elcome to the first edition of the hotel’s magazine. If you have yet to visit us in South Sands then this bi-annual magazine will hopefully give you a real flavour for the relaxed luxury we have created here just outside Salcombe. For those of you who know us already, we hope that the issue will give you the opportunity to get to know us a little better, and you may well spot yourselves in the collage of photos from our fantastic launch party last May. South Sands has been a labour of love for my business partner, Andrew Turner, and I since we first saw the opportunity in the summer of 2008. We have spent the best part of two years refurbishing what was a rather run down building and hope that what we have created, with fantastic support from a great local team, is one of the South West’s smartest yet relaxed boutique hotels. Following the official re-opening in May 2010, both the hotel and restaurant have enjoyed a superb launch season. We now welcome the change of the seasons with a busy schedule of autumn and winter events including gourmet evenings, wine tastings and live jazz performances – not forgetting our special line-up of celebrations for Christmas and New Year. he transformation of Salcombe’s emblematic South Sands into one of Devon’s most stylish beachside boutique hotels is nothing short inspirational. The potential of the original building – which proudly nestles into one of the most prized and unspoilt coastline settings on the South Coast but had been closed to business for some years – was recognised by the current owners and local businessmen, Jeff Gillard and Andrew Turner, while taking a stroll on the picturesque South Sands beach in 2008. The duo are perhaps best known as the driving force behind several of the area’s most popular gastro pubs, notably The Hope and Anchor, at Hope Cove, and The Sloop, at Bantham. Both share a love of the South Hams and took on the new challenge of renovating the long-standing Salcombe landmark whole-heartedly. They were joined by a small team including leading South Coast architect Michael Phillips (, who has also designed hotels for luxury boutique group Hotel du Vin; Financial Controller during the

project Steve Ball who continues to play an integral role in the management of the hotel today; and Henrietta Thorn who immersed herself in perfecting the hotel’s beautiful interior design. Each member of the select team made a considerable input into developing the hotel’s concept and, as ideas flourished, their original plans quickly developed into something far more ambitious. But, after 18 challenging yet hugely rewarding months, the finished result is quite outstanding. The official re-opening of the South Sands

Boutique Hotel & Beachside Restaurant in May 2010 became an eagerly anticipated event for the whole of Salcombe, while a series of inaugural dinners and launch parties became the most talked-about celebrations of the summer, as guests were treated to a breathtaking showcase of the hotel’s magnificent redevelopment. Since then, an impressive flow of the area’s residents and visitors from around the South West, London and further afield has cemented South Sands’ reputation as a leading choice for the most discerning of hotel and restaurant connoisseurs.

he passion and vigour with which the team absorbed itself in the project is an accolade to the camaraderie and spirit which still exists at South Sands today. A key inspiration behind the hotel’s weatherboard exterior and fresh, light interior is New England’s signature style fused with a touch coastal charm, both of which blend effortlessly with the South Devon lifestyle. Luxurious fabrics and subtly-coloured soft furnishings are accentuated by the use of open, light-filled spaces and ambient lighting which immediately induce a sense of comfort and tranquillity, while the foyer’s dramatic spiral staircase and entwining, contemporary, Italian chandelier, gently remind you of the refinement which also characterises South Sands. This contrast is arguably where lies the beauty of the hotel’s overall effect: chic yet relaxed. The emphasis on local craftsmanship and locally-sourced furnishings adds further to the lure of South Sands. Champion blacksmith Joff Hopper, of the Metal Pig Forge in nearby

Dartington, is the creator of the hotel’s centrepiece staircase and further examples of his innovative ironwork are peppered throughout the hotel on the creative door handles, key fobs, candlesticks, wine holders, fire basket and wall lights, as well as the impressive balustrade which runs the full length of the impressive terrace. Exemplary woodwork by master joiner Peter Goss – also based in Dartington – stretches from the reception, through the restaurant, and into the bedrooms where his talent is reflected by the exceptional finish. Works of art and photography from a selection of the area’s finest talents are displayed throughout the hotel in an on-going showcase which portrays scenes and imagery from the South West seas and sailing world. A nostalgic collection of black and white, and sepia photographs depicts fishing scenes and days past from old Salcombe.

