Icing’s on the cake for mums With mother-daughter combo Joanne and Melissa Tucci recently acquiring the reins of Beaconsfield’s The Cake Stop, the much-loved store is preparing to soar with a number of features to be added to the local favourite’s menu and service list. While Joanne has years of home baking, and harbours a love of anything sweet, 21-yearold Melissa is a qualified pastry chef with numerous decorating classes under her belt. Acquiring the store from former owner Sarah Eduati, the pair will continue offering a selection of cake decorating supplies, made to order cakes, cake decorating equipment hire and cake decorating classes, as well as offering a selection of on-the-spot coffee and cakes. However, with a number of new features set to be unveiled over the coming weeks, the Tucci pair are looking forward to the store’s future. “We’ve stepped into a great opportunity,” Joanne said. “For Melissa it means furthering her career and love of baking and cake decorating. She’s very young at age 21 to take on a shop and to be running this one is amazing.

After you’ve treated mum to a day out in one of the Yarra Valley’s exceptional restraunts, cafes or hotels, serve up these traditional almond-flavoured Amaretti biscuits with a sweet desert or bowl of ice-cream and show mum just how much you love her ... and she’ll love you for saying ‘ti amo Mamma’ Italian for ‘I love you Mum’ in your own special way!
Amaretti ingredients: 125g ground almonds 1 cup sugar 2 egg whites 1/2 tsp vanilla 2 drops almond essence 20 blanched almonds

Method: 1. Combine ground almonds, sugar, egg whites, vanilla and almond essence in a mixing bowl. 2. Beat mixture with electric whisk on medium speed for about three minutes. 3. Let mixture rest for five minutes while you prepare baking trays with non-stick bak-
ing paper and pre-heat oven to 180C. 4. Spoon mixture into a piping bag with a 1cm plain tube. 5. Pipe mixture onto the baking paper in a circular motion to form a biscuit. 6. Place one blanched almond on top of each biscuit and bake for about 12-15 minutes or until tops are lightly brown. 7. Remove from the oven, leave to cool for a few minutes before placing on a wire rack for further cooling. Makes 20 biscuits. Recipe courtesy of the Australian Egg Corporation
