Culinary Arts at St Catherine’s offers your daughter the opportunity to learn elegant classic and contemporary cooking. She will be able to create impressive dinner party dishes, showing an appreciation of global tastes and dietary preferences. From making fresh pasta to mastering mille-feuilles, from cooking fish to perfection to creating delicious sauces, Culinary Arts at St Catherine’s will provide your daughter with the confidence and the enthusiasm to cook for and impress the most discerning guest. We will prepare your daughter so that she is ready to create your next dinner party or take on a ski season! Please note that this course is best suited to girls who have a good level of cooking experience and who are eager to take their cooking skills to the next level.
Your course tutor Mr Friend’s life-long passion is cooking and he has a particular penchant for baking. He has been a member of the Food and Nutrition Department since 2018 and now leads the department. His confidence and flair with food saw him in the final of the first series of BBC1’s Best Home Cook (2018), where he offered his creations to be judged by Mary Berry DBE. Mr Friend runs his own cooking website and often gives food-related advice on the radio. He is particularly proud to be launching this special course for St Catherine’s Sixth Form students.
°CULINARY ARTS Open Kitchen On the final evening of the course, girls can invite their parents to sample their creations. The girls will work collaboratively to produce a selection of starters, main courses and desserts. The evening will be a celebration of the girls’ culinary skills, with willing guests ready to sample their efforts. Local wines will be provided.
Examples of typical dishes include …
° WEEK 1: Risotto and Pasta Beetroot & goats’ cheese ravioli & tortellini; browned butter, lemon and sage sauce; butternut squash risotto.
° WEEK 2: Classic savoury sauces Pan-fried pork tenderloin with an apple and cider sauce; glazed poached egg muffin with hollandaise; smoked haddock and spinach gratin.
° WEEK 3: Baking Savoury scones with home-made chutney; pestot soda bread; lemon sablé biscuits.
° WEEK 4: Pastry Rose & raspberry éclairs; home-made rough-puff pastry; sun-dried tomato and feta tartlets
° WEEK 5: Spices Thai green curry; minted harissa and pomegranate couscous; Myanmar fish curry
° WEEK 6: Entertaining Smoked mackerel & horseradish blinis; cranberry and Brie filo bites; luxury sausage rolls.
° WEEK 7: Starters Courgette galettes; Thai fish cakes with chilli and kaffir lime sauce; scallops with pancetta and capers
° WEEK 8: Mains Parma Ham-wrapped chicken stuffed with Gorgonzola; pan-fried duck breast in red wine and sour cherry sauce; Teriyaki salmon en papillote.
° WEEK 9: Desserts Mini mocha pavlovas, dairy-free lime and coconut panna cotta; millefeuilles.

° Numbers restricted to eight Chefs only on each course on a first come, first served basis. It is expected that girls are on top of their work and have the spare capacity to embrace the fun challenges of the course. ° £650 per Chef, to include: all ingredients, a bound recipe folder and Chef’s whites. The course fee to be charged in advance on the fee bill for the term in which the course will take place.