Bedrooms at South Sands are created using a careful combination of subtle patterns and varying colour schemes which use sand, coral, red, blue and sea green on rich fabrics, deep textured curtains and Egyptian cotton bed linens. The effect is fresh and light during summer, warm and cosy for winter. Most rooms enjoy wonderful sea views while the sea breeze at South Sands’ lulls guests into the deepest of sleeps. he most spacious accommodations available at South Sands are five beach suites set attractively to the side of the main hotel. The generous spaces each comprise two large en-suite bedrooms (one of which can be converted to a twin), a generous open-plan reception, lounge, dining and kitchen area. Guests can soak up the elevated setting from their private balcony or courtyard patio, while the two lower suites enjoy direct access to the beach. ollowing your dream may seem somewhat idealistic to many of us but for seafood entrepreneur Mitch Tonks the lure to do something he really loved was just too strong. Whilst working as an accountant in Bath Mitch decided to take the plunge and choose a whole dramatically new direction in life. In a risky and exciting move he

decided to open a fishmongers shop, leaving behind the monotony of accountancy and a stable nine to five job. “It may sound crazy moving from accountancy into selling fish but one of the things I had always loved was food and in particular seafood. I grew up in Weston Super Mare and the seaside culture was

an integral part of my life, it had a real impact on me. I was lucky to have a Grandmother who was a great cook, and was patient enough to let me help

her, she made basic but great meals using lots of fresh seafood. Although we lived frugally, we ate well, simple meals such as grilled fish and vegetables and the food was always so fresh and full of flavour. We enjoyed a variety of fish even the traditional seafood fare of jellied eels, which were wonderful and spent the summers of my childhood on the beaches and I learnt very early on how to prepare fish, cook it and most of all enjoy it.” His love for cooking progressed over time “I think a love of food is something you just have in you, I remember being at my happiest sitting around a table with friends enjoying good food and drink, I like the ceremony of preparing and eating food. As a child I started reading cookery books and just couldn’t get enough of them, then when I was in my teens and early twenties I would cook food for friends, when I wasn’t cooking I would enjoy meals out whenever I could. Weston Super Mare has a wonderful variety of places to eat with many Greek and Italian family owned restaurants, where I enjoyed simple but fantastic dishes such as Mediterranean grilled lamb. My love for good food never diminished and I knew one day I would earn a living working with food.” The career change may have been a drastic one but it gave Mitch the ideal opportunity to introduce quality fresh fish to the Bath region as there was no real supplier of good seafood nearby at that time. His passion and determination to provide the very best fish to his customers swiftly earned Mitch the reputation of being a bit of a seafood guru and local celebrity. Through his fishmongers Mitch was able to share his in depth knowledge and infectious enthusiasm for seafood, from selecting a fish to preparing it and cooking delicious seafood recipes. His straightforward, no nonsense and unfussy way of cooking quickly caught on and before long Mitch had established a string of celebrated cookery schools ‘FishWorks’ where he was able to further encourage and educate those interested in cooking

