Well he can ponder his chosen lifestyle for a couple of years in C wing. And the other was where some suspicious activity was reported to us, the activity being a woman ‘hanging’ around outside a house apparently acting as a lookout. Well, she was and her boyfriend is now having daily chats with the burglar described above. The woman is helping us with our enquiries as they say. And what does all this mean? It means your local Police team, with your help, are making inroads into the problem that has been effecting Cheltenham for some time and it certainly gives me a warm glow to report that some of the thieves that we have been sure have been committing these very impactive crimes have now been caught and are awaiting trial or are pleading guilty and hopefully will receive a sentence commensurate with their crime. And so our work continues, trying to keep you safe from harm and trying to increase your confidence in us that we, your local police are delivering a first class service. I am not so naive or arrogant or believe we have it cracked or that we are perfect, but I hope we are learning all the time, are speaking to our communities and are working very hard meet your expectations and needs. Our consultation with the various communities around the Town has never been better. The way we deal with disorder and anti-social behaviour; with road traffic collisions; with missing persons; and with the dozens of other activities has never been better in my view. But as I have already written, we are still endeavouring to get better – another reason why I will be attending several pubic meetings over the next few weeks to consult and discuss how we are doing things and how we can improve. In simplistic terms, this country is very lucky to have a Police Service which does its job by consent, without your consent we cannot function and I hope we continue to live up to your high standards. So, as the summer heat comes, keep safe, look after each other and don’t forget that we are only a phone call away.