with fish. Inspired by food enjoyed whilst traveling Mitch’s style is that of simple European cuisine, real food created from the freshest ingredients. “I love the fish markets in Greece and Majorca, you just need to keep things simple, don’t over complicate food. A good piece of fish grilled and served with a chunk of lemon and a seasonal salad, wonderful. As with all good cooking quality and freshness of the ingredients is the most crucial element, you don’t need complex recipes or lots of hard to find spices because you want the fresh flavour of the fish to shine through.” His uncomplicated approach proved to be exactly what the public needed and after the cookery schools he launched the award winning FishWorks chain of restaurants and a whole string of awards and accolades rolled in. Putting all his knowledge and advice down on paper was another shrewd move and his best selling cookery books have proved incredibly popular and have hugely increased the nation’s interest in enjoying seafood at home. The FishWorks Seafood Café Cookbook was short-listed for the prestigious André Simon award whilst Mitch’s latest book, Fish has been described as “undoubtedly one of the most important books of the year” (Woman & Home) and covers everything you need to know about buying, cooking and eating the best seafood, about how fish is caught, sustainability, how the fish markets work and of course how to prepare and eat fantastic food. When it comes to restaurants his winning combination of simple yet stunning recipes and laid back sophistication has proved a winning formula and the RockFish Grill & Seafood Market in Bristol is now an iconic destination in foodie circles whilst The Seahorse Restaurant in Dartmouth has been declared by some ‘The Ivy’ by the Sea. Mitch’s passion for sustainable seafood is evident in all of his projects and he is dedicated to actively encouraging the British public to eat more varieties → of fish from sustainable sources. endeavours to educate the nation about the pleasure in enjoying seafood have had a powerful and positive effect on the industry and he is considered a leading spokesperson for the UK’s fishmongers. If the fishmongers, cookery schools, restaurants and best selling cookery books were not enough to deal with Mitch is also a favourite on our screens and his enthusiastic approach to cooking has made him a regular guest chef on many TV programmes including the BBC’s popular Saturday Kitchen show, whilst his own series Mitch and Matt’s Big Fish was screened during 2009. “Above all I am a fishmonger and chef,

everything else has simply evolved naturally, the projects I am involved with work well together and complement each other, they all work towards a positive raising of the awareness of how to really enjoy fresh fish.” One of his most successful endeavours to date is his own restaurant The Seahorse in Dartmouth and his triumphs in the kitchen have led to him being respected as one of the most skilled and exciting chefs in the country, his numerous magazine columns are testament to this. Mitch's latest project the stylish RockFish Seafood & Chips opened in Dartmouth in June this year and has had a phenomenally successful start.

His commitment to producing fantastic food made with the very best fresh produce is also clear to see at Salcombe’s stunningly refurbished contemporary boutique hotel the South Sands. s the splendid spiral staircase makes a striking introduction to South Sands, the spectacular curved wall of pristine French windows presents a breathtaking centrepiece to the extraordinary restaurant, bar and terrace area. Encompassing the whole sea-facing side of the hotel, the sprawling glass doors unfold onto unparalleled views where diners and guests can savour fine hospitality overlooking the brilliant blue, green colours of The Salcombe Estuary and The Bar – the subject of Tennyson’s famous poem Crossing the Bar.

Complementing the hotel’s elegant yet welcoming style, the restaurant and adjoining terrace are relaxed yet refined and the ambience is only gently enhanced by soft lighting and music at night. Table settings are simple and sophisticated and use neutral colours, while freshly-cut flowers and nautical accessories add a subtle splash of colour. Stylish yet comfortable seating, both indoors and out, comes from British furniture maestro Lloyd Loom. Although tastefully finished, the aim at South Sands is to invite guests and customers to enjoy great hospitality, throughout the day and evening, in a relaxed and warm atmosphere.

ollowing the restaurant’s simple yet sophisticated style, the menu at South Sands is a well thought-out ensemble of fresh, flavoursome and uncomplicated dishes which maintain an emphasis on the finest, local produce. The creator behind the restaurant’s menu and culinary style is acclaimed local chef and renowned restaurateur Mitch Tonks (see p.19 for a full feature) whose ongoing campaign to sustain the nation’s fishing industry brings to South Sands a selection of the South Devon Coast’s finest fish and seafood. Summer 2010 brought with it a superbly successful launch season for the South Sands

restaurant and the arrival of autumn and winter welcomes the launch of a new seasonal menu designed by Mitch Tonks and presented by head chef Greg Coleman and his team. With the turn of the seasons, the restaurant team has also introduced a series of gourmet evenings, wine events and special celebratory menus, as well as the all-afternoon Sunday lunch with an innovative twist. The main à la carte at South Sands showcases the best local seasonal produce, roasted fresh fish, delicious braised dishes and succulent grilled meats. The tempting list of desserts (or “puddings” as the South Sands team like to call them) also goes down extremely well with diners delving into indulgent as well as lighter creations, accompanied by a popular choice of French and Spanish pudding wines. The wine list at South Sands prides itself on its quality choice of vintages to please every palate and occasion, and the team are happy to make a recommendation. The restaurant has teamed up with Kingsbridge wine merchant and one of the world’s youngest Masters of Wine, Liam Steevenson, to deliver a first rate choice which hails from a selection of the bestrespected small wine producers around the world. The list features some superb classic vintages and is predominantly old world, with some exciting new world additions. Worth mentioning is the light and refreshing Spanish white Basa Verdejo (Rueda 2008); the excellent choice of Burgundies including the Savigny les Beaune (2007); a well-priced Rioja Crianza; and the Bordeaux Chateau L’Angelus (1985), a particularly special, aged claret.

he leisurely pace of South Sands makes it an attractive setting for drinks with both hotel guests and non-residents enjoying relaxed afternoons on the al fresco terrace, pre-dinner drinks in the bar or a well-earned night cap.

make use of the area throughout the day until late evening, to catch up with the morning’s newspapers over coffee, enjoy a sandwich or light bite from the bar menu, take afternoon tea or something from the hotel’s excellent drinks selection. In addition to the main list of cocktails – which includes the famed South Sands Cooler, the fashionable Cosmopolitan and a classic Tom Collins – winter is welcomed with the introduction of several special seasonal cocktails. Indulgent concoctions such as a Chocolate Martini, the Sidecar (mixed with Cognac and Cointreau) and a choice of creative Christmas cocktails bring a warming touch of spice for winter. The design of the bar is not the only thing which tempts guests as the choice of drinks is of the finest quality and includes Domaine Dupont Calvados, Maxime Trijol Cognac and Lustau Pedro Ximenez to name but a few. Having become the youngest of only 257 Masters of Wine worldwide Liam left his job with one of London’s leading merchants to set up as an independent wine merchant in the South Hams. Over the last five years the RED&WHITE team have put together a selection of fine, individual wines from small esoteric producers around the world, with a particular focus on the wines of France and Italy. RED&WHITE now supplies most of the leading quality hotels and restaurants in the South West and is building a separately tailored private customer business through its new shop in Kingsbridge, with more retail shops planned over the next few years. The Kingsbridge Shop The Wine shop has over 350 wines from all over the world on its shelves, with prices varying from £4.50 to £250 a bottle, as well as a broad range of beers, and spirits. Tastings every Friday introduce customers to the range; frequently led by visiting wine makers and Masters of Wine.We offer free delivery on case purchases throughout the South Hams and can deliver a courier service to the rest of the UK.

Vine Routes The RED&WHITE Wine Travel Company, takes regular trips to meet or growers; recent successful trips have been to Catalonia and Tuscany. Early 2011 promises visits to our favourite producers in Champagne and Burgundy. Full details are available on

RAW Coffee Is a new concept from RED&WHITE. We believe that coffee and wine go hand in hand, and the two products share many similarities along their journey before they make it to the cup or glass. RAW Coffee is a unique and exclusive espresso blend of the finest Ethiopian arabica coffees from the Harrar and Sidamo regions. Blended and roasted to exacting standards to deliver a full-bodied and sweet tasting espresso, our aim for RAW Coffee is to provide our trade customers with outstanding coffee and training in tandem with existing wine supply.

Easy Rider Cases RED&WHITE’s ‘Easy Rider Cases’ are for those who want a straightforward way to enjoy a selection of our wines. If you would like to receive a regular delivery of wine, without the worry of choosing whilst still being able to rely on the quality, sign up with us and you will get a regular delivery to your door and we’ll do all the work. Choose to have a monthly delivery or a delivery every 2 months of a case we will put together from our favourite seasonal wines and our best new choices.
